I'm baking some snickerdoodles now.
What other cookies should we make? Does anyone have some true and tried recipes they would like to share?
 
Even though chocolate chips are my favorite, I love snowballs too.

SNOWBALL COOKIES

1 lb. butter
1 c. powdered sugar
1 tsp. salt
4 1/2 c. self-rising flour
2 tsp. vanilla
1 1/2 c. pecans, chopped

Mix all ingredients except powdered sugar well. Roll into balls and bake 10-15 minutes at 350 degrees. Roll in powdered sugar while hot and cool then roll again.

MINI PECAN TARTS

1 (3 oz.) cream cheese
1/2 c. soft butter
1 c. flour

Mix together and shape into 24 small balls, chill.

FILLING:

1 egg
3/4 c. brown sugar
1 tbsp. butter
Salt
2/3 c. chopped pecans
Vanilla flavoring

Place small balls in mini muffin pans. Press in middle of ball to make mini crust. Pour filling in each cup and bake 25 minutes at 325 degrees

Don't I know it!! I've been doing it for years and the list of people receiving just keeps getting larger and larger! All our family and friends plus DH's co-workers, neighbors, Postal Carrier. It's alot of work but everyone looks forward to them. Everybody has their favorites...more of this, less of that...that gets hard to keep track of. I do enjoy it for the most part though!

That is very nice of you to give everyone a homemade treat.
We don't usually recieve them, but I make them for others.
 
Mmmmm cookies! I will post a few recipes a little later when I can go through them and see if they are on my computer. (Most are on little cards, LOL!)

Any special recipes without nuts? DH can't have them and DS won't eat them so we make lots of other things with pumpkin and apples.
 
can anyone give me instructions on mailing a package overseas... I got an overseas name in an exchange and I have no idea what special things I need to do to send there THANKS
 
If you're going to mail it US mail, you'll need to fill out a form, long or short, I think it depends on the weight. Just prepare the package in your usual way, and when you get to the post office, there will be forms and the person behind the counter will help you. In Centerville, they will give you the form, ask you to fill it out and then you won't have to go to the back of the line again, they just take you when you're ready.

You will also want to check on what items you are not able to send within the country....ex. we are not able to send all beef jerky products from the U.S. to Japan. They need to have a special inspection mark on it.
Also from Japan, you can't send pork/beef items and customs will confiscate it.
So just check with your post office, or have the organizer of the exchange ask the recipent if they have any info. if you are concerned about any food products and such.

Here is the recipe for my favorite cookies. They are labor intensive to prepare, but so worth it! My family literally begs for these.


Venetians
These are my favorite cookies consisting of three
layers separated by jam filling and then
coated with chocolate.

Ingredients: 

8 ounces almond paste
1 1/2 cups butter softened
1 cup sugar
4 eggs (separated)
2 cups all-purpose flour
2 teaspoons almond extract
1/4 teaspoon salt
12 drops red and 12 drops green food coloring
16 ounce jar of apricot jam - remove big pieces of fruit
1 package semisweet chocolate chips
Directions:

1. Butter 3 - small 13 x 9 inch pans. Line with
wax paper or parchment. Butter the paper. Preheat oven to 350 degrees F

2. Combine almond paste, sugar, butter,
egg yolks and almond extract. Beat for 5
minutes until light and fluffy. (You will have to break up the almond paste into crumbs first with your hands - this takes time)

3. Beat in flour and salt. In a separate
bowl, beat egg whites until stiff peaks form.
With a wooden spoon, fold into the almond
mixture.

4. Divide dough into 3 - 1 1/2 cup portions.
Add red coloring to one of the portions, and
green to the other.

5. Spread the batter in the 3 separate
prepared pans (keeping the colors separate).
Bake for 9 - 11 minutes, or until edges are slightly
golden, but not browned. (Each layer will be 1/4 inch
thick). I watch it through the oven window for the last few minutes to catch it before it browns the edges. It is better to undercook this than to overcook.

6. Remove cakes from pan immediately. Cool
thoroughly.

7. Assemble the layers: on a large, flat cookie sheet or on
some wax paper on the counter. Lay one layer down.
Spread apricot jam all over top and add next layer. Repeat.
(no jam on top layer).

8. Melt chocolate in microwave and spread
over top layer. Refrigerate and allow to set overnight. Trim edges and cut
into 1 inch squares. Makes 56 cookies.

ok I went to mail my $10.00 exchange package today and they told me the cheapest I could send it for was $35.00 and that I was not allowed to send uncooked pasta in the box I didn't send it because I wanted to see if that was correct... someone remind me to only sign up for exchanges wher overseas is a choice lol... no really I will send it gladly shocked but gladly I just want to know if that is correct before I shell out 3 times the price of what is in the box to mail it ... is there an overseas flat rate?
 
Go to usps website.... to the calulate postage option and enter all the info. It will list all the choices for you....with weights, prices and length of time for it to arrive.

