Epcot Experts - questions on my plan

We are traveling with our 4 year old son and will be in Epcot for 1 day on Oct 22nd. We have ADR's at Ohana for 8:30am and figure we can be at Epcot close to 10am. We have the whole day to see it and I am trying to get a plan. Just a note: my son won't go back for a nap and I am bringing a stroller. If he poops out, he will sleep in the stroller...he sleeps anywhere if he's tired enough! We will also be there during food/wine fest so if he sleeps - we will enjoy some wine and relax during that time.

Please let me know what you think of my plan:

Pick up FP for Soarin
See Seas Pavillion - tank, Nemo ride and Crush
Head to Land Pavillion - ride Living with the Land and Soarin
Pick up FP for Test Track
Ride Mission Space
Use FP for Test Track
Head over to Imagination Pavillion - Figment and Captain EO
Depending on time, visit Innovations

Take the boat to Morocco - have lunch there
Visit France (see characters too)
Visit Morocco (see characters too)
Head around to Japan, America, Italy, Germany and China.

Pick up FP for Maelstrom
6:25pm ADR's Akurshus (whatever it's called!)
Ride Maelstrom

Head to Mexico
Find spot to watch Illuminations
9:00pm Illuminations

My questions:
Is my plan possible to complete?
Am I missing anything major?
Anything I should omit?
Where should we watch Illuminations?
Other rec's suggestions or tips?

I think you are being a little optomistic on your chances for FP times starting at 10am. Also you are looking at a very late lunch to get all of that in before it. I would guess that you should plan on needing a 2 hour time period between getting FP 1 and then 2- so if you arrive at 10am you are looking at picking up FP 1 at 10:15 and I would expect it to be for less than 2 hours later so you are looking at needing to wait until after 12:15 to pick up FP 2.
 
You may not have enough time to fit all of it in before lunch and you may want to consider Imagination/Captain EO right after Living with the Land/Soarin because you are already over there, instead of heading back that way a second time to save walking.
One of our favorite places for a perfect view/central location for illuminations is right in front of the gift shop just to the right as you are walking away from the main entrance to the World.

I agree with this. Your Soarin Fast Passes may not have matured yet by the time you finish Seas/Crush and Living with the Land. (So you may need to do the Imagination Pavilion before Soarin.)

Also, if you can't get the Test Track Fast Passes until about 12:15, the return time for them is likely to be in the late afternoon/early evening.
