For anyone interested, Eurostar are taking phone bookings for dates up to 12 December.
I called them today to get prices for October - currently not available on the website.
Also, for the first time in ages - the current offer with Disney 25% off travel, makes a Disney package cheaper as a whole than booking hotel and Eurostar separately. Also the Disney package includes Disney Express - making a total saving of approx £60 on my proposed dates.
