Tonight we are having
A whole chicken that I brined first then gave a butter and seasoning rub down with mashed potatoes and green beans. For dessert I made a apple pie.
 
Tonight - beef stew and buttermilk biscuits
Saturday - cajun chicken pasta with asparagus
Sunday - out for our 13th anniversary:love: Kids are going to g'mas
Monday - BBQ chicken burgers, potato skins and broccoli
Tuesday - make ahead muffin melts and fruit (grapes and watermelon)
Wednesday - crock pot sticky chicken with rice and cucumber salad
Thursday -teriyaki salmon with angel hair pasta and green beans
 

We did really good these last couple of weeks and stayed on track for eating at home. We ate out only one unplanned time and that was only because I made a pot of chili only to find out that the tomato juice I had frozen was spoiled. I'm proud of us for making it through!

Saturday: Crockpot pulled pork, oven fries, corn on the cob

Sunday: White chicken chili with cornbread

Monday: Sandwiches and left over chicken chili

Tuesday: Meatloaf muffins, baked potatoes, corn on the cob

Wednesday: Spaghetti, salad, garlic toast

Thursday: Honey chicken stir fry with rice

Friday: Super Nachos

Saturday: Our anniversary :lovestruc - I'd like to go out for dinner but I don't think that's going to happen so it will be a deep fried junk food night: wings, chicken chunks, onion rings

Sunday: Crockpot roast beef, noodles, glazed baby carrots

Monday: Stadium brats, pasta salad

Tuesday: Soft tacos, refried beans

Wednesday: Turkey meatballs over noodles with green beans

Thursday: Chili with fresh bread

I'm excited for the cooler weather because I can start putting soups back into rotation!
 
here's my plan for the upcoming week.

tonight-just cooking for me-breakfast for dinner.
monday-3 bean turkey chili, salad
tuesday-spinach lasagna rolls, salad
wednesday-chicken and musrooms in a garlic wine sauce, rice, veg from freezer.
thursday-leftovers
friday-leftovers
saturday-beef roast, poatoes, carrots
sunday-skinny chicken parm and either salad or steamed green beans.

No it is like a creamy corn bread. The recipe is

1 box corn muffin mix
1 stick melted butter
1 cup sour cream
1 can of creamed corn
1 can whole kernal corn
2 Large eggs

You mix it all together and put it in a 9x5 cooking dish and bake at 350 for 35-45 minutes until the outside edges are brown and the middle no longer jiggles.

It is not all that healthy but we only have it once every couple of months.
 
I have been working on eating at home the last couple of years and doing alot better. I discovered something really cool this past week. We have a new store called Fresh and Easy right near us. They have alot of prepared foods that are in the grocery case.

It turns out they have a section where food that needs to be sold by the current date goes. I bought 2 shepherds pie (feeds 2) for $1.25 each. I got a family sized lasagna for $5 and filled potato skins (8) for $3 (I bought 2). I just made sure everything I bought can freeze. They even have directions on the packaging from a frozen state. We're getting alot of variety and you can't beat the price.

Just wanted to share in case anyone else has a store near them.

Tonight we had sloppy joes and for dessert I made a raspberry cobble with fresh whipped cream
Tomorrow we will be having pork chops with a veggie potatoes and homemade apple sauce
Tuesday we will be having chicken breast with rice and veggies
Wednesday will be pizza and fries
Thursday will be spaghetti and sauce
Friday we shall see
 
I haven't posted in months and months, but now that school is back in session and things seem crazy again with soccer and girlscouts and band and chorus and everything else my girls have me running too I am going to start posting my dinner menu plans because it will keep me accountable to sticking with my plan and not grabbing those take out menus.

Here is the the plan for the week..........

Monday: Meatloaf with Mashed Potatoes(boiled,peeled,mashed on Sunday and then froze) and green beans

Tuesday: Grilled Cheese and Tomato Soup

Wednesday: Beef Stroganoff over Egg Noodles, corn, Rolls

Thursday: Marinara with Sausage in the Crockpot over Pasta, salad and garlic bread

Friday: Hot Dogs on the Grill with meat sauce and Macaroni Salad

Saturday:Soccer all day....probable Pizza Takeout

Tuesday- Homemade Spaghetti w/Italian sausage, garlic bread, salad

Wednesday- Beef Roast w/onion, potaotoes, carrots, and biscuits

Thursday- Leftovers

Friday- Leftovers for DH and me for lunch (roast)

What a fabulous thread. I've just been realizing I probably ought not be posting today, given I might be loopy from the anesthesia I had this morning, so if this comes out full of weird typos or anything, please ignore them. lol.

I'll just share two tips from our years with a teenage boy aka bottomless pit:

You can let kids have healthier (and far cheaper) deli meats for a lot less by cooking your own. I got my meat slicer machine at a thrift store and took it home and cleaned it up for a song, but even buying a new one might easily pay for itself in households that have multiple bottomless pits. :rotfl:

Also as long as your family is trained properly to eat nicely and be thankful rather than treating the cook like she owes everyone whatever tickles their fancy, a lot of kids can manage to not be too picky by the time they are old enough to turn into bottomless pits. Please notice I didn't say all of them... lol. there are a few out there that might almost be hopeless cases. But if your family is used to bean dishes and likes them, rice and beans can be so cheap to eat it is astonishing and can really provide great variety of good flavors. Cook up big batches of things like red beans -n- rice, chili, black bean soup, etc. And freeze parts in quart size bags.

When you freeze foods in quart size bags lay them on their sides on a cookie sheet in the freezer initially and they will freeze in the perfect shape... You will get so much good storage space in your freezer with this tip it will realy help.

And using dried beans and purchasing beans and rice in bulk through a food coop, we were able to feed our bottomless pit organic rice and beans as well use brown rice rather than white rice. verra nutritious and verra filling!
