Food Allergies and eating at DLR?

Is there anywhere that I can find the ingredients to food at the parks, or is this a pipe dream? DS has a dairy allergy, and we're currently testing wheat and it looks like we have to avoid that as well. Dairy's not so hard, but wheat will be more difficult, especially as he's still nursing so I have to avoid these foods as well. Anywhere I can find this info? Will they even know if I ask at resturaunts, and would that mean I have to only do sit-down? I'm just confused at this point! Can anyone help?
 
I have a soy allergy and always call Disney Dining before I go. I explain that I'm wanting to not only find out about places that we have reservations, but about other food in the park as well. In the past I have been transfered to a executive chef who has been great to talk to. He gave me alot of information, more than I thought to ask for.
 
My friend's daughter has Celiac's and she was able to find gluten free foods fairly easily. (The Storyteller's Cafe has gluten free pizza, and you can get rice noodles at Ariel's Grotto, for example.) My friend, and her daughter, are very practiced at asking and they never had a problem getting answers, that I saw.
 
You can always ask to talk to the chefs at any restaurant (including counter-service and cafeteria-style locations) and they can tell you what's safe and what's not. You can get rice noodles and gluten free pizza at Pizza Port and the salads there are great, too. Plaza Inn has baked chicken legs that can be subbed in place of the fried chicken. You'll need to avoid all gravies as they usually do contain wheat flour. DLR is pretty able to handle most food allergy issues (dairy and wheat are pretty common) and the chefs will try to work with you if at all possible.
 

Thanks so much, I'm feeling much better about my options now! Going wheat free is a little overwhelming as we're just at the beginning, and I was very worried about vacation! Thanks for the advice, I'll call and make sure to ask while I'm there!
 
I also have severe allergies, and have a life threatening allergy to peanuts. I have noticed that on many of the menus in the various restaurants that peanuts are on the menu. I'm trying to avoid exposure to peanuts for as long a possible for my 2 young boys so that they don't get the same deadly reaction to them as I have. Other than taking Extra Strength Reactine, are there other ways that I can avoid exposure to them when I'm down there?
