Favorite cheeses to use in homemade mac & cheese?

Yes, but when I use cheese, I want it to be all cheese. And it's really easy to buy a piece of parm and shred it in the food processor or blender. Or even to do it by hand. Or to buy shredded cheese that is 100% cheese if you don't want to do it yourself.

All I was doing was pointing out that your earlier statement wasn't accurate. It's fine if you prefer no additives. But, that doesn't mean that "the stuff in the green bottle isn't cheese." That's a misleading statement, at best.
 
Sharp cheddar is the best, but try it with half smoked cheddar and half regular cheddar.
 
I love velveeta. I love expensive Italian Parmesan wedges. I love the green can stuff. I love smoked Gouda. I love cheez whiz. I do not discriminate or show snobbery towards any kind of dairy product with the name "cheese" in the title. I love them all. I also have yet to meet a mac n cheese that I didn't like :lovestruc

Then again, there's this recent Bloomberg article. Kraft is reportedly 3.8% cellulose.

When people say it's not cheese, it's like saying Manichewitz isn't wine or tomatoes aren't a fruit. They may be wrong if interpreted literally, but it still conveys useful information.
 

1/3 velveeta, 1/3 sharp cheddar, 1/3 Swiss with a touch of grated onion and garlic... Delish!
