No doubt in my mind, I'd do California Grill and Wishes. Fantasmic is a good-enough show, but IMO nothing beats the atmosphere of CG, taking a glass of wine out onto the deck to watch Wishes, then having an amazing meal after the show. We love CG, and find Wishes to be a completely different experience when watched from a distance, on top of the Contemporary. While the food at HBD is fine, we still feel like we are paying a premium to eat supper in a theme park and then watch a show that shouldn't need an expensive reservation. Besides, aren't those Fantasmic dinner package seatings pretty early? That would cut into our park time, which would make the whole day at HS relatively short.
You should be able to get back to AKL by taking the monorail back to MK and then the bus to AKL. Even if the monorail isn't running, there will be buses available from the Contemporary to MK and then to AKL, or the Contemporary will put you in a cab to either MK or AKL. They are pretty good about making the appropriate transportation available, after hours, at no extra cost. (BTDT at midnight!!)
