So, we didn't have leftover soup and grilled cheese tonight. I didn't have the energy to make grilled cheese. How sad it that?

We just ate leftover spaghetti casserole.

As long as it didn't end in the line at the drivethru you did great! Good thing there was some leftover spaghetti in the fridge!:thumbsup2
 
I put a pot roast in the crockpot this AM, but just the roast with some onion soup mix and water, no veggies. I was going to roast some root vegtables tonight but I have a couple bunches of turnip greens in the fridge from my CSA share so i think I might cook those tonight and serve the roast with those and some cornbread that I have in the freezer. I'm thinking the root veggies will keep a while but the turnip greens are going to go bad. Anyone ever cook turnip greens before? I'm off to google it.:confused3

Is it sad that I'm quoting myself? Well I cooked turnip greens last night. After googling it heres what I decided on. I chopped the leaves into 1 inch pieces and them boiled them in water for 15 minutes. In a fry pan I browned 2 chopped up slices of bacon and half a diced onion (I ended up also needing some vegetable oil) then I drained the greens and added them to the fry pan I put in a little salt and some of the water that the greens boiled in. I gotta tell you, they were really good. I was so proud of myself for cooking them instead of letting them go bad. (I also served a crockpot beef roast, beef gravy, cornbread, tomato cucumber salad and homemade white bread)

Tonight we're having ravioli with sauce, some leftover beef roast in with the sauce I think, and a salad using up the head of lettuce I got from my CSA share. Oh and last night I also used up a zucchini that I got in my share when I made zucchini bread. It came out soooo good. I'm going to post the recipe/picture on my bread blog tonight.
 

Well it was double double coupon day and I saved $50.00 in coupons today:cool1: There was also a huge buy one get one sale and I stocked up.
This week I am making some clasics. I got my new issue of "Food and Wine" and am going to be making a few recipes out of there. We'v e got my daughters costume birthday party this week so I will have the added expense of pizza, cake, ice cream, and goodies. I also bought a $50.00 gift certificate for my local pumpkin farm for $25.00. I plan on bringing home a buschell of apples to make apple goodies. Here's my menu for the week.

chicken fricassee with mushrooms
hot dogs a chips tonight (parent teacher conferences)
whole wheat pasta with meat sauce
steak and taters
beef potpie with homemade cheddar biscuits topping
chili
homemade chili cheese fries
chicken and dumplings
bacon cheddar and tomato egg bake (breakfast for dinner)
diabetic mini cheesecakes for my hubby
bananas Foster pancakes for breakfast Sunday
breaded tilapia

plus I stil have a pork tenderloin and beef roast I need to make

Considering I still have another 1.5-2 servings of the stuff in the fridge...

It can be hard to cook for 2. If it is something like chicken or fish, I have no problems making just 2-3 servings (sometimes mom likes to take leftovers for work, so I make one extra serving). However, I always struggle with casseroles, soups and stews when it comes to the right amount of servings.

I am going out next week though. Mom and I take a twice yearly trip to the Tanger Outlets in Sevierville. We are doing our big fall trip next week and we always go to the Chop House for a big lunch. It's tradition!

I made a really good chicken tortilla crockpot soup the other day.

1 cup water
chicken parts (I used two breasts but use what you have)
1 chipotle pepper in adobo diced (2 if you want it spicier)
1 onion halved
2 cups chicken stock
1 TBSP chicken soup base
12 corn tortillas cut into strips
cliantro, avocado, sour cream for topping
1 can diced tomatoes, drained
1TBSP minced garlic (I used the jarred)

Add chicken and water in crockpot along with chicken, drained stewed tomatoes, onion, garlic, and pepper. Heat in crockpot 4 hours on high, 8 hours or more on low. Take out chicken and seperate with fork. Add back to soup. Add soup base mix. Cut tortilla chips into strips. Spray a baking sheet with Pam and add tortillas, Mix up tortillas and spray with Pam. Add seasoning and bake at 350 for 10 minutes.
Top soup with cilantro, avocado, sour cream. Add baked tortilla chips to top.
 
So tonight was leftover night: steak, veggies, hot dogs, and stuffed bell peppers.

Soooo wanted Chick-fil-A! ;)
 
Tonight we had leftover French dip that I thawed out this morning. We had them with sweet potato fries and applesauce.

