EPCOT on EMH

We have decided to change around some of our plans for our trip the first week of October(for a number of reasons, some scheduling conflicts with friends we are meeting down there) and this has made us change our EPCOT day to Monday, which is early entry. We are not staying onsite. I plan on getting there at opening. Will it be mass crowds? Do you think we will still be able to do the major attractions without massive wait times (Soarin, TT, M
:S). I am also nervous because it is the beginning of food and wine fest.

I switched to Tuesday at Epcot because of EMH on Monday, and I noticed on the Disney website that Tuesday is also EMH, so now I'm not sure what to do.
