Posted my menu for the month of May on my blog. Check it out in my signature.
 
Last week was crazy, this week is more of the same, as well as next week. Field trips, doctor appointments, registrations for kids activities, signed up for baked goods, the kids are ramping up for summer, you name it.

So dinner.

Tonight we had ravioli and garlic bread. The ravioli was good. I offered to have tomato and Alfredo sauce but the choice was tomato all the way.

Wed.- Hopefully tacos. The kids have been requesting tacos for a few days. I have the makings now.

Thurs.- Maybe a ham steak.

Fri. - Pizza
 
Another crazy week here too! Still trying to eat more at home, though our schedules plead for take out! Or my tired self pleads is more like it! :rotfl:

Monday- Grilled chicken ceasar salads, fresh bread
Tuesday- Tuna sandwiches, carrots, cucumbers, pears, chips
Wednesday-Ravioli, salad, garlic bread
Thursday-BLT's, fresh fruits and veggies, chips
Friday-Fish, pasta, broccoli
Saturday- LEAVING FOR DISNEY!!!! :dance3:
 
Sunday Ham , mac and cheese , devil eggs, brownies

Monday Ham , mac and cheese and potato salad

Tuesday Ham sandwiches and potato salad, devil eggs

Weds. Baked Chicken and green beans

Thursday Leftovers

Friday and Saturday dine out

Sunday Ham bone soup

Monday leftovers

Everyone whining that eat ham again for dinner tomorrow.

Rest of next week is simple and easy food to fix.
 

Turkey balls were tonite
Wed. will be pork chops since they were on sale
Thursday- chicken and sausage
Friday- BBQ chicken
 
We went up to visit my Mom on Saturday and came home yesterday...before that we had our Passover seder, so lots of different food needs lately! We had some YUMMY meals while away but I'm terrified to look at the totals!

So, back on the bandwagon...

Tonight: turkey burgers, mac and cheese, peas/corn
Wednesday: Quesadillas
Thursday: Turkey meatball subs
Friday: Potstickers for DH and me, "brown fish" (fish sticks) for DD & DS
Saturday: "Breakfast for dinner!" Corn pancakes, turkey bacon, snoothies

That gets us to the end of the month, YEAH!

We decided on sweet potatoes rather than the carrots. I had a few that needed to be used and sweet potatoes go so well with ham :)

Wedensday nights are always busy in our home, so the menu is always quick and easy:

I had originally planned on spaghetti with meatballs but I am not in the mood for pasta. Instead we are going to do open faced meatball subs and some kind of veggie. Not sure which one yet.
 
Oh, I would love to get in on this thread, we do take alot of trips, so when we are home we are a very budgeted homeschooling family of 4, here's our menu for the week:
Monday, we had cheeseburgers cooked on grill with chips, fresh strawberries for dessert
Tues- Quesadilla's made with taco seasoned turkey meat and cheese, strawberries again for dessert
Wed- tonight we are having fish sandwiches made from frozen fish fillets and hamburger buns, mac and cheese and green beans, cookies for dessert
Thurs-spaghetti made from ground turkey and jar sauce, garlic french bread
Fri-my youngest birthday, we told him he could pick anywhere to go out to eat-he picked McDonald's! Not a budget buster-yay! And I am making his cake from scratch:goodvibes

So it looks like we will be staying home tonight instead of the usual Wednesday night rush to get things done and get to church...the weather is pretty bad. Sounds like a good night for a family carpet picnic in the living room!:thumbsup2

This is how are week looks
Monday-Baked Monte Cristos (made with left over Easter ham & turkey)
Tuesday- Taco Salads
Wednesday- Chicken Parm w/ Mash taters
Thursday- Chicken Tortilla Soup (made with left over Turkey instead of chicken)
Friday- Lasagna
Saturday- pizza at friends house (while planning our Disney trip!)
Sunday-??

here is the Monte Cristo Recipe Just in case your interested! They are really good and I just found the baked recipe, also a good way to use left over ham & turkey ;)
Baked Monte Cristo
1 tube of Crescent rolls
Ham sliced
Turkey sliced
(you can use lunch meat)
Sliced cheese (Swiss is good but use whatever you prefer)
Egg wash
cinnamon

Roll out crescent rolls and place ham, turkey and cheese on half. Fold over other side of roll to close. Pinch together sides.
Repeat until all rolls are used.
Brush over egg wash on top of rolls and sprinkle on cinnamon.
Lay out on greased 8x12 pan.
Bake per directions on Crescent rolls.
Once done, sprinkle with powdered sugar and serve with Jelly ( I prefer raspberry or strawberry)
 
I've been doing meal planning for a couple of years now... basically since DD was born, I became a SAHM & we needed to stretch our dollars! But I get soooo sick of my normal go-to meals. So I'm hoping you guys can provide some inspiration. :)

Some background info: It's me, DH & DD(2). We eat out every Friday and DD & I eat at my parent's house on Tuesday & Sunday (DH is in school for his MBA so he's gone). I take a Zumba class on Wednesdays at 6:00 which makes meals those days a bit hairy. I make something either REALLY easy or have leftovers. I only go grocery shopping every 2 weeks.

Grocery day is tomorrow, so here's my list for the next 2 weeks...

Thursday: Sloppy Joe's (turkey), tater tots & sauteed zucchini
Friday: Dinner out
Saturday: Bourbon chicken w/ broccoli over rice
Sunday: Dinner @ mom & dad's (DH has leftovers)
Monday: Meatloaf, mashed potatoes & corn
Tuesday: Dinner @ mom & dad's (DH has leftovers)
Wednesday: Spaghetti w/ garlic bread & salad

Thursday: Tilapia fajitas w/ rice
Friday: Dinner out
Saturday: Hamburgers & hot dogs, baked beans, potato chips
Sunday: Dinner @ mom & dad's
Monday: Chicken, salsa & black bean burritos (in the crock pot)
Tuesday: Dinner @ mom & dad's
Wednesday: Leftover burritos
Thursday: Breaded cod, sweet potato fries & salad

My kids love Bourbon chicken, can you share your recipe?
 
Plan to cube up some left over Easter ham, add to it a large can of diced potatoes, diced onions, diced green pepper. Brown this in a skillet. Then add 4 beaten eggs. Serve with toast.

Sure! I've passed it onto a few friends & they've all enjoyed it.

DD is 2 and though she has some diverse tastes & a pretty high tolerance for heat (she had jambalaya last night, loves sauerkraut, fried banana pepper rings, etc.) but I do think it's a bit on the spicy side for her. So depending on your kids' tastes, you might need to cut back a little on the red pepper flakes. FWIW, I don't think it's too spicy at all! :)

ETA: Just remembered that I found that the recipe overcooks the chicken. First time I made it, I found the chicken to be really dry. I only cook the chicken after added to the sauce for 10-15 minutes, tops. The chicken's already browned, so you just need the sauce to stick to it really. If the sauce isn't thickening up properly, I add a bit of cornstarch to it.

Looks really good. Thanks so much. My youngest is 10 and can eat spicier things than I can. lol. Either I am a wimp or he has cast iron taste buds.