Chocolate-Covered Cherry Cookies

1 1/2 cups flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup margarine -- softened
1 cup sugar
1 egg
1 1/2 teaspoons vanilla
10 ounces maraschino cherries
6 ounces semisweet chocolate chips
1/2 cup sweetened condensed milk

In a large bowl stir together flour, cocoa powder, salt, baking powder and baking soda.
In a bowl beat together margarine and sugar on low speed of mixer until fluffy. Add egg and vanilla, beat well. Gradually add dry ingredients to creamed mixture. Beat until well blended.
Shape dough into 1" balls.
Place on ungreased cookie sheet. Press down center of dough with thumb.
Drain cherries, reserving liquid. Place a cherry in center of each cookie.
In a small saucepan combine chocolate pieces and sweetened condensed milk. Heat until chocolate is melted. Stir in 4 teaspoons reserved cherry juice.
Spoon about 1 teaspoon frosting over each cherry, spreading to cover cherry. (Frosting may be thinned with more cherry juice).
Bake 350 degrees for 10 minutes. Remove to wire rack. Cool.

Cinnamon Sugar Butter Cookies

3 tablespoons sugar
1 tablespoon ground cinnamon
Cookies
2 1/2 cups flour
1/2 teaspoon baking soda

1 cup packed dark brown sugar
1/2 cup sugar
1 cup unsalted butter -- softened
2 large eggs
2 teaspoons pure vanilla extract

Preheat oven to 300 degrees.
In a small bowl combine sugar and cinnamon for topping. Set aside.
In a medium bowl combine flour, soda and salt. Mix well with a wire whisk and set aside.
In a large bowl blend sugars with an electric mixer set on medium speed.
Add butter, and mix to form a grainy paste. Scrape sides of bowl, then add eggs and vanilla. Mix at medium speed until light and fluffy.
Add flour mixture and blend at low speed just until blended. Do not overmix.
Shape dough into 1" balls and roll each ball in cinnamon-sugar topping.
Place on ungreased cookie sheets, 2 " apart.
Bake for 18-20 minutes. Immediately transfer cookies with a spatula to a cool, flat surface.

Bake 10-12 minutes at 375F.

Pecan Logs

1/4 teaspoon salt
2 teaspoons vanilla
1 tablespoon water

2 cups pecan halves -- chopped fine

Oven to 350 degrees. Have cookie sheets ready.
Beat butter, 1/4 cup sugar, salt, vanilla and water in a large bowl with electric mixer until fluffy. Stir in flour and nuts until blended.
Shape rounded teaspoonfuls into logs about 1 1/2" long and 1/2" in diameter. Place 1/2" apart on ungreased cookie sheets.
Bake 12-15 minutes until bottoms are lightly browned. Remove to wire racks to cool completely. Roll in the remaining confectioners' sugar to coat.

Nanaimo Bars - Old Recipe

1/2 cup butter

1 3/4 cups graham cracker crumbs
1/2 cup nuts -- finely chopped
1 cup shredded coconut
Middle Layer
1/2 cup butter
3 tablespoons light cream
2 tablespoons custard powder -- *
2 cups icing sugar
Top Layer
4 ounces semisweet chocolate
2 tablespoons butter

Bottom Layer: In double boiler, melt butter, sugar and cocoa. Add egg and cook until thickened. Add crumbs, nuts and coconut.
Press into ungreased 9 inch square pan.
Middle Layer: Beat together butter, cream, custard powder and sugar. Spread over base. Chill.
Top Layer: Melt chocolate with butter. Cool slightly. Pour over second layer. Chill. Cut into bars.

NOTES : Custard powder can be found in the baking section of Canadian supermarkets. I have seen the substitution of instant vanilla pudding or instant vanilla pudding powder in American cookbooks.

In a medium mixing bowl combine flour, cocoa powder, baking soda, ginger, baking powder, cinnamon, salt and cloves.
In a large mixing bowl beat shortening with an electric mixer on medium speed for 30 seconds. Add sugar and beat until fluffy. Add whole egg, corn syrup and milk. Beat well.
Beat in flour mixture, stirring in last part with a wooden spoon until well mixed.
Divide dough in half. Cover and refrigerate about 1 hour or until easy to handle.
On a lightly floured surface, roll each portion of the dough 1/8" thick. Cut with 3-4" cookie cutters.
Place on a greased cookie sheet.
Combine the egg white and water. Brush on cookie cutouts.
Bake 375 degrees for 5-7 minutes or until lightly puffed and set. Cool thoroughly on a wire rack.
Pipe on decorator icing.

Orangy Sugar Cookies

2 tablespoons lemon juice

Sift flour, baking powder and salt onto waxed paper.
Beat together butter, orange peel and sugar with electric mixer until fluffy. Stir in orange and lemon juices. Stir in dry ingredients until blended. Chill several hours or overnight.
Preheat oven to 375 degrees.
Roll dough to a thickness of 1/6". Cut out with cookie cutters and place 1" apart on cookie sheets.
Bake for 8 minutes, until set and lightly golden. Cool on wire racks.

2 cups flaked coconut -- finely chopped

In a mixing bowl, cream butter, sugar, water and vanilla.
Combine flour, oats and salt.. Gradually add to creamed mixture.
Shape a tablespoon of dough around each cherry, forming a ball. Place 2" apart onto ungreased cookie sheets.
Bake at 350 degrees for 18-20 minutes or until bottoms are browned. Remove to wire racks to cool.
Combine sugar and enough milk to achieve smooth dipping consistency.
Dip cookies. Then roll in coconut.

Sending overseas can get very pricey so try to find things that are light in weight.

Bake at 350 degrees for 18-20 minutes or until bottoms are browned. Remove to wire racks to cool.
Combine sugar and enough milk to achieve smooth dipping consistency.
