Sooo... I must speak up about Garden Grill, as every Diser should.

IT IS THE BEST CHARACTER MEAL ON PROPERTY... imo, of course. Tons of great food, tons of character interaction, and because of the way the restaurant is situated - it really feels like you are all alone in the restaurant.

Doesn't get any better than that.

Nice to hear it is okay to go without a touring plan. I am a compulsive planner and would love to plan out every minute, but I just don't know enough about the parks to go that hardcore yet. Maybe next trip. I figured we would just wander around and when we see something we want to do, we will do it. Afterall, we are right across the lake and can hop over any evening to do more if we miss something.
The crowds
should be pretty light. I checked
Dad's February Disney World crowd calendar and I checked
Touring Plans crowd calendar. They both look pretty good (historically, that is). But keep in mind, even in best crowds, you probably won't get everything done that you want to get done.

I'd set some goals and prioritize attractions at the very least. We go during Moderate crowds, and we don't follow any plans .... we just decide what we
have to see versus what we
want to see. So when we get to stuff that we were okay with skipping ... it makes it much sweeter to feel like we accomplished an amazing vacation!
Glad to hear lots of people like GG. Neither DH or DS like crowds and loudness...especially while eating. The only meals I could see Chip n Dale were GG and Chef Mickeys. CM looks WAY too crazy for our first trip. Will most definately do that on another trip. We are planning on doing Contempo Cafe though, so they can experience the Contemporary. Of all my young trips, that is one thing I remember...the exitement that is Contemporary
There's no guarantee that C&D would show for a CM meal. We went to CM in 2009 and there was no C&D. We saw Mickey, Minnie, Donald, Pluto, and Goofy. I think the only way to guarantee seeing C&D is with GG. Have you read much about GG? I didn't know it rotated until recently. Anytime I have seen the place, it was before dinner hours, so it was closed. We're usually in WSC most of the evening.
IMO, CM was pretty chaotic. The characters were okay, they spent a good amount of time with my kids -- it was our first visit and DS was super excited to meet them. Donald is his favorite (and the first character he'd allow to interact with him) ... but when he saw Mickey ... WOW!

The kid went nuts! I thought he was going to explode.

With DS's reaction, Mickey really got into it and gave DS lots and lots of attention. I kind of felt bad for DD, but she did get some love and a signature, so she was happy.
Day 3 plan:
Still no ADR for breakfast...don't worry, I have a few later in the week. We just aren't sure how well we will sleep all together in one room, so if we happen to be up at 6, I don't want to have to wait around until 9 for an ADR. And likewise, if we are sleeping really well, don't want to have to set the alarm everyday of vacation!
Quick small breakfast at Capt Cooks then walk over to TTC to catch Epcot monorail. We will see Future World first and make our way to the countries for a light lunch. Thinking one of the pastry shops or something. Not too much because an early all-you-can-eat for dinner. Really want to try Boulangerie. Early ADR at Garden Grill so Bradey can see Chip n Dale. Hopefully we will have at least seen them at one of the other parks by now, but this should be his first up close encounter. Not sure how he will do, we don't have anything like that around here, so he has never seen a character in a suit (other than a Santa).
After dinner, I am assuming the little guy will be tuckered out, so Mom & Dad will take him back to the Poly and DH and I will explore the Boardwalk Area alone
Hoping to make a quick trip to HS so DH and I can ride Star Tours. I know DS will not like that one and the day we plan to do HS is after DM & DF leave. So if we can get that in, great. If not, its okay...next trip. Hoping to catch Illuminations too that night. Planning on watching Wishes from our beach whatever night best suits because DS doesn't like loud noises. This will be his first fireworks experience, so we figured we could watch them from the beach and it wouldn't be as loud.
So what countries have the best rides for DS? Not too boring, but not too dark & loud.
Well ... there isn't much in the way or rides in WSC....

UK: shops and dining ... but they do have a Toy Shop (and Pooh & Friends are sometimes meeting in it)
France:
Impressions de France is a 200 (degree) film; I haven't seen this, so I can't confirm if its standing or if there are seats (probably standing only)
Morocco: no attractions
Japan: no attractions -- but there is Pick a Pearl in Mitsukoshi store -- it's a blast!
USA:
The American Adventure, another theater show (seating available); animatronics (like
Hall of Presidents
Italy: no attractions
Germany: no attractions (but be sure to try the caramel at Karamell Kuche)
China: 360 film
Reflections of China, standing only
Norway:
Maelstrom; 16 passenger boats take you through the history of Norway (warning, there's some pretty creepy animatronics and some dark places)
Mexico:
Gran Fiesta Tour Starring the Three Caballeros; super fun Donald and friends boat ride through Mexico -- this is a MUST do for us every year
As far as attractions in Future World... I highly recommend Turtle Talk with Crush. It's one of my favorites, and I'm an adult! We usually ride The Seas with Nemo & Friends first, then visit Crush.
Innoventions has tons of neat stuff that he'll probably enjoy! (It even has video games!)
My DS5 is a scaredy-cat like his daddy (which is okay) ... but he loves Soarin'. It can be intimidating ... but it really is amazing. If your DS can't handle the excitement; be sure to do a Rider Swap. This is a MUST!
My DS5 does not like Test Track ... but I still think its a must. So be sure to Rider Swap it if he isn't feeling up for an adventure!
I know there's other attractions ... but you only asked about WSC ones ...
