We will have Main dining so our breakfast will be very early on the last day, so do you think it will be doable to book a flight home around 11:20? We will have private transport already set up.

Barring any extreme circumstances, I think you’ll be fine.

Should be fine. Even with late seating breakfast and the Disney bus we have been t9 the airport by 10 or so. Understand though that you can’t use cruise check in for your bags and get a boarding pass from the cruise the night before if your flight doesn’t meet disney criteria which is either A flight no earlier than 1130 or 12. Your airline might not qualify anyway but if you need to check bags and get boarding Passes at the airport, you will need to allow enough time.

Since the OP stated that they’re doing private transfers, they’re already not eligible for the onboard check-in service.

Just keep in mind it can take an hour or more to get through security at MCO. Cabanas will also be opened for breakfast, so you could grab a quick bite there if worried about time.

Unless, of course, they booked their flights through DCL.

But, even if they have, they wouldn't be eligible for it if they book the 11:20 flight. Flights have to be no earlier than 11:30.

Does DCL routinely book flights for people that violate their own stated time restrictions?

That makes me nervous to think about. Odds are you will be fine, but one accident on 528 or long line at MCO and you will be a ball of stress. If it's a matter of $500 or so, I'd say it's worth it. But if you can also get a flight at 3 for around the same cost, I would take a later one. Better to sit around than to stress about getting to the airport on time.

This a valid concern, but the OP has booked a flight only 10 minutes earlier than Disney suggests.

Booking our own flights.

Again, barring something really unusual, you should be fine.

I agree that it should be fine. Its just the nervous nelly overplanner in me that's screaming. Perhaps paying to get TSA precheck would be a happy medium, then security lines are no longer a variable to worry about.

Flights have to be 11:25am or later to use onboard airline check-in at MCO.

We may book one for like 12:20. But we won't be using Disney's transfers so I won't be doing airline check in thing with Disney. Our cruise is a little over a year away and I am looking at flights now for that time frame this year, ATL-MCO and back and this is why I ask.

Only one DCL MCO experience, we BARELY made a 12:35 pm flight, walked right now. Disney transportation had us at the airport by 915 am, and we had our boarding passes by 930 am, security can just be a mess in the morning at MCO with the ships coming in and folks trying to get home from WDW. So wouldn't book a flight before 1 pm

On our WDW trip, we had a 6 pm flight. MCO is a much calmer place after the morning rush.
