last night I made chicken stir fry with rice, broccoli, yellow squash, orange peppers, green onions and a special sauce, ginger plum dressing/marinade. It was delicious! I sauted chicken tenderloins (frozen) & just chopped them and added them in after I get the veggies sauteed in garlic & lemon grapeseed oil...delicious!! ;)
 
Hope everyone is having a great week! We are stuck at home with more snow:sad2:ugh! here is what i have for this week

Monday-home made mac and cheese
Tuesday- sloppy joes
Wednesday-Spaghetti and sauce
Thursday- chicken noodle soup
Friday - pizza and a movie on our brand new tv:hippie:
Saturday- leftovers
Sunday- Game day even though our beloved team is out party is on. making a chili, buffalo chicken meatballs, taco dip and home made chocolate chip ice cream sandwiches

We got tons of rain/sleet/snow last night and my college even closed for the day so I am glad to have a full freezer/pantry. Plus if we can not get out we can not eat out. Tonight my mom wants tomato soup and grilled cheese with apples and bacon.

Thursday - Pasta, carrot pennies (candied carrots)
Friday - garlic lemon chicken, green & yellow beans
Saturday - breakfast for dinner! Breakfast pretzels, turkey bacon, smoothies
Sunday - sweet potato quesadillas (YUM, haven't made this in ages!)

One of the easiest and cheapest meals we eat is black bean soup. It cooks in the crockpot--dried beans, peppers, onions, water and seasonings--turn on low and 6-8 hours later, you have soup. It's delicious and filling.

Thanks! The chicken is SO easy! It's a recipe for turkey thighs but I just tried it with chicken thighs last night and it's just as good.

Put the following into the bottom of your slow cooker:

1 can jellied cranberry sauce
1/2 cup chili sauce
1 tablespoon vinegar (I use cider vinegar)
1/4 teaspoon pumpkin pie spice

Place approximately 3 pounds of skinned chicken (or turkey) thighs on top.

Cook 4 1/2 to 5 hours on high, or 9 to 10 hours on low.

YUM!
 
Carrot Pennies (from "PRETEND SOUP" cookbook by Molllie Katzen (from memory)

(For 1 pound of carrots - about 5 good sized carrots)

Peel carrots, trim ends, and cut carrots into 1/4 inch slices.

Steam the carrots for 5 minutes (they should be partly cooked, NOT mushy!)

Place 1/4 cup of the steaming water in a frying pan. Add 1 teaspoon lemon juice, 2 tablespoons brown sugar or raw sugar, and a dash of salt. Saute the carrots in this mix until tender, stirring frequently.

The water should cook away as the carrots soften so they end up with a glaze.

Even my friend's son who HATES most vegetables asked for seconds (and thirds) when I made this for him a few years ago!
 
It is no Fast Food February in our household (with the exception of DS6's birthday). Our rules are we cannot eat anywhere that has a drive-thru. :rotfl2:

Here is our menu for the week.

Mon - Chicken quesadillas, salad, guacomole, chips and salsa
Tues - Shrimp gumbo with brown rice, french bread, chocolate mousse
Wed - Baked chicken tenders (tyson frozen), green beans, baked frozen french fries.
Thursday - Teriyaki chicken with stir fry veggies and brown rice.
Friday - Hot dogs with homemade chili. Chocolate cake.
Saturday -school auction/dinner for DH and me - frozen pizzas for the kids
Sunday - Crockpot Italian Beef sandwiches, chips and salsa, something else that is Superbowly!
 
Tonight we are doing something with ground beef. I am not quite sure what yet. We have everything we need for tacos so maybe that.
 
Last night I made THE BEST crockpot beef stroganoff. I made a lot of it. You could 1/2 the recipe but it's so good I don't know why you'd want to :) I kind of made it up so here goes...

in crockpot put 1/2 stick butter, 3 lbs beef chunks (mine was london broil cut up) 12-16 oz sliced white mushrooms, 1/4 cup water, 1 beef bullion cube, 2 tbsp dry onion flakes, 1 tsp ground nutmeg. I cooked on high for 7 hours, After cooking take 4 oz light cream cheese, cut it into chunks and put on top of the stroganoff, put cover back on crockpot and let the cream cheese melt. Meanwhile add 4 tbsp corn starch to 1/4 cup of cool water, mix well. Add corn stach mixture to the stroganoff and stir in (also stirring in the cream cheese. Cover and let cook another 20 minutes. Your sauce should have thickened. Server over egg noodles. (I think you could easily sub a packet of lipton onion soup mix for the beef bullion and onion flakes)

Tonight we plan on having French Toast with ham and fruit. We got a good amount of snow last night so I am glad we have plenty of food in the house.

Yum. Thanks for the idea. I have some frozen ham left from Christmas that I want to use. This will be dinner tomorrow since my plan for that is not going to work. (Long story.)

Well into our second week of eating at home. The boys and I went to lunch today with friends but that had been planned ahead. As long as it's not impulse/I don't feel like cooking/didn't plan anything etc type eating out than that's okay.

Speaking of impulse....we were going to a friend's yesterday and when I was talking to her on Sunday about it, I had said that I would bring pizza when we came. Like, stop and pick up a pizza on our way. Well, I hemmed and hawed about it....had pizza in the freezer, didn't want to seem "cheap....didn't want to go back on what I had said I would do. BUT I had said it without thinking about my new resolve. So, I called and told her rI would bring pizzas but they were gong to be frozen. Worked out great and I felt SO much better sticking with my commitment.

This week so far has been

Tuesday Leftovers
Weds Pork fried rice with left over pork loin from Sunday
Thursday Steak, potatoes and carrots.

Friday will be french toast
Sat I am not sure. Going to have to really work on that as we have something that starts at 5:30 that evening.

Saturday during the day I will plan my meals for next week. I have started planning what we are having for lunches too. My boys are 9 and 10 and we homeschool. If I don't have something planned...well, it's not good.;)
 
I haven't been to the store for two whole weeks plus we were snowed in for a few days. It gave me the chance to clean out my pantry and freezer. My bill was really high today but I had to restock on everything. I saved nearly $70 in manufacturer coupons and store coupons:thumbsup2

There was also a lot of buy one get one free like febreeze(which was also on clearance,) Oral-B spinbrushes BOGO, and deodorant BOGO. I also used my Bath and Body Works Groupon and got 9 things for $15! It came last night! That included 2 candles, 4 antibacterial soaps, and 4 lotions. So I am pretty well set. I won't need hand soap or deodorant until next year lol!

The Plan for the next few days
Homemade French Onion soup (I divide it up and use it in pot roasts etc...)
Grilled chicken Romaine salads
Superbowl Sunday: Crock pot terryaki pineapple chicken wings, crockpot meatball subs, buffalo chicken wing dip made with blue cheese, canned chicken and Franks Hotsauce, and Bloody Marys:cool1:
 
We've gotten way off track this week. Hubby had a stomach issue and wasn't up to eating much for a couple of days. I decided to skip cooking those nights and we had cereal and sandwiches instead. At least we didn't get take out!

Last night was leftovers. It's super nasty out here so we're having chili tonight:)

Sat - might go to inlaws :cool1: if not, I have chicken that I'll put tzatiki(sp) sauce on
Sun - Superbowl food:woohoo: love those potato skins!

I'm not sure what I'll be making next week since DH said I cook too much pasta and rice :mad: Isn't that the way most people stretch a meal?? He is supposed to email his menu choices:surfweb:
