I'm thinking tonight will be the hot dogs, fries, and watermelon. I'm really not feeling well so I want something super simple.

Tuesday
Roast turkey breast
Sweet potatoes
Butter beans

Wednesday
Beef stew (w/carrots, celery, potatoes, green peas)
Egg noodles
Biscuits

Thursday
Nachos (taco meat, refried beans, sour cream, pico, cheese)
Mexican rice
Green salads

Friday
Turkey casserole w/leftover turkey (not sure exactly what this will be yet)
Green beans
Biscuits
 
Thank you for the well wishes. :hug: things are getting a little better. Today is our planned vacation so we are off to story land and other places in north Conway. I will be back Wednesday. Have a great start to your week!

Have fun. We were just there 2 weeks ago. We had a wonderful time, hope you do too!
 
Sunday: Chicken Fajitas
Monday: Seared Tuna, oven potatoes, cucumber salad
Tuesday: Crockpot Chicken Parmesan over noodles
Wednesday: Spaghetti with Meat Sauce, Salad, Bread
Thursday: Crockpot Pot Roast with rice
Friday: Steak, fries, salad
Saturday: Clean the fridge day! Every man for himself!
 

Just opened the fridge and checked on my turkey breast-it's still frozen solid!

Tonight will be Wednesday's beef stew menu, turkey will be tomorrow-I hope!
 
So DH heard from the Dr.'s office last night...."everything came back clear, but you do have a kidney stone in your right kidney". WTH??? He went to the doctor for chest pains and breathing issues!!! :confused3 So the nurse said the doctor wants to do a bone scan next.....for chest pains and breathing issues? :headache: We have been left completely confused to say the least. And now he has kidney stone pains to look forward to sometime in the future. :eek:

Dinner tonight:

Easy Jambalaya
Garlic Toast
Diced Cantaloupe
 
Tuesday- Pasta Primavera with Grilled Pork Chops
Wednesday- Beef Enchiladas
Thursday- Grilled Brats with {something I haven't come up with yet}
Friday- Perogies and Marinara Sauce
Saturday- Leftovers or Out

**i need a recipe for pork chops in the crockpot!!
 
I don't have a week schld. for meals but I have some recipes I thought I should share with everyone.

1. Loaded Mash Potatoes (Recipe came from Good Housekeeping Magazine)
This can be put in a crock pot (family reunions) or baked in the oven (350 for 20 mins. if it hasn't been in the fridge previously) This can also be made the day before and put in the fridge.

Bacon--cut strips in half. cook them in pan.

3lbs of potatoes 1/2 c. sour cream
1 8oz cream cheese A stick of Butter
1/4 c. of milk
After boiling potatoes mash them and put the ingredients above in and mash. Add a tsp of salt, pepper, garlic powder, and onion powder.

Now either put the potatoes in a crockpot or 13x9 greased pan. Add Bacon and Cheese (how much you desire) as well as some green onions.
Made this for a reunion a couple days ago and it was GONE by the time I got to the food!


2. Nacho dip!!
Crockpot Put a regular size of Regular Velvetta cheese in crockpot. Add a whole jar of salsa. The add a 1/2 c. of Ranch dressing. You can add tons of stuff if you want. Mom sometimes puts sausage or jalepeno. Anyway this is always a hit and is my signature dish that everyone wants me to bring.
 
Tonight was Beef and Snow Peas (Pioneer Woman), Rice, and Egg Rolls.

Also, I need some advice from my friends here. I have been doing monthly menus. However, after a money scare this past week, I have found it really hard to change things around easily when I do this. So, I am thinking about doing my menus for two weeks at a time. My thought process is that it will allow me greater flexibility, I'll be able to use the grocery store ads better, and I can "stock" up for things to use over 2 weeks instead of trying to remember for 4 weeks at a time.

We will also have a "splurge" meal once in the two weeks (something like crab cakes or surf and turf).

What does everyone think? This past week has just made me realize that I need to get a bit more spending under control. I mean, I got my grocery bill down to $65 this past week!

We are also really trying to eat through what is in the freezer so that I have space for some premade meals for the semester. Sometimes, when you have a paper to write, you don't want to have to make a meal from scratch!
 
We ate out pizza for lunch on Saturday, was $19 for the 4 of us, and Mom got pizza tonight, was $12 for 2 pies, but she paid for it.

Plan for next week and a half:

sweet and sour chicken, rice
tacos, lettuce, tomatoes, cheese, sour cream
Italian drip beef sandwiches
pulled pork sandwiches
cranberry pork roast, mashed potatoes, squash and zucchini
appetizer night: deviled eggs, Tastefully Simple beer bread with Italian dip and artichoke spinach dip, need to figure out what else
napa valley chicken, egg noodles, broccoli
hot and sweet chicken drumsticks, corn on the cob

I'm going to try to get some stuff to make salads to go with the sandwich dinners. We do plan on going to the fair this weekend, so we will eat dinner there one night...

And we just bought 1/4 cow so I have a lot of meat to get through!! I coupon so I've accumulated a LOT of random items over the last two years.


Tonight: Eggplant parm, penne & garlic foccacia bread. The bread was leftover from a picnic we went to Sunday & the penne/jar of sauce/breaded eggplant & cheese were all taken from the freezer/pantry!

Tomorrow: Chicken Fajitas! Found a bag of manager-marked-down Tyson Southwestern Chicken Strips in the freezer (these are the random coupon'ed items I'm trying to thin down!) & dug a little more and found a bag of frozen 3pepper & onion mix. Bought a ton of fajita & taco kits for my DSs birthday party because they were cheaper than just buying the shells (:confused3) and have a few leftover + tons of the seasoning packets!

Thursday we have to take DS2 to a doctors appt out of town so not sure where we will end up!


Hoping this thread will motivate me not to give in and go out or order in.. Like I did Monday :(
 
Tonight I am thinking about ordering pizza. We have not had it for awhile and since the weather is so nice out I am going to be working in the garage, cleaning it out. So I know I will be too tired to cook.

Creamy Herb Pork Chops:

6 pork chops
1 can cr of chicken soup
1/2 cup sour cream
1 pkt. Lipton herb dry seasoning mix

In crock pot, mix soup, sour cream, and seasoning mix. Place chops in mixture. Cook on low 6-8 hours. Serve over hot rice or noodles.
 
Dinner tonight:

Crab Melts (new recipe, not sure about it...)
Chips
Carrot Sticks and Dip

DH goes for his bone scan tomorrow...here's hoping the Dr can figure out what the problem is!:confused:
 
So, last night we ended up going out :sad2:

We're renovating a house and had to do a lot of running around looking at tile and paint and stuff. It was late before we were done so we decided to nip into Acme Oyster House for seafood and beer.

Turkey is still icy so I put it in a brine to roast tomorrow. I've never done one in a crockpot, is it really good? I like the crispy skin.

Tonight is going to be clean out the fridge.

our week's manu is this

Monday- Cube steak and gravy, red potato, collard greens, deviled eggs
tuesday-spaghetti, salad, cheese bread
wednesday- salad with grilled chicken, hard rolls
thursday- "egg Mcmartin's" (my version of the eggmcmuffin) hashbrowns, fruit
friday- chicken and dumplin's, field peas and snaps, corn bread
saturday- girls night.. likely Olive Garden.
Sunday- Pork chops, yellow rice and black beans, sliced cucumbers
