Your showtime is determined by the time of your reservation. If it isn't clear from the website, you can call and ask which show your reservation would be for.
Is it smart to want to see the first show with the hope that during the second show, the park will be emptier and we can be riding more things with a lesser wait? Or is that just not true and it doesn’t matter either way?

that is true BUT only during a very small window of maybe 30 minutes. You need to have a plan, either stay in New Orleans Square and go straight to either Pirates or Haunted Mansion or Splash or Indian Jones or Jungle cruise
OR be really fast and get though the crush of Adventureland , out through the Hub and across over to Tommowland and try Buzz, Autopia Space Mountain or Star Tours.
After Fantasmic I usually stay in New Orleans Square, and go to either Pirates or Huanted Mansion. By the time you do one rotation, the lines have started to build again.
On my second day in the main park, I was in Tomorrowland from about 8.30pm. I managed to do Buzz twice and Star Tours twice between 8.45 pm and 9.45pm
If you are not going to Fantasmic or to the fireworks, you need to pick a side to be on during that time. Its a complete bottle neck and crush of hundreds of people to push through on Main Street between 8.45pm and 10pm
