We’re looking to book our first cruise (7 night Eastern Caribbean on the Fantasy). It’ll just be my husband and me. For a couple is there any benefit to a Family Oceanview Stateroom with Verandah over an Oceanview Stateroom with Verandah?

The family oceanview stateroom is slightly bigger. I believe it also has one extra chair at the 'end' of the room near the verandah doors. For the two of you, I think an Oceanview Stateroom would be just fine.
 
It's more space, that's all. Nice but not really needed unless that's a priority for you.

Both have balconies. The only difference is the slightly extra length of the "Family" stateroom. It is approximately the width of a twin size bed. There would either be a murphy bed or an extra chair in that space. Otherwise the 2 categories of stateroom are exactly the same. For just a couple, there probably is no particular value in the larger room.

I stayed in an oceanview stateroom with verandah on my honeymoon, it was definitely large enough for 2 people.

I’m going to disagree a bit with some folks. On the Fantasy, the difference is not just in the length of the room. Fantasy Family Oceanview Staterooms have a rainfall shower in a round tub. For this 6’2” dude, it’s a lot easier showering in those round tubs. That’s why my family books them on Dream-class ships.
 
We stayed in the larger verandah room on the Dream for just the 2 of us and we loved the extra space. We had a murphy bed which never came down giving us some extra space on the other side of the sofa. We loved the round shower and rain showerhead!
 
On the Dream-class ships, there's extra space near the verandah that can be used for luggage or anything else. It's easier to walk around the bed and other furniture. The coat hooks aren't in a stupid place. The shower is in the round bathtub instead of the normal, rectangular one. Everything just feels a little better.

My first few cruises were in Family Verandah rooms. Last year, I finally took a cruise with a regular Verandah room and I definitely noticed the difference. I'm going back to the Family Verandah rooms for future cruises on the Dream-class ships.
 
There are the Cat 4E cabins - family with an extended Verandah. The balcony is extra deep with enough room for loungers and chairs. About half is in the shade and the front near the rail is open to the sky (and observation to cabins above. A few of these are actually the width of 2 cabins. All on Deck 5.

My fave rooms on the Dream class. We have one booked again on the Dream this August. Of course we are still travelling as a family of 4 but if DH and I ever sail without the kids (hopefully just a few more years lol) I'd probably still try and get this room ;-)
