Totally agree about DLRP not being a planning holiday to the dramatic scale that WDW is (I almost needed a holiday to get over our planning last summer!). However, I will say, if you are going in peak time i.e. our summer, Christmas, Easter, Halloween etc, then I do think you should do some planning and definitely book any restaurants you really want to do. This isn't so necessary outside of those times, but imo makes it easier if you know you have certain 'must do' meals booked. I've often seen people turned away from Inventions, Walts, Blue Lagoon etc if they don't have reservations (they don't call them ADRs in DLRP).
I do think, that unless it's really quiet, then you can loosely plan things like using extra magic hours (if staying onsite and I'd personally recommend that if it's your first stay) to ride as many big queue rides as poss - CDS has mentioned a few above. You can then use legendary fastpasses to do others such as BTM etc.
Depending on your budget, you may want to go for a Club room at the onsite hotels which give you an extra FP per person each day to use as you wish etc. Again, all food for thought and you can read up on these things on this site and others that are mentioned.
