Eat at home

I am in! We're huge lovers of eating out and I don't have a lot of practice cooking so it's a real challenge for us to eat at home but we need to (say our waistlines and our wallets). You'll see my crockpot gets a workout - we homeschool our 7-year-old and run a business out of our home so fix it and forget it is easy for me. Here's what this week looked/s like for us:

Sunday: Sour Cream Chili Bake, corn
Monday: Cheesy Crockpot Chicken, rice, salad
Tuesday: Meatloaf, fried potatoes & onions, green beans
Wednesday: Butter Beef (crockpot), noodles, mixed veggies
Thursday: leftovers
Friday: turkey breast (crockpot), stuffing, cranberry relish, veggies
Saturday: leftovers

DH comes home for lunch and we usually have a salad. DD eats dinner leftovers or a sandwich and fruit or a quesadilla or "bits" - veggies, fruit, cheese, some kind of carb, etc. in a divided plate.

So I tried butter beef in my crockpot last night and I really liked it. I did 1 stick of butter 3lbs of stew beef and a packet of onion soup mix. Mine needs to cook all day since I work (maybe an investment in a timer to shut it off would be good) anyhow I really liked it but next time I will decrease the butter to half a stick and add sliced fresh mushrooms and 1/2 cup of water. Love that I have a new easy recipe!:cool1:

Well back for another week of eating at home....Did really well last week and kept to my menu the whole week...this week DH is off so this will be tricky sticking to my plan but I will do my best!! this is all I have so far, trying not to hit the grocery store this week and use up my freezer and pantry stuff a little

Monday we had BBQ Spare ribs with maple dry rub, homemade mac n cheese, coleslaw

Tuesday Chicken Quarters on the charcoal grill, leftover mac n cheese, corn on the cob, corn bread

Wednesday Goulash w/sausage and rolls

We haven't eaten out in two weeks! The weekend was tough but planning ahead helped a lot. Here is the plan for this week...

Sunday... grilled brats, pasta salad, veggies & ranch
Monday... beef stroganoff, salad
Tuesday... chicken tacos, rice, salad
Wednesday... DH has a work thing so the kids and I will grab Chick-Fil-A :rolleyes1
Thursday... Parent orientation night at school, not sure yet on the menu for this night. Something fast and easy.
Friday... homemade pizza, salad, veggies & ranch
Saturday... date night for our 11th anniversary

HELP! Chicken thighs were what I was going to grill tonite- but now there is soccer practice- anyone have a good crock pot thigh recipe- or baked thigh recipe? I don't want to cave to take out.

I'm going to have to try this tomorrow. I have a doctor appointment after work so dinner was going to be drive-thru, but I have a roast and butter at home... pretty sure we have mushrooms and onion soup mix too. yay.

We only ate out once a week this past month. Unfortunately, two of those times were not inexpensive. But it wasn't by choice.....friends met us there and picked the place.....and there were reasons they picked those locations (near the airport, youth group meeting).....

Now, those expensive places weren't really all that expensive, but for 5 people it adds up fast.

This month (Sept.) I plan to have a very low eating out budget.....under $100.

Tonight's dinner is in the crockpot....lasagna! :thumbsup2

Sorry, I don't have any specific recipes, but quick, easy things I have done in the past. . .thrown them in the crockpot with BB-Q sauce, teriyaki sauce, or spaghetti sauce. Serve with some rice or noodles and a veggie and you're set.

I also wanted to say that this thread is helping me so much. We didn't eat out all last week! I haven't always followed my menus, like last night it was just me and DS, so I just made hamburger helper. BUT we have eaten at home for all our meals. :cool1:

I had a great weekend and ate at home for every meal!!! I went to a grocery I do not usually go to unless I am in that part of town and got $40 worth of meat on sale/clearance for $24.35. I have split everything into portions and put it directly in the freezer.

We leave friday for a weekend away and I played around with our menu to accomidate things we have left.

Tonight: Chicken Parmesean burgers with sweet potato fries
Wednesday: Pasta Bake with salad
Thursday: leftovers

ok solved my chicken thigh issue- I dredged them in lemon juice- then dipped them in seasoned bread crumbs mixed with cheese- cut up onions- put all that into a casserole dish- drizzle it all with olive oil- bake for an hour or until cooked at 400(I think it's 400 I have to check)

And have rice in the rice cooker (thank goodness for that rice cooker!!)

Here's mine for the week:

Monday - pasta bake, salad, fruit (using up leftovers... grocery shopping night)
Tuesday - Chicken Bacon Alfredo Bake [new recipe], spinach salad
Wednesday - Hot dogs (w/sauerkraut for DH), broccoli slaw, beans
Thursday - Ham steaks, Skillet Corn [new recipe]
Friday - Sour Cream Chili Bake, fruit salad
Saturday - Pizza Roll Up Burritos [new recipe]
Sunday - Bubba Burgers, hashbrowns, veggies

Next week... WDW!!!!

Monday: Grilled pork chops, rice, pinneaple 3 berry crisp
Tuesday: Japanese night. Used rice to make fried rice, terryaki chicken (thin chicken breasts cut up and sauteed in soy sauce), sauteed mushrooms and zucchini
Wed: Thinking tonight will be BLTs
Thursday: Salmon (cook about 12 minutes in oven with EVOO and garlic herb seasoning), then finish off frying in pan. Topped with corn and tomato mixture (white corn), salad??, may make a Key Lime cake or Hershey Bar cake.
Friday: High school football game night (whatever we pick up)
Sat: ???? Not sure yet, may go to sister's for get together
Sunday: Grilled steaks with sauteed mushrooms and onions, hashbrown casserole, yeast roles with honey butter, green beans or salad maybe

Great thread. I've not gone through all of these yet, but getting some ideas!! I know next week we will have short ribs in the crock pot (my son's fav), mashed potatoes and creamed corn with bacon. Lasagne night. Goat cheese stuffed oven roasted chicken breasts (a couple without since my son does not like the cheese in his), oven roasted onions and potatoes. And maybe a chocolate eclair cake (reduced fat)
