Some items that have gelatin
Some Cheesecakes
Jello
Some Yougurts
Some Sour Creams
Some Chewy or hard Candies (Starburst and Conversation Hearts to name two)
Some jelled products (probably why the Fruit Tarts were out)
Typically Puddings and mousses are safe as is pecan pie (mostly that is just carmelized sugar and nuts)
Sadly lots of strange items have gelatin which can be very frustrating (it killed me to find out a cereal I liked had it), but I am so glad to hear that Disney's TS is so good at making sure you know what is in their food! We had some major issues with this last trip with CS I am so glad to hear that things are better at the TS.
I also just noticed one kind of shredded wheat had gelatin. I was just looking at it at the store; sorry to hear one you had liked had it!
As fairycat said, generally puddings, mousses, and pecan pie are clean. Boma is just extremely LAZY---there's no good reason for it to be in the fruit tarts or the mousse, and it's just the bottom of the zebra domes, so it's really just a lack of consideration. I don't personally find Boma to be veg. friendly at all---I find it to be pretty deceptive, actually.
Other things with gelatin...junior mints, skittles, marshmallows (but NOT marshmallow fluff---which works for rice krispie squares!), sometimes heavy whipping cream. I've had a hard time finding any yogurts without gelatin, except for the plain flavors.
Another thing to watch out for is lard used for cooking. We found it in a regional brand of potato chips on a trip to D.C. A big deal pie shop in our area used it in their pie crusts, as did another bakery in their hard rolls (?!?!). The pie place was pretty down home, so that was probably part of it. We've just become accustomed to reading the labels (not a bad idea any way) on anything we buy.
Boma was the only place we found that was really tricky.
