Last night we had roast beef w/ carrots and mashed potatoes.

Tue.- Using the rest of the roast beef for BBQ, baked FF, and probably some fruit.

Wed.- Quiche with diced ham, cheese, and broccoli. We'll have some orange glazed sweet biscuits with that.

Thurs.- Baked talipia (haven't decided how I'll season it), green beans, and cornbread.

Fri.- Pizza!
 
Here's my menu for the next 2 weeks-ish:
Tuesday (Today): Sausage Balls, Zucchini Patties & Corn on the Cob
Wednesday: Chicken & Potatoes in the Crockpot & Corn on the Cob (yeah we have a lot of corn on the cob to use up!)
Thursday: Leftovers
Friday: Ring Bologna & Fried Potatoes
Saturday - Leftovers
Sunday - Ratatouille & Stuffed Mushrooms (Disney Movie Night)
Monday - Leftovers
Tuesday - Spagehtti & Meatballs
Wednesday - Crockpot Chili
Thursday - Leftover Chili
Friday - Tator Tot Casserole
Saturday - Red Lobster (we're taking a weekend trip to the House on the Rock & staying overnight so treating ourselves to dinner out)
Sunday - Leftover Tator Tot Casserole
 
Sunday - we had left overs
Monday (yesterday) - we had chicken fried rice
Today - ?? Not sure what we are going to have.

Tomorrow I get paid and have prepared an online order to pick up at Shoprite tomorrow morning. These are the meals I have planned:

-stromboli(ham,salami,pepperoni,provolone,onion,peppers,mushrooms) and mozzarella sticks (never have tried making stromboli, but I do make pizza dough so I thought this would be fun to try

-grilled cheese, French fries, tomato soup

-teriyaki pork tenderloin, frozen vegetable, yellow saffron rice

-chicken and beef fajitas

-homemade chicken chow mein with jasmine rice

-pork chops with apples onions and sweet potatoes

-fettuccine alfredo, broccoli

-herb roasted chicken, twice baked potatoes, salad

Thank you. I think it went well. She could tell I was extremely nervous and helped me feel at ease right away. I should hear something soon about if I make it into the second round of interviews.

Last night we ended up just having some Trader Joe's frozen meals as I was too tired to cook. We will have the quesidillas tonight and move the asian meatballs to next week as everything for that is frozen.
 
I haven't been on here in a while, I miss it...
Guess what DH purchased last week?!? DISNEY ON ICE TICKETS!!! :dance3: We get to go in October, that will be a great "Disney fix!"
Our oldest DD gets braces put on today. She is so nervous, but glad they will be off before she goes to high school. This week's menu so far:

Saturday-
Almond Rice Chicken
Green Peas
Diced Cantaloupe

Sunday- (this was an early b-day dinner for oldest DD)
Homemade Lasagna
Caesar Salad
Garlic Toast
*Homemade Red Velvet Cake

Last Night-

Tonight-
Beef Vegetable Dinner
Cheesy Pull-Apart Biscuits
 
I really need to do more grocery shopping but tomorrows payday so we will get by on pantry staples and stuff in the fridge tonight. I can't remember everything we have ate since I was on here last but this is what I am sure about.
Sunday: was nacho casserole
Yesterday: brats/tuna cakes, mac and cheese and corn
Tonight: Chicken/Broccoli Alfredo and a baguette. Might make a cake tonight. I don't think I have done it one time that I have said I would though so we shall see if I manage it tonight.
 
Life has been crazy with soccer, band and baseball. Here is this weeks menu

Monday - Chicken enchilada soup, nachos
Tuesday - Turkey sloppy joes, salad
Wednesday - Turkey spaghetti, salad, garlic bread
Thursday - Shredded chicken tacos
Friday - leftovers or pizza
Saturday - Hotdogs and turkey chili

Chicken Puffs
Cheddar Broccoli

Chicken Puffs is a new recipe that sounds oh so yummy... shredded chicken, cream cheese and minced onion encased in a cressant roll puff. Can't wait to try it!
 
For those of you that do breakfast for dinner, here's a recipe that I tried and it came out really good.

Peaches 'n Cream French Toast

10-12 slices of coarse white bread, crusts removed
3 eggs
2 cups half and half
1 tsp vanilla
dash of ground nutmeg
dash of cinnamon

For the filling:

8 oz. of cream cheese, softened
1/4 cup granulated sugar
1 egg
1 tsp. vanilla
2-3 fresh peaches, peeled & sliced (one 16 oz can of drained peach halves, sliced, can be substituted)


Arrange half of the bread on the bottom of a buttered 11 x 7 glass baking dish.

In a separate bowl combine the 3 eggs, half & half, sugar, vanilla, nutmeg & cinnamon. Mix well.

In a separate bowl beat together all the filling ingredients, except the peaches, and set the filling aside. The filling will be creamy.

Pour half the egg mixture over the bread slices in the pan. Pour all of the filling ingredients over this and spread evenly to the sides of the dish. Arrange the peach slices over the filling. Arrange the remaining bread slices over the peaches. Pour the remaining egg mixture over the top layer of bread. Sprinkle with nutmeg and cinnamon. Cover with aluminum foil and refrigerate overnight (or at least 6-8 hours).

Preheat oven to 350 degrees. Bake covered for thirty minutes. Uncover and bake an additional 30-40 minutes longer or until puffy and golden. Serve with warm maple syrup if desired.

This was so good! I made it in the morning before I went to work and had DH take it out of the refrigerator when he got home from work to bring it to room temperature (about half an hour) before putting it in the oven. I used the fresh peaches because we had some that were starting to get a bit ripe and I wanted to use them up.
 
Did my much needed grocery shopping today. Here's our menu:
Today: Pork steaks/crab and popcorn shrimp, mashed potatoes, green beans
Tomorrow: Potato and Cabbage Stew with either a loaf of homemade bread or corn bread
Friday: Hot dogs/Hummus tomato sandwiches, fried potatoes and corn
Saturday: Vegetable Stir fry with peanuts and brown rice
Sunday: Hamburgers/Salmon burgers, sauteed onions and peppers, carrots
Monday: Cheese ravioli with pesto and sauteed zucchini
 
Tonight:
Shrimp Scampi over Pasta
Cheesy Pull-apart Biscuits (leftover from Tues. night)

Tomorrow night:
BBQ or Buffalo Chicken Wraps (choose your own wrap sauce)
Carrot Sticks
Chips

I haven't decided about tonight. It's going to be a busy night. We can have leftover quiche which will probably do the trick. I'll need to get some cinnamon buns that I can bake in the oven and we have some fruit.

I was thinking about making cornbread encrusted tilapia, but I'll hold off for another night that isn't going to be so chaotic.
 
I hope everyone one has been having a nice week! I am finally getting back on my feet after last week being so sick with the flu. :sick: ugh not fun while pregnant! But I am feeling good now I finally went to the grocery store today with out a list big mistake!

I'm glad you are feeling better! I didn't know you are pregnant! Hope all is smooth sailing after this battle with the flu.
 
Tonight we are taking leftover vegetable beef soup from last week (it got a little thick) and having it over noodles with salad.
 
We switched things up and had our veggie stir fry over brown rice today, but we added a loaf of corn bread to dinner. I guess we will have the potato stew on Saturday hopefully with a loaf of homemade bread.
