Evening entertainment for me and Mom?

I'm taking my Mom to Disney on her first trip since she took me as kid back in the 70's. We're so excited! Right now, I'm in the process of planning some fun things to do in the evenings? We'll only have three "real" evenings (get there late the first night). Right now, I am thinking she would definitely love IllumiNations and/or Fantasmic. :) I'm also thinking about either Cirque du Soleil or the HDD. I saw the HDD recently and had a wonderful time, but have never seen La Nouba.

We'll be there Sat, Sun and Mon nights October 7-11. Anybody have any suggestions on "must see" stuff in the evening?
 
I love spending evenings at Downtown Disney. There's so much to do and La Nouba is not to be missed!
 
I second going to see La Nouba. Have an early dinner, go to the early show, and then take a stroll around DD...or do the reverse, take the stroll, have dinner, and see the late La Nouba.

BTW, there's not a bad seat in the house, so go with the slightly cheaper seats so that you don't have to be craning your neck the whole time.
