Eat at Home 3!

Today: Guinness crockpot beef stew with homemade popovers (leftovers for lunches)
Monday: BBQ Turkey Meatballs over egg noodles (trying to decide if I should just freeze half of the ground turkey as is or just freeze the finished meal for later)
Tuesday: Cheeseburgers or Sloppy Joes w/ frozen ground beef
Wednesday: Mini filets (freezer) with microwave "baked" potatoes (sweet or regular will be game time decision)

That's as far as I've gotten. We usually do a left over night or grilled cheese and soup or breakfast for dinner one so I try not to over plan. It's just me and DH so we can be flexible plus we are also doing door dash in the evenings to pay off debt so I am focusing on quick and easy evening meals.
 
I stopped at Walmart today and got a 2 pound thing of hamburger meat because DW wanted to make chili (I don't like it). But by the end of the day, she had changed her mind. So, new plan...

Tonight: Chicken salad on crossaints with carrots and chips/dips;
Monday: Sausage wrap and oven roasted potatoes;
Tuesday: tacos
Wednesday: YOYO night bible study and choir practice;

That's as far as I've gotten.
 
Sunday: Olive Garden Tuscan Sausage Soup, bread
zuppa toscana??? love it-and it's one of the only ways dh will eat kale. now you've made me hungry for it-need to add kale and cream to the shopping list.

You don't put it in as soon as you cook it? Won't cooking allow bacteria to grow? Also, is a month long enough? That's what my DM said. That's a good idea to try the 2 pound ones. We can cook it then break it up and divide in half. And keep one as a 2 pounder for chili or a meatloaf. Great idea.

If you put it into a plastic ziplock bag as soon as you finish cooking it, it will melt the bag.
it will also cause condensation to build up and make whatever's in the bag soggy.

I’m not good at premaking and freezing
i'm not into like I was when I worked full time, had a commute and 2 young kiddos but if i'm already making something i'll make extra. yesterday I did meat for enchiladas (chicken and beef)-might as well cook a bit extra to freeze, if I'm making meatloaf it's no more work to make double and freeze on cooked meatloaf (or several small for sandwiches), I always make more soup or pasta sauce than I need so I can freeze it for later.

My meal plan:

Saturday/Sunday : Had a Costco chicken, some frozen veggies made in the air fryer, and some boxed stuffing.
Monday/Tuesday/Wednesday: Tacos using ground chicken
Thursday/Friday: Some shrimp I got at Trader Joe's that is already seasoned with rice and frozen veggies

So at Costco I got some sirloin steaks, chicken breasts, and chicken thighs. Also 2 bags of frozen veggies, some precooked chicken that was packaged in individual servings, and some soup (plus a ton of other stuff but this is what's now in the freezer). I only have one thing of soup in the freezer so far due to lack of space.
 

Cabbage looked good so cabbage for 2 meals and cooked ground beef will be in 2 meals as well

Fusilli Col Buco (Fusilli Jerry Seinfeld ;) topped w Rachel Ray home made tomato sauce and braciole (will make a second meal)
Chicken cutlets made with the extra breadcrumb mix I didn't use on the braciole
Stuffed Peppers / Taste of Home recipe with canned tomato soup
restaurant for a family birthday dinner
leftover pizza from last Friday
maybe a nice breakfast for dinner of baked potatoes fried in the skillet with scrambled eggs on top cooked into a nice omelette
 
We flipped around a few meals and ate more leftovers than usual but we basically followed the plan.

Tonight: l/o turkey meatballs for me and cheeseburger for DH
Friday: sliced steak (l/o) sandwich with melted cheese for me and homemade breakfast sandwich for dinner for DH
Saturday: Family party at my brother's so dinner is covered there
That's the week and I'll figure out next week over the weekend.
 
Here we go again:

Sunday: Leftover waffles w/ bacon from breakfast for me. Chicken cutlets with yellow rice for DH
Monday: Regular Tacos (hard shell) with rice etc. (using up some ground beef we bought over the weekend so it forces us to portion it out to freeze for future meals)
Tuesday: Marinated London Broil (freezer clean out) w/ baked white and sweet potatoes
Wednesday: Teriyaki Chicken Tacos (tortillas) w/ white rice
Thursday: Lazy Chicken Cordon Bleu Roll ups over egg noodles
(we will see how far that will take us)
 
Well this past week was kinda a bust for what I was planning. We got carry out one night and had another night of leftovers

I’m only planning on 4 nights this week and wing it the extra nights.

Pork chops
Salmon
Blt
Fettuccine Alfredo

Last week got away from me... my H works PST hours and we are on the east coast so weekdays are just me, and with the kids schedules last week... let's just say I picked up food more than I wanted.

So, let's try this again.

Tonight: chicken parm pasta bake
Tomorrow: turkey tenderloin, stuffing, green beans, and gravy
Tuesday: sweet heat chicken sandwiches, tots, salad
Wed: Shrimp stir fry, rice, eggrolls
Thursday: Pesto pasta, salad
Friday: Baked chicken, parm risotto, salad
 
Bag of Goya 16 bean soup (it needed one of their spice packets) for week lunches
Stirfry veggies with chicken on rice
Slow cooker chicken soup (the bag of leftover veggie bits in the freezer is full)
Pasta fagiole (will add pasta as we go for maximum meals)
restaurant for a family birthday dinner
Lipton Souperior Meatloaf recipe
Mccormick Tuscan chicken stew
Friday Pizza
Pesto Zoodles with baked or sauted chicken on top (I have a zoodle slicer attachment on a cheap Fullstar mandolin - works fine)
