I have an 8 year old who doesn't eat outside of the box (if you know what I mean) and I haven't figured out to use the grill. So having steak is usually a going out to dinner deal. Tried this recipe this past week and it is easy and excellent! I actually used a filet mignon)
2 Boneless strip steaks 1 ½ to 1 ¾ inches thick
Salt and pepper
Vegetable oil
Preheat oven to 275, oven rack to middle position
Pat steaks dry with paper towel
Cut each steak in half to create 4 8oz portions
Season liberally with salt and pepper
Place steaks on wire rack on top of baking sheet
Cook until 90 to 95 degrees for medium rare 20 to 25 minutes
Heat oil in heavy frying pan until smoking ( I cooked it with butter instead)
Place steaks in skillet until well browned and crusty about 1 ½ to 2 minutes per side
Reduce heat if they begin to burn
Let rest tented with foil
