I'm back from a week out of town and so ready to get back into routine! So here is our menu for this week:

Monday - tonight we had hamburgers that dh grilled along with chips and onion dip
Tuesday - Potato and Ham Casserole and a green jacket salad
Wednesday - leftover burgers and fries
Thursday - Fajitas and Spanish Rice
Friday - Orange Glazed Chicken breasts, broiled asparagus and wild rice
Saturday - Tacos
Sunday - Braised Short Ribs over rice and butter beans
 
So we are back from our weekend trip and I am bound and determined to keep on track food wise this month. Classes start Monday and I have 4 nigh classes so dinners need to be easy to do. I looked through the food ads and took inventory of freezer and pantry and have our menu planned out.

Last Night we had a leftover mishmosh from the weekend
Tonight- Chicken Cordon Bleu with glazed carrots and pasta salad
Wednesday- Pasta Bake with meatballs and salad
Thursday- Steak Fajitas with Spanish Rice
Friday- Croc Pot Potato and Double Corn Chowder
Saturday- Grilled Chicken Bratwurst with German Potato salad
Sunday- Grilled Pork Chops with harvest apples and buttered noodles
Monday- Pulled chicken sandwiches with sweet potato fries
Tuesday- chicken paprikash with speatzels
Wednesday- Vegetable beef soup with cheddar garlic biscuits
 
Monday - Steak, mashed potatoes, asparagus
Tuesday - Macaroni and chicken casserole, sliced tomatoes, corn
Wednesday - Tuna fish sandwiches and tossed salad
Thursday - Sweet and Sour Crockpot chicken, brown rice, and broccoli
Friday - Spaghetti and meat sauce, garlic bread, and Italian flat beans.
Saturday - having a yard sale - will probably order pizza.
Sunday - ? Not sure yet. Will have to check adds and do some shopping.

Tue - today - tuna pasta bake with veg in

Thu - casseroled chicken with mash potato and broccoli
Fri - baked fish with fries and sweetcorn
Sat - homemade pizza and salad
Sun - roast beef , yorkshire pudding (popovers) roast potatoes, carrots, broccoli and brussels sprouts!
Mon - homemade meatballs and a jar of sauce with pasta and garlic bread.

I definitely need to get a Crock pot with a timer because most of the recipes that I have are for a much shorter cook time than I'm gone. Until then, if anyone has a favorite quick dinner recipe, please post! :goodvibes

Yup...It's called going to moms! My dinner plans got all messed up...So, I called my mother. Going there for dinner tonight! :thumbsup2
 
Well its going to be crazy this week but am going to do my best to resist the desire to do take out or carside to go!!! This weeks dinner menu is only for a few days so far because I haven't done any shopping trying to use up some freezer and garden things and avoid the grocery store!

Tuesday- Steak Hoagies roasted fingerling potatoes Tossed Salad
Wednesday- Manwich and tossed Salad
Thursday-Eggplant Parm Tossed Salad
Friday-Chunk Roast, mashed potatoes, acorn squash, rolls

Here are a few fast dinners that don't require a crockpot:

Refried Bean Quesadillas - a 5 minute meal

BBQ Ham Steaks on the grill - about 20 minutes start to finish, add a veggie and pasta with parmesan or rolls or couscous.

Pesto Tomato Pizza - 5-10 minutes

Black Bean and Rice Freezer Burritos - plan ahead, but then you can have dinner ready in less than 2 minutes

Scrambled Eggs and Peppers
 
I don't know how I've missed this thread before. Our plan for dinners this week include:

Tonight: taco night (I buy the Ortega kits when they go on sale and then buy fixings later)
Tomorrow: Swedish Dill pot roast in the crockpot
Thursday: Grilled chicken sausages, grilled veggies
Friday: Spagetti
 
Hi, I'm pretty new. I like this thread so I'm jumping in!

