EP/HS...1 day or 2?

There will be 8 of us (4 adults, 4 kids) with 5 full days of parks (we'll actually be there 6 full days, but 1 of these days will be MNSSHP, so we probably won't do much of anything that day). We're not getting hoppers either. So I am trying to figure out our days, and somewhat take into account easywdw. EP is only recommended on 1 day the week we'll be there. HS, on the other hand, is recommended 2x. So, which should we go back for a 2nd day...EP or HS?? Let me also say the 2nd day of either park would be a Friday, which I know F&W is going on during then too.
 
I'm not sure why it would tell you HS is a two day park, don't get me wrong, I love HS but 1 day is about all you need. Epcot on the other hand is a different beast (and a large one at that). The park is really large and has quite a good deal of content. Also because of it's size a lot of time is spent moving between attractions and world showcase pavilions

She didn't say that easyWDW said that HS is a 2 day park; she said it's recommended 2 days during the time she'll be there while EP is only recommended once. Personally, I think EP is a 2-day park, so I would do 2 days there. Also, although there may only be one day where EP is the most recommended park, I would bet there's another day where it's recommended, but not most recommended.

Yes there is another day that week it's recommended but it's the day we'd be going to MNSSHP. And because of that we won't be going to EP and The party on the same day. I guess we'll just chance it and go to EP on that Friday even though it's technically not recommended. If it will help, here is what the week says on easywdw:

I've almost always attended Epcot on not recommended days. We choose days based on what has EMH to maximize our hours which usually means we choose all the not recommended parks. :confused3 But that being said, other than Soarin and Test Track, not much else has unbearable lines. I'd say do 2 days in Epcot with a fp+ for those two rides (one each day) and the rest as you wish. Since you have one light crowd day and can theorectically accomplish a lot, the heavy one won't bother you much.
 
I very generally follow Easy WDW but if it doesn't fit into my plans, I don't sweat it too much. He lays out the recommendations on the calendar in order of best to worst. Example: HS EP | AK MK <--- you can interpret that to mean HS is the best choice with Epcot not bad, while AK is not an optimal choice and MK would be the worst. In order of best to worst. If it's green, it's good for us.

That being said, we are two adults and prefer the rides at DHS so we visit DHS twice, but we have park hoppers and don't spend a full day there on the second day. I do think to see everything at Epcot, you'd be better off spending two days there.
