I just went through the reservations I made for my trip starting Thursday and realized the 90% of the places I have booked I have never eaten at and probably wouldn't have unless I was on the dining plan. The reason I say this is normally I would eat at a counter service place and wouldn't normally book at actual sit down meal reservation. This time I have reservations at:

Chef Mickey's,
Mama Melrose's Ristorante Italiano,
Captain's Grille,
The Crystal Palace,
Cape May Cafe,
Star Wars Dine-In Galactic Breakfast,
Jedi Mickey's Star Wars Dine at Hollywood and Vine,
Trattoria al Forno,
Coral Reef Restaurant

Watch out! The DxDP style of eating can be very addictive (even if you switch from the dining plan to paying OOP).

That's what I have heard. It will be weird going from mainly quick service places to actual sit down restaurant meals

I think it's be great to one day get the DDP after I've been to WDW a thousand times and I don't mind losing a lot of time at sit down meals. Like you said, there are so many places to go I normally wouldn't without the plan. But that's a long time away, trip number 3 is this Nov and I just noticed 6 out of our 7 reservations are for character dining. Most of which we did the last two trips. Ahh well, I'm sure one day I'll make it down without the kids, I'll keep an ADR bucket list handy until then I guess.

Yep, this will be my first trip with DDP (been there without it for probably 6 trips). On previous trips we weren't staying long and so we were commando style park goers--get there early and do everything possible all day long. CS just fit the style and pocketbook. We are going this time with older teens (18/19) and adults. Also going for a longer stay. It will be fun to go at a slower pace and also enjoy the food. Two 1st timers, so I'm looking forward to the character breakfasts for them (we've never been, but it was never an interest when my boys were young).
