Favorite Camping Recipes

In preparation for our upcoming Disney trip I have been trying out some new recipes this summer and have one that has quickly become a favorite so I thought I'd share. I'm not sure if there will be enough interest but it'd be great to have an up to date camping recipe thread if anyone else wants to post some.

First you take biscuit dough out of a can and stretch each biscuit until the dough is thin enough to stick into a muffin tin in the shape of a cup. Then you stick an egg in, you can do whole or scrambled, but if you do whole you may not have room for all of the egg white, I usually have to throw some egg white away or it will overfill the biscuit cup. Then top with pre-cooked bacon or pre-cooked sausage. Then top with cheese of your choice, I've used shredded and slices and both turn out equally well.



Then you bake at 350 for anywhere from 20 minutes to 45 minutes depending on if I've pre-heated the oven or not and depending on whether you want your egg yolk still runny or fully hardened. I recommend checking at 20 minutes the first time you make it.



What I love most about this recipe is that it only takes 5 minutes of prep work and then you can walk away. I usually make these on pack up mornings because I can stick them in the oven and then continue packing up. But in Disney I figure I'll stick them in the oven then hop in the shower in the mornings.



I also love that it is so easy to eat one handed while driving or walking to somewhere. Since the ingredients all bake together it stays together when you bite into it instead of falling apart in your hands like a traditional sandwich style egg and biscuit. And if you use a disposable muffin tin there is zero cleanup afterwards.

And last but not least, it is very filling and stays with you for a long time which will be perfect for early morning park touring!
 
Forgot to add I do spray the muffin tin with cooking spray before putting the biscuits in.
 
Sounds interesting. I might have to try it at home. I also have the "Oversize" muffin tins so I probably don't even need to waste the extra egg whites. :)
 
They look delicious. Have you tried to freeze them and then just microwave when you want one?
 

Yummy Ruthie. Thanks for the new recipe! That looks delicious! Will be making that for sure next trip. I would cook that tonight for dinner but I all ready have chili on the stove. Cause it's summer time and 85 and that calls for chili right?! hehe

I love to make pre packaged cinnamon rolls for not only breakfast but evening snack too. Quick and easy. I'm talking about the huge Pilsbury cinnabon ones :)

This next trip I plan to make and freeze chili and lasagna before heading down.

Not really recipes but I try to think of a couple and add to your thread.
 
What a great thread idea... We have never camped at WDW, but we are hoping to rent a cottage next trip. But we do camp a lot around home, by renting cabins or mobile homes. I have 2 recipes I'd like to share that everybody in our family likes. The first is a giant heated grinder. I take a loaf of Eye-talian bread, kind of boat it, and stuff any thing good in there. Leftover cooked sausage, hamburger meat, or cold cuts. Add a ton of cheese (we all LOVE cheese) and a little bit of tomato sauce, put the bread top back on, wrap it up real good in aluminum foil (I always use that heavy duty stuff dontcha know?) And then just pop it in the coals or on top of the grill, give it a turn every now and then. It comes out like pizza and is devoured in seconds! Yum
 
Sorry I said 2 recipes... The other is for tortilla soup and again involves leftovers. Either cooked chicken, or ground beef (pre cooked). Put it in some olive oil in a big a** kettle. Add a bunch of cut up onion, and any other veggies you won't be needing anymore. Throw in a couple if cans of rotel maters, a large can of tomato juice, a can or 2 of southwestern style corn, a can of black beans, and a wad of cilantro. If you like more spice add a jalapeño or 2. Throw this on the stove/grill/or whatever cook top you have. When it starts to boil, throw in a box of whatever macaroni you like. Don't matter which one. When the macaroni is done, your soup is done. Serve it with shredded cheese (told you we like cheese-lol) and tortilla chips or Fritos. I usually don't carry a bunch of spices with me, hence the rotels and southwest corn. But if you're feeling adventurous, you could add some southwest type spices. Another hit in our family without much effort! O usually use some squash for my veggies but it really don't matter at all. Everyone will be eating it and won't care much about what you threw in it to make it healthy!
 
Hmm. Egg white biscuits with turkey sausage, light on cheese, and add tomato and/or spinach! That sounds pretty good! :thumbsup2

Yeah smadath, this is a great basic recipe that you can easily customize to your tastes. I've done different kinds of biscuits and different kinds of cheeses.
 
I love love love camping! And really enjoy the cooking aspect of it. Hoping to get some good ideas from this thread. I'm already planning on making those egg thingies. Thought I might throw on some hollandaise sauce. (I'm all about the condiments!)
