In England and Australia they store eggs on the counter not in the fridge. In stores they are out on the counter ie: Harrods (can't get more upscale than that) My relatives in England who have a farm and sell eggs are horrified we put them in the fridge, says it spreads the eggs when they are cooked and makes them a mess (I've found what they say is true). However, that said I do store them in the fridge and live with it. Anyway that was off topic. I did have chat with a lady at our farmer's market who told me the eggs I was buying had just been laid the night before so don't boil them - fresh eggs don't peel. She said the ones in the store are horrible, they have due dates up to eight weeks after they have been laid so I'd be pretty hesitant of using after the due date.
