FP during slow season

If we are looking at going during the first week of February where crowd levels are all showing low on crowd calendars, are we ok staying off site and still be able to get food fast passes at the 30 day mark?

Well, it may still be hard to get Flight of Passage or Slinky Dog Dash. I couldn't get them at 60 days on my recent trip, though it was October and much busier than February usually. Other than those, I would imagine it shouldn't be too hard to get anything else. Maybe 7DMT or Frozen Ever After might be a little tougher or have limited times. I wouldn't be too concerned about it though, especially if you plan to be there for park open. That's an easy way to check off these rides.

Yes, you will be fine. We're offsite only people, regardless of time of year. FoP will be very difficult at 30 days, but anything else should be available. Even if it's not, you can get it same day.

and even if you don't get the desired fp at 30 days keep trying, refreshing the app any time you can. I have gotten same day fp for both FoP and SDD.

FP window will be 30 days but you can only get 7 days of FPs at a time. If you had an on-site reservation you’d be able to get as many days as that reservation. And if it’s offsite it doesn’t include the length of stay, so you’d have to book each of those 7 days individually at 30 days.
