Pork chops, skillet fried sliced potatoes with garlic, carrots

Hamburger cooked with taco seasoning then add to that a package of Knorrs spanish rice. Serve it topped with a sprinkle of cheese
This makes enough for reruns later this week

Baked potato topped with sliced cornbeef, garnished with thousand island dressing.

Hot dogs added to a can of baked bean. Spread in a 8X8 dish and top with cornbread. Bake at 350 for 30 minutes or until the cornbread is done.

Lasanga, salad and garlic bread.

Thats all I have planned so far this week.
 
Tonight is Chicken and Feta Cheese sausage in the crockpot with potatoes and cabbage. I still have Artisan dough left so I will make rolls to go with it. I really should bake something today...hmmm wonder what though?:confused3

I have bananas in freezer and chocolate chips , sooo I am thinking muffins , keep a few out and throw some in freezer for later. Tomorrow will be pistachio cupcakes dyed green for St. Patrick's day.
 
My mom had cataract surgery today so dinner is going to be something simple, lefotver soup and sandwiches. I was going to make a sausage and cheese strada last night but I fell asleep and had no time this morning.

Tuesday - BBQ chicken and baked beans
Wednesday - Leftovers
Thursday - Grocery shopping
Friday - ????

We fell off the wagon a few times recently and just finished off the last of my last set of recipes. Today is shopping day so hubby and I sat down and figured out a new menu. Thursday is a planned eat out day since we will be out of town for a medical appointment. The rest of the days should be (in no particular order:
Tacos
Spinach Linguine w/Vodka sauce Tilapia or Shrimp and a side of apple sauce
Grilled Cheese and Tomato Soup
Hot Dogs (homemade roasted red pepper w/garlic hummus and tomato sandwiches for the vegitarians) and Homemade Fries
Veggie Lasagna, salad and garlic bread
Some sort of fish cake (Salmon, Crab or Tuna), coleslaw and fruit
Bacon or Crab Eggs Bendict, hashbrowns and mandarin oranges

Tonight is Wednesday which is food shopping day~ I am working on my list and gathering all my coupons. We are going to Wendy's for dinner. For $10 hubby and I eat like King's...lol ;)
 
Things are kind of tough around here at the moment. My FIL is slowly failing and it's been hard on all of us, over a week of dealing with it is taking it's toll. Less important but adding to the stress-Spring is doing a number on me. I'm highly pollen allergic and asthmatic to boot. My energy today is pretty much zero.

That said, we've done okay. I cooked a big turkey on Sunday and hubby and I have been pretty much living off of that.

Sunday
Roast turkey
Sweet potatoes
Black-eyed peas (from a can-yuck! Don't think I'll try that again!)

Monday
Hubby had a turkey sandwich, I had a nasty asthma attack and just went to bed :sick:

Tuesday
l/o turkey in gravy
Mashed potatoes
Green peas

And for the rest of the week depending on how things go with FIL

Wednesday
Black beans charros (from the freezer)
Rice
Citrus salad (A friend gave us a ton of grapefruit)

Thursday
Turkey/andouille jambalaya
White beans (from the freezer)
Mustard greens (ditto)

Friday
Spaghetti (jar sauce, meatballs from freezer)
Garlic bread
Salad


Saturday/Sunday
Who knows, I can't think that far ahead right now.

Sounds like you're doing really well with your eating at home, all things considered. The turkey was a good idea, it's so great for leftovers and nice to have it in the fridge and not have to think too hard about it. Keep your chin up. I'm sorry things with your FIL are so bad.:hug:
 
I'm going to make an oven broiled coke marinated steak tonight. I'll let you all know how that goes, it's new for me :goodvibes

Tonight we are having crock pot potato and corn chowder with salad.
 
I havent posted for a long time:guilty: We do eat at home most nights, but we've had a few nights where i couldnt get my act together and we ate out. I NEED to plan meals, it makes a huge difference.

Last night was baked chicken strips, roasted potatoes, green beans.

The next several days, in no particuar order...
Spaghetti and meatballs
Chicken fried rice
Pork chops
Burritos
Chiken alfredo pasta
Ham and cheese crepes...and chocolate crepes
Burgers and baked beans
Chicken sandwhiches

Now to go buy the few ingredients I need!
 
I had $30 to go grocery shopping with today. I just had to buy a few things like bread, hamburger(geez it's expensive!) and some lettuce (also expensive at $1.99/head. And some other things.
So here is the mini plan to hold us over til I do the big grocery shopping on Friday when I get my mini check lol

mini cheeseburger salad on my indoor girl
hot dogs and cheesy fries
steaks and a potato (still haven't used)
tilapia (on Friday if we need it)
On Saturday BBQ corned beef with cabbage and glazed baby carrots
Sunday Reuben sandwiches with kraut
 
It's so tough to keep on track sometimes! I just looked at our checking account and realized that we've been eating out too much lately again...what threw me off was going to Anchorage for the weekend, we ate out several times with my sister, was helping her house hunt.

Monday night: went out to Red Robin to celebrate my daughter getting a new job! (her first one)

Tuesday: Spaghetti sauce (no jar, homemade w/basil from our Aero Garden) homemade turkey meatballs (if you want the recipe, they are really easy to make!) you basically boil the meatballs in the sauce, which you make kind of liquidy by adding 2 cups of water to a 28 oz can of crushed tomatoes. Garlic bread & a yummy green salad!

Wednesday: Haven't figured out exactly what I'm going to do with them, but I'm making something with chicken thighs, I got them for 50% off at Safeway

Thursday-weekend:
Broccoli Chicken Casserole (recipe I found in Taste of Home's "Mom's Best Made Easy" cookbook that I love!
Creamy Mac n' Cheese (another recipe from the cookbook)
BBQ Pork Sandwiches, Jicama & Apple slaw
Chili Verde made with leftover pork
