Yes we got our first snowfall of the season today, and I have apples. So what would you have me bake, apple pie or apple crisp?
 
I think I'll have some apple crisp, please.. And could you make the top extra crispy and then refrigerate it for me until it's nice and cold?

I'm in NY and it's currently 38 degrees out.. And yes - it's waaaaaaay too early for this kind of weather! :scared1:
 
We are supposed ot get a snow/rain mix Friday night and we got hardly anything last year.

I was going to go out to dinner but I think it would be a much better night for staying in by the fire.

Oh and I vote for apple crisp too. :thumbsup2
 
I love Apple Crisp, but warm from the oven, with a little vanilla ice cream on top. And it has to be 'good' vanilla ice cream like Haagan Daas. Yummy!

When am I leaving the lake? Hmmm.. Hanging by my fingernails - trying to reach my "target date" of November 1st.. So far I'm staying relatively warm and my water pipes haven't started to freeze yet - even though the nighttime temps have been down in the 20's..

I know it's crazy - but I'm "old" now (turned 60 last week) - and it's probably dementia setting in :laughing: - but I'm still holding out hope for a smidge of Indian Summer..;)

Having lived my whole life in New England until relocating to SoCal last year...I know first hand how the winters can be in the Northeast. :sad2: I hope this does not mean a bitter winter ahead for you all. :sad1:
 
C.Ann happy belated birthday, sorry 60 is far from old. Well so long as you are still warm and the pipes aren't freezing, then I would try and hang in there till Nov. 1 too. But I don't see an Indian Summer anytime soon (don't remeber having one last year either).

Swedish Apple Pie! Its kind of in between apple pie and apple crisp. So easy to make and so so good!


*5-6 apples, peeled, cored and thinly sliced (I like macintosh)
* 1 tablespoon sugar
*2 tablespoons cinnamon
* 1 cup sugar
* 1 cup flour
* 1 stick melted butter
* 1 egg

1. Preheat oven to 350 degrees F
2. Toss apples with 1 tablespoon of sugar and 2 tablespoons of cinnamon, and pour them into a pie plate.
3. Mix together 1 cup of sugar with the flour,butter and egg. Spread this evenly over the top of the pie.
3. Bake in preheated oven until the apples have cooked and the topping is golden brown, about 40 to 45 minutes.
 
I voted other, but of those I would go with apple crisp. We have that quite often here anyway. Just had a small one myself 2 nights ago.

But I like apple coffe cake.

Apple Streusel Coffee Cake

Streusel
1 1/4 cups packed light brown sugar
3/4 cup flour
1/2 cup cold butter -- cut in small cubes
2 teaspoons cinnamon
1 cup walnuts -- coarsely chopped
Cake
3 1/4 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 cup butter or margarine -- room temperature
1 1/4 cups sugar
3 large eggs
2 teaspoons vanilla
16 ounces plain low-fat yogurt
2 Granny Smith OR Golden Delicious apples,
peeled ,cored -- cut in 1/2" dice


Oven to 350 degrees. Grease and flour a 14 cup nonstick pan.
Streusel: In a medium bowl, stir brown sugar, flour, butter and cinnamon with a fork or rub together with fingertips until crumbly and butter is completely incorporated. Stir in walnuts.
Cake: Mix flour, baking powder and baking soda in a small bowl. Beat butter and sugar in a large bowl with electric mixer until fluffy, about 2 minutes. Beat in eggs, one at a time, beating well after each. Beat in vanilla and yogurt. With mixer on low speed, beat in flour mixture just until blended, scraping down bowl as necessary.
Spoon 3 cups batter into pan. spread evenly. Sprinkle with 1/4 cup streusel, apples and 1/2 cup streusel. Spoon on remaining batter and spread evenly. Sprinkle with remaining streusel, pressing down lightly so it sticks to batter.
Bake 50-60 minutes or until a pick inserted in cake comes out clean. Cool in pan on wire rack 15 minutes. Place cookie sheet over pan and carefully invert both. Remove pan and cool completely.
To serve: Invert onto serving platter.

DD7 just had a Brownie meeting today and they made baked apples with cinnamon sugar on top with pink marshmallows melted on top! Yummy!
