Flying Fish??

We will be on the Deluxe Dining Plan this summer. We are a family of 5 - three boys ages 19,16, and 13. We've been to Disney many times and thus trip will be planned around our dining reservations. We have dinner reservations for: Narcoossee's, Yachtman's, California Grill, O'hana, LeCellier, Brown Derby, Whispering Canyon. A friend said The Flying Fish is not to be missed. Should I swap one of our reservations for The Flying Fish? If so, which one?

FYI - We have lunch reservations for Sci Fi, Chefs de France, Coral Reef, and Be Our Guest.
 
1) What are your dates?
2) Flying Fish will be closed until almost Winter.
3) As an FYI, Fulton's is also closed until November.

I know Flying Fish Café is currently closed but I never considered it a "not to be missed" restaurant. We thought it was okay but nothing special.
 

As others have mentioned it'll be closed during your visit. However, I would personally pick it over Brown Derby or Le Cellier. Of the signature restaurants both of those fall to the lower end of our list.
 
Since FF is closed, try Citricos. Flying Fish is one of our favorites and it will be back but not when you are here. Le Cellier is pedestrian at best. It made its mark with the soup and filet, but the filet is not nearly as good as can found other places. But for the experience, Le Cellier is good to try at least once. Get the soup of course, the best thing on the menu IMO.
