how does airfare and overnight stays the night before port arrival date work? Do they book your flights for you and accommodations? Is the price any different for those bookings if they book it as oppose to me booking my own?

If you use DCL to book airflights and hotels, you're going to pay more than if you book them yourself.
But, certainly it can be done that way.
We used DCL for our flights and pre-cruise (Hyatt) stay before the EBTA we took. Mostly because open-jaw flights cost more for us to book them independently.
Usually, we book our own flights. And, often, fly the red eye flight the night before, arriving early, early the morning of the cruise.
I did know you could have DCL book flight or hotel. I always do my own.
We prefer to fly in day before. There are plenty threads on these boards with where to stay prior to cruise.
We have stayed in Cocoa Beach and took hotel shuttle. We were able to leave our rental car there, we were going to VB after. We have stayed at WDW and drove our rental car to port for 3 night.
