Eat at home

We did great last week-7 days of home cooked meals then soup from Costco Sunday night and back on track on Monday.

We had:
-homemade pesto and pasta
-butternut squash soup mad with coconut milk (meh)
-pork tenderloin with plum chutney
-chicken paprikash with homemade Polish noodles and braised red cabbage (new recipes-this was fabulous!)
-homemade pizza with corn salad-we've been eating a ton of cone trying to use what's left in our garden

A couple nights of leftovers. I think we did pretty well-couple vegetarian meals, ate most our leftovers, ate a lot of veggies. It helps that it's fall and I'm feeling motivated to cook.

This week I'm planning tilapia with chili-lime butter and rice, Brots and smashed new potatoes and cabbage, and probably soup tonight (red lentil maybe-yummy, healthy and cheap).

I'm thinking about making a monthly menu and trying to shop once a month. I know I will have to make other trips to the store for bread and milk and ect. But I would really like to only go once a month for the bulk of our shopping. Does anyone else do this. I would love some tips.

Hope everyone is having a great day. No cooking for me tonight. :goodvibes My kids are going to be at a youth group hayride and hot dog roast. And DH is out of town. I will probally just have a bologna sandwich, otherwise know as tube steak at our house. :rotfl2:

From a budget standpoint I just can't get behind this - if you're only shopping once a month, you're only getting what's on sale that one week a month, as opposed to shopping every week of the 12-week sale cycles.

For "I hate going to the grocery store", it's a great idea, though. If time is what needs to be budgeted for you, it can be a lifesaver.

Absolutely. I have a hard time linking on this ipad, so I'll just direct you to the recipes.

Chicken paprikash and the nokedii (dumplings) are both on the food.com site. The dumplings, which are Hungarian, not the Polish I mistakenly listed earlier, are recipes #54820 and 54823. For thedumplings, I used the technique a reviewer suggested of rubbing the dough through the big holes in a flat, barbecue spatula we have, into the pot of boiling water. They were super easy and yummy. I used chicken thighs for the paprikash, taking the skin off them before browning but leaving the bone in. They are super cheap and stay moist.

For the cabbage, we used dad's red cabbage recipe from the food network site. Very good, healthy-no bacon like lots of other recipes. Cooks a long time-I'd start this first.
 

Tonight I am making crock pot potato and corn chowder. It is such a busy day between classes and my mom and I both being in and out all day it is an easy meal night.
 
Here is a question how well does soup freeze? Is there a special way to do it? I make a mean chicken noodle soup if I do say so and i have always wanted to freeze it to use later but my husband says its won;t taste good after. Thanks so much!

It tastes just as good but you need to not add your starch (noodles, rice, barley) to the soup until you eat it. I boil my pasta separate and add it to each bowl individually, then I do the same when we eat the defrosted/reheated version. Otherwise the pasta or rice blows up, gets really squishy and absorbs all the broth!:confused:

It's so great to have that in the freezer. I had planned to make a chicken black bean Mexican crokpot recipe yesterday but I forgot to get it started before I left for work. I had chicken soup frozen so when I cam home I put it in a pot on the stove, added a quart of store bought chicken broth to stretch it and threw in some leftover rice. I served it with some toasted bread I had baked the day before and voila, dinner in 15 minutes! I was kind of proud because I soooo didn't want to cook last night and I had to drive right by Kentucky Fried Chicken on the way home from work! The soup hit the spot too, everyone in my house has a cold!
 
Well thank you guys! I was feeling really sick yesterday and I asked my husband to get pizza's and he asked me to make my chicken noodle soup! It takes me three hours to make it. Men sometimes they just don;t understand. :rotfl2:
 
I was so happy I made the soup yesterday as it was a crazy day. My mom ended up in the ER with a piece of meat stuck in her throat. She is fine now but they discovered she has a hertial hernia in her esphagus that needs to be treated. So her throat has been sore and she is having the leftover soup for dinner. I am having a ham sandwich and soup for dinner.

Last night I cooked a chicken in the crock pot which we will use half the shredded chicken for pulled chicken sandwiches for dinner tomorrow night and the other half I am using for chicken tortilla soup.

tonight i am making mexican shepards pie! got it off of the pound o ground beef recipies thread. i will letu know how it turns out! tomorrow is my grandmother's birthday so we will be eating there. i am making buffalo chicken dip and her cake.
 
Decided to post next weeks menu since I just finished a big bowl of Chicken and Dumplings. It was good, but I think the base actually would have been better as Chicken Noodle Soup or Chicken and Rice Soup.

