We are going in January and staying 11 days. I have a 10 day park hopper (considering AP). Can we make FP for our entire stay? There will be at least 1 day we don't go to the park, but not sure what day we will not do parks.

No; you’ll be limited to 10 days of pre-booked FPs.

If you are only going into the parks for 10 days, you can book all 10 days of FP+.

It doesn't matter WHICH day you will not be going into a park,
you can book FP+ "around" that no-park day, as long as you decide which
day you are not going into at park before you book your FP+.

HOWEVER, if you change your mind on which will be your no-park day, you can
cancel FPs on THAT day and immediately book new FPs for the new day that actually you WILL
be going into the park(s.)

Next questions since you guys are always so helpful. I realize that I can only book 10 days worth of FP's at 60 days. As my trip gets closer (say 49 days) can I book FP for the extra days I am there?

If you book for your max of 10, as you get closer to your trip you can Cancel a day of FPs and book for that 1 extra day.

No - you can't make more days of FP+ than you have ticket days. So you can choose any 10 of your 11 days to book but you can't book all 11 now and then choose which days to actually use later.

Number of days on the ticket = number of days you can do FP+ regardless of how many days out from your trip you are.

Not unless you purchase more tickets or cancel a day. Regardless of the booking window you need a valid ticket for every day you want to make a FP+.

I have an annual pass but it has been my experience that even for passholders, they only let you book a maximum of ten days of FP+ for a given trip. The limiting factor is not the number of days on your ticket, but rather, they say everyone is limited to ten days.

Sorry, but that's not the rule.
If a guest has, say, 14 days worth of tickets, the guest can book 14 days of FP+ in advance,
within the rules of number of days before being at WDW.

Rules for AP FPs are a special case.

When I got married in WDW we spent 24 nights on site. With our APs we had FP+s booked for every day of the trip in advance without issue. The limiting of fastpasses for APs is only based on whether you're staying on property or not.

How does one get a 14 day ticket though? I thought they only went up to 10, except for the special UK tickets, for UK citizens.

I didn't say "a 14 day ticket."
I said "14 days worth of tickets."

That can easily be done by buying more than one multi-day ticket.

Also, for Disney sells special United Kingdom tickets (available to guests from UK) that offer 14 days (or even 21 days) on one ticket.

I thought 10 days was the max as well but I have an AP and booked 14 days worth of FPs in November. I am staying on property though. Perhaps that’s the difference?

From the FP FAQ:
- Annual Pass (AP) holders have similar benefits as onsite guests when staying at an onsite resort. The primary difference is that AP holders can book up to 7 days of FPs at all times, and more if the length of the onsite stay is greater.

I know of no limit of ten days in any FP situation.

Yes - this is the difference. Onsite APs max at length of stay (or the normal limit, whichever is longer) instead of the default limit.

This is even true if you go for eight or nine days, leave, and come back a few weeks later for another week-long stay. Not that anyone would do that *whistles innocently*

Easily? Sure, if you have a ton of money just lying around, as you start that day 11 at a day 1 price. Not sure why you felt the need to repeat what I posted about the UK ticket?

Not quite, in the OP's case they are limited by the number of admission days they have on the ticket.

AP holders can book 7 days max in a 30 day period unless they are staying onsite. If onsite then they can book the entire length of the onsite stay - no limit if your onsite.

eta - sorry for the repetitive info I didn't read through before posting!

I've had situations where I was staying onsite more than ten days but the system would not let me book more than ten days of FP with my annual pass. When I called to ask about this, I was told that no guest may have more than ten days of FPs even with an annual pass and staying onsite more than ten days.