This week has been so crazy that I can not wait for it to be over. Tomorrow is my Mom's birthday and we are spending it by going to a movie then coming home and having a nice homemade dinner of shrimp/chicken scampi.

Tonight we're having people over and I'm making homemade pizza. The dough is rising now.

Not sure about Saturday night, I think we may go out, gasp! :eek:

Sunday night is my Dad's Birthday and I'm having the family over, I think I'll make lasagna this night and of course, fresh baked bread :love:
 
I made Baked Ziti last night. It was so good and so easy, too. We are having the leftovers tonight as well.
 
Good news!!! We are out of the hotel and are in our house!!! :lovestruc
The bad news is...it is a wreck! Hundreds of boxes! I have started unpacking the kitchen, but still no cutlery! That being said, we've done fairly well, considering. I know that soon I will be back to full time cooking!

Moved in Mon and Tues... Wed I bought a rotisserie chicken and a frozen meatloaf, and we had fruit and veggies. Thursday we had frozen chicken strips from DS15 band fundraiser, and salad and fruit. Tonight is 2 different dinner times, so going easy...chili dogs, made with canned <gasp> chili!

I did find a skillet and a big dutch oven and a knife. Tomorrow I'm making The Pioneer Woman's cauliflower soup..because I'm itching to cook, despite the MESS!!!

This thread really inspired me to try and not eat out every night this week!

Tonight I am making a Pork Roast that was marinated for awhile in an asian style marinade with soy, garlic, ginger, vinegar, ect.

Sunday: Frozen PF Chang's Orange Chicken with egg rolls

Monday: Out to lunch with mom as we will be out of town for the day. Nothing planned for dinner.

Wednesday: Shrimp Creole (Better Homes and Gardens) with Hush Puppies

Friday: Sausage and Pepper Sandwiches (Better Homes and Gardens) with Deli Salads

Saturday: Cubed Steaks with Gravy and Roasted Potatoes

Monday: Fajitas with Mexican Rice

I really need to get November done, so I stay ahead of the game.

The past couple of days have been really busy here. My mom's b-day was thursday so I made her dinner. We had shrimp/chicken scampi. Yesterday we went with my aunt and grandma to Columbus for the day to go to the zoo and do a little shopping so we had dinner out before heading home.

Tonight we have some family coming over to watch the OSU game and celebrate a few of the birthdays of the month. We are having hot dogs and brats with various side dishes.
 
I couldnt sleep last night so I made up my menu for the next two weeks.

In some order the next week will be...

Brats grilled
beef fajitas
steak
spaghetti and meat sauce
something with chicken
shrimp and parmesan pasta
pizza, either take out or make at home

the week after...

hamburgers
breakfast for dinner
hotdogs with Boston Baked Beans
beef bbq sandwiches with clam chowder
lasagna and boston cream pie

Well, we stuck to eating at home last week even though we deviated from the menu. The only night of eating out was last night DH and both DDs were at the school Fall Festival all night and they did eat there. Oh well, it was for the school. I ate at home though.

Here it is for this coming week:
Tonight: Hamburgers, waffle fries and baked beans;
Sunday: Grilled barbeque chicken, potato and onions packet and corn;
Monday: Spaghetti with meatsauce, broccoli and garlic bread;
Tuesday: Salsibury steak, mashed potatoes and green beans;
Wednesday: Crockpot beef stew and cornbread;
Thursday: Crockpot chicken with celery, onions and carrots, and m. potatoes;
Friday: Beef Enchillada casserole; mexican rice and refried beans

Next week:
Saturday: Chili and hotdogs;
Sunday: (lunch)homemade chicken noodle soup (dinner)chicken/broccoli alfredo;
Monday: Skillet cheeseburger helper and corn;
Tueday: Crockpot barbeque, corn bread and broccoli with cheese sauce;
Wednesday: Baked ravioli, ceasar salad and garlic bread;
Thursday: Grilled italian chicken, long and wild grain rice and peas;
Friday: Pizza

Lots of soccer, volleyball and trainings going on the next two weeks, hope we can stick to it. If so all I'll need the next week is milk, lettuce, tomatoes, fruit, potatoes, onions and pizza and some snack stuff. I hope to keep it to under $60.
