I had a very good meeting with my administrator today. I moved around desks to separate certain students from each other and make room for my remote learners to transition back to school mid April when class sizes increase and social distancing goes from 6 feet to 3 feet. I'm still going to try to keep desks at 6 feet if possible. It was so peaceful without students today.
 
Spring break begins here... laid back Saturday but Sunday I’m off with my oldest for a couple of days together. I’m pretty excited 🙂 She is very low key so beyond some window shopping I’m thinking botanical garden? Art museum maybe? It will be good. My husband took both girls @10 yo on father/daughter trips... I’ll be taking the girls as they hit 16... this one delayed by covid but we’re finally going! I’m thinking we will do vice versa for boys- I’ll get 10yo & he’ll do 16. Hoping for a good time connecting one on one. These years are so important ❤️
 

Tried this recipe this week and it was delicious! (I did it without the crushed red pepper, but my husband added it to his portion once plated)

Rosemary + Lemon Chicken and Potatoes
INGREDIENTS
● 8-10 pieces of your favorite cut of chicken - skin on, bone in
● 1 lb. baby red potatoes
● 1⁄2 onion - cut in large pieces
● 2 lemons, 1 sliced and 1 juiced
● 1⁄3 cup olive oil
● 2 garlic cloves, minced
● 1 Tablespoon fresh Rosemary plus sprigs for garnish
● 1⁄2 teaspoon crushed red pepper flakes
● 11⁄2 teaspoon salt
● 1⁄2 teaspoon fresh ground pepper
INSTRUCTIONS
1. Preheat oven to 400 degrees F.
2. Spray a glass 13-in. x 9-in. baking dish with cooking spray. Arrange chicken pieces
(skin side up), potatoes, sliced onion and lemon slices evenly in pan.
3. In a small bowl, whisk together lemon juice, olive oil, garlic, rosemary, crushed red
pepper flakes, salt and pepper.
4. Pour mixture over chicken, making sure all the chicken is covered. Toss a bit if
necessary.
5. Sprinkle generously with additional salt and pepper.
6. Bake uncovered for about 1 hour, or until chicken and potatoes are fully cooked.

I love sheet pan meals-less to clean up and usually enough for leftovers.

I found this in the grocery store recently and it was wonderful with strawberries!

Just printed this recipe to make this week and added the Sabra Chocolate to my cart as well. Both sound delicious!
 
My sweet tooth is my big weakness, so I balance that with healthy protein. Iconic shakes are made with whey protein, not soy which causes health issues. I drink one every day for lunch and add them to my Nutribullet when making a fruit/veggie smoothie. Delicious! I use Iconic protein powder in baked goods, pancakes, and waffles. No Pudge Brownies are so delicious but better for you than regular brownies. You can eat the batter raw because it is made with yogurt. DD and I use Stonyfield Farm vanilla or chocolate underground yogurt to make them, and we add 70% dark chocolate chips. YUM!!! Finally, my latest find are Aloha protein bars made with plant-based protein. They are my new after school snack. They taste like candy bars.

Love the chicken recipe-definitely making it this week! Will try the Aloha bars as well-I like having one in my purse in case I’m out at lunchtime and get hungry. The stores carry so many brands, I never know which to try and end up with the same old Kashi bars.

I really liked KIND bars until I broke a tooth and ended up with a root canal.
 
Things are better today, Still dealing with a sinus headache but still better then yesterday. I did get 145 minutes of activity today, according to my fitbit. I am so in trouble with Girl Scout cookies now here. I ordered them back when I was pretty depressed. I was in a pretty bad place. DH has since said that he was worried about me. I ordered a ton of Tagalongs. My favorite and one that I am not good at eating in moderation. I am regretting that I ordered so many. I am in a much better place now. I got on a schedule and have been working out since the beginning of February. I am losing weight and noticing it in my clothes. I don't want to change that. I am going to have to have so real will power to them in moderation.
 
Hmmm... I've swapped out getting my iced chai at Starbucks to getting unsweetened iced tea, does that count as a discovery?

OMG what a gloriously beautiful day it has been today, sunshine all day long but springy/summer-like sun for like the first time. I did the country drive, stopping to shop along the way but didn't find anything for the office. On the way back I absentmindedly took the West Seattle Bridge exit off of the freeway... the WS Bridge is the access point to get back to the neighborhood from the east and has been closed for a year due to structural issues. The most eastern section is open but you have to exit to street level before you get to the damaged part over the water. For a few moments it just felt so darn normal to be driving on the bridge and then to be down on the city streets felt normal as well... two things I haven't done in over a year.

It left me feeling like this summer is going to be amazing.
 
My sister had her baby today! A sweet baby girl at 6:01am this morning...8lbs 18.5”. She is allowed one visitor per day in addition to her husband. And today’s visitor got to be me!!!!! I was so excited that my parents let me go. They knew they’d be able to see her all week since they are retired. So the best part was not only meeting my niece but also the quality time with my sister and brother-in-law. There was no one else interrupting our conversations (aside from a few nurse visits), no dogs barking, no meals to make, no laundry to do, no house to clean, etc. just time to sit and chat while holding my adorable niece. It was a perfect day!

And on my way home, I picked up some of the Sabra chocolate dip...WOW! We had some fresh strawberries and dipped them in it. DELICIOUS!!!!

I like the idea of going for a drive-we have a state park about 20 minutes away. There’s places to walk and I could look for birds-one of my new pandemic hobbies!

Hoping everyone has a day to rest/recharge before the start of another week!
 
I saw this on Instagram yesterday and was thinking how perfect it would be for this group! I think I will focus on finding joy in the little things! A little baby girl was born yesterday! Little fingers, little toes, little nose, little lips, little chin, all so perfect! The sun is shining! I hear birds outside. Spring is on the way!

We have also been trying new recipes, so that’s been fun and making dinner time exciting!

I also hope to get outside today for a walk (not a run yet, but same idea.)

Most Girl Scout cookies seem to freeze well, if that will help you save some for later. Or you could always give some away to a food pantry or drop a box by places in your community to thank the workers - fire station, library, etc. Anyway, I'm glad you are feeling better now and don't need them!

Yesterday was glorious! It was warmish with clear blue skies. Wonderful. Twins are with their dad for the weekend and DH and I had no plans. DS1 called and chatted for over half an hour (such a treat)! He mentioned talking to grandma and grandpa and I realized that DH and I should go do some chores for them. So we gave them a call so they could think of chores (wasn't hard!) and hit the road. Two hours later we were there sawing fallen trees, lopping dead branches and hauling brush to create some burn piles. We worked up quite the sweat! It was nice to sit around outside in our masks when finished and just visit. Two hours to get home and DS2 was there. Pretty full day for us! Then last night I watched Out of Africa. Had to stay up late to do it and of course was blubbering at the end. Today I need to do all the house work I'd planned to do yesterday. Need to also plan meals. Will probably add sjrec's chicken recipe to the plan. It sounds delicious.

Scale finally went in the right direction! Now if I can just keep it up. Got the cutest save the date magnet from DS1/finance. Put it on the fridge so hoping to use that for some inspiration!

The other day phit-n-phat had a quote I liked. Something like: the only problem food solves is hunger. So true!
