This is our first Disney cruise in September in over 20 years. Can you tell me what I should prioritize to book when my window opens? Do they open at midnight on my day? Do I need to book then, or can I wait until morning?
 
The bookings include shore excursions, adult dining, tastings, and rainforest room / spa appointments. They open at midnight. It all depends on what you're wanting to do.

We usually DIY or book 3rd party for shore excursions so I don't worry about getting those.
We overall like the MDR food and dining experience and don't want to miss those so we don't book the adult dining (maybe that would change if we cruised frequently enough that we wanted something different).
We haven't done any tastings and don't really feel much desire to do that, so we don't worry about booking those. I'd rather spend my $50 or whatever getting wine/beer/drinks that I know I'll enjoy - not into champagne, whiskey, martinis, etc.


So, at my latest booking window, I only booked the rainforest length of cruise pass. I didn't stay up late, I booked it in the morning when I got up. I'm silver, and they were definitely sold out within a day or two after that. I did end up choosing to book a DCL excursion at Castaway Cay, but I did that about 3 weeks before our sailing with no issue. I think many of the excursions (for the ports other than CC), dining, and tastings were already sold out when the silver booking window opened though, there were a lot of complaints about it in our FB group.

You should prioritize the things that are most important to you. One of the hardest things to get is Palo Brunch so if you are hoping to do that I would start there. After that probably the more popular alcohol tastings like champagne, wine, chocolate & liquors, etc.

Shore Excursions tend to not sell out right away so I would do those last unless there is something you are really hoping for and can't live without.
 

An observation from our cruises is that even when the website shows that (fill in the event/meal you desire here) shows as unavailable, check when you get on the ship at guest services (for onboard fun/tastings), the adult upcharge restaurants (Palo, Remy/Enchante), and the Port Adventures desk to see if they've openings available. We just got off Magic yesterday and there were openings in Palo for brunch and dinner for every night.