Monday--BBQ chicken w/ corn on the cob & fruit salad.
Tuesday--Baked Ziti & steamed broccoli
Wednesday--Meatloaf w/ roasted potatoes & carrots
Thursday--Saltimbocca chicken & rice & veggie (probably artichokes)
Friday--Make-your-own Taco bar
Saturday--Ravioli Lasagna w/ steamed veggie

Ok I'm trying hard

Tonite Chicken Spaghetti- actually turkey spaghetti since I had that leftover
Tomorrow- hot dogs/hamburgers and fries
Thursday turkey balls and ziti
Friday- it's my birthday GOING OUT!!:banana: For lunch with friends and dinner with DH
Saturday going to a 40th birthday party so kids will get some homemade pizza. And we'll get fancy apps.

How do you do your French Toast Casserole? That sounds so good right about now!
 
We were gone for the weekend... so Sun and Monday were eating out and eating with family...

Tonight...tacos, mexican rice, refried beans
Wed- spaghetti, bread, frozen corn
Thurs- steak, baked potatoes, frozen veg, salad
Friday-Sat. DH and big boys camping- youngest DS and I will probably eat out one meal, I have chicken noodle soup I made today, will freeze that,
Sunday, Italian sausage/bean recipe Í've been wanting to try
 
What are yorkshire pudding popovers? How do you make them?

Hiya - don't know how it will translate (we speak the same language over here SUPOSEDLY>>>)

Yorkshire Pudding recipe

mix 125g plain flour and a pinch of salt in a bowl, add 1 egg (medium) and 150ml milk - beat till smooth, beat in another 150ml milk.

Put 1 tsp lard/dripping/oil that can get REALLY hot into each of about 9 muffin tins. heat in the top of a HOT (gas 7, 220C, 425F) oven for 5 min, take out tin and pour batter in - bake for 20mins - should rise over the top of the tins and look a bit like an empty tea cup shape ..

Serve with loads of roast beef and meat juice gravy. YUMMM

You could also add sausages to the batter to make what we call toad-in-the-hole (no toads harmed in making this recipe!!!) makes a nice quick meal.

p.s. this is my recipe - EVERYONE in the UK has their own, and some get very particular about how it should be made..... a bit like folks over there and their stuffing recipes.

Thank you for the recipe! I have never had Yorkshire pudding before, I will try this as soon as it gets cool enough to make a roast beef.


Today I am taking advantage of the Garden Bounty..........love this time of year. Making teriyaki with a green/red bell pepper, squash, zucchini, onion, garlic and a sm strip steak and chicken breast found in the freezer.
 
Really need to get back in the swing of things ever since we got back from vacation.

Tonight is baked chicken with rice

Chicken enchiladas for us. Since it is just my mom and I we make two smaller trays of the echiladas versus one large tray and freeze the other.

Soups are another that we freezer into individual portions perfect for lunches.

I like to make Taco Soup and freeze some for later. Also, Stuffed Shells and Italian Sausageand Spinach Stuffed Shells, Chicken and Broccoli Stuffed Shells with Alfredo.

I think I'm on a roll with jumbo pasta shells! There are lots more recipes that freeze well in my Frozen Food category.

That Yorkshire Pudding recipe posted above sounds really good!
 
I have been doing good with this, but I am about to empty out the chest freezer. Which is good I guess, then I will restock it. This week has been

Monday: Homemade Beef stew and cornbread;
Tuesday: Crockpot Peanutbutter Pork w/red peppers and served over rice;
Wednesday: Turkey Keilbasa with Black Beans served over rice;
Thursday: Crockpot Barbeque beef shortribs, corn and cornbread
Friday: DH and youngest DD will eat whatever, probably homemade pepperoni pizza and oldest DD and I are attending a soccer "pasta party." I have to bring a baked ravioli and Fazzoli Breadsticks;
Saturday: Eat Out since it is the weekend and we have a volleyball game and 2 soccer games and must work the concession stand; and
Sunday: Turkey from the freezer, with mashed potatoes, gravy, green beans and stuffing. Lots of leftovers for next week!!!!
