Excursions---how far in advance??

We are going w/a large group on the Eastern cruise route in June. Everyone would prefer to wait and decide on excursions when we board. Now that reservations are allowed 60 days in advance, is this too risky? Is everything booked by the time boarding occurs? Which ones are sure to be sold out at time of boarding? Thanks for the help.
 
My experience with sailing with a large group is they will all want to do different things. You're not likely to be able to coordinate a large excursion on any given day. Go ahead and book the excursion that you'd be disappointed to be shut out of if it were sold out. You'll see them at dinner that night.