So for next week we have...

Monday: Sausage and Peppers and Onion Sandwiches with Deli Sides
Tuesday: BLTs and Deli Sides
Wednesday: Oven BBQ Ribs and Corn Fritter Casserole
Friday: Tuna Noodle Casserole
Sunday: French Toast with strawberries and powdered sugar and sausages

BTW, thanks to another thread I am using a planner calls Say Mmm. I am really liking it as it is allowing me to see how many meals I really need. Seems I had been missing a few if I had stuck to my list on my computer. So now, I am done with meal planning through Thanksgiving!
 
Anyone have an easy recipe for spaghetti pie? I would love to try it!

We mix leftover spaghetti with eggs, olives, grated Parmesan, and herbs. If I remember correctly, we put it into a hot oiled oven proof pan-cook it on the stove top til the egg is cooked, grate some more cheese on top and run it under the broiler. Serve with leftover spaghetti sauce. Recipe came from Italian friend of mine.

Tonight I had some friends over for dinner. I supplied the Chicken tortilla soup and everyone else brought sides and desserts. A fun way to spend a saturday night.

Tomorrow my Aunt and Grandma are coming over for dinner and we are having apple sage pork chops with mashed sweet potatoes, sliced tomatoes and fruit.
 
Well, we stuck to eating at home last week even though we deviated from the menu. The only night of eating out was last night DH and both DDs were at the school Fall Festival all night and they did eat there. Oh well, it was for the school. I ate at home though.

Here it is for this coming week:
Tonight: Hamburgers, waffle fries and baked beans;
Sunday: Grilled barbeque chicken, potato and onions packet and corn;
Monday: Spaghetti with meatsauce, broccoli and garlic bread;
Tuesday: Salsibury steak, mashed potatoes and green beans;
Wednesday: Crockpot beef stew and cornbread;
Thursday: Crockpot chicken with celery, onions and carrots, and m. potatoes;
Friday: Beef Enchillada casserole; mexican rice and refried beans

Next week:
Saturday: Chili and hotdogs;
Sunday: (lunch)homemade chicken noodle soup (dinner)chicken/broccoli alfredo;
Monday: Skillet cheeseburger helper and corn;
Tueday: Crockpot barbeque, corn bread and broccoli with cheese sauce;
Wednesday: Baked ravioli, ceasar salad and garlic bread;
Thursday: Grilled italian chicken, long and wild grain rice and peas;
Friday: Pizza

Lots of soccer, volleyball and trainings going on the next two weeks, hope we can stick to it. If so all I'll need the next week is milk, lettuce, tomatoes, fruit, potatoes, onions and pizza and some snack stuff. I hope to keep it to under $60.

Well, first week we almost stuck to it, but got weak at the end. We followed along until Thursday and we had cheeseburger helper instead of chicken and on Friday we got take out pizza and wings to the tune of $29. We also ate subway yesterday for lunch because we had 1 volleyball game and 2 soccer games and a Halloween party, but did manage to eat dinner at home, the chili and hot dogs.

I think today instead of what's listed we will have left overs or sandwiches for lunch, then go to soccer. For dinner we will have grilled chicken and steamfresh alfredo penne and veggies. It has been a long, but fun weekend.

Dh told me just to order pizza, which I actually felt bad about doing since we had gone a whole 22 days without take out or fast food! Back on track, we'll see how far I can get this time..

Our weekend kind of went off the rails. Friday night my DH was working and DD15 was at her dad's and had a football game (she's in marching band). I attended the game until after her halftime show and then left. I made myself dinner at home (sandwich and some fruit). Saturday DH and I had breakfast at home and then dinner at a tiki-themed party a friend was having (and I cooked pineapple bread from scratch to share).

However, at 1am Saturday DD called me to pick her up from her dad's - she was having an asthma attack and felt like she needed to go to the ER, and her stepmom had come home early from a party to take care of her (DD15 was babysitting for her siblings - I'll leave my rant about my ex going to parties leaving her to babysit on the five days a month he actually sees her for another day) but after two breathing treatments she still couldn't catch her breath, and her dad and stepmom were saying she didn't need to go to the ER.

After calling and chewing out her dad I picked her up and took her to the ER< where they said she sounded AWFUL. We were at the ER until 4am.

Sunday she requested Subway for lunch, and who was I to argue. My MIL offered to bring pizza for dinner and I wasn't about to argue there, either.

So at least we only paid for one meal out, I guess. But man, dealing with sick kids is never fun.
