Eat at home

I didn't prepare the crockpot this am, but the good news is, we have plenty of leftovers in the fridge as well as a package of boneless skinless chicken and all the sides. So while it may not be ready when I get home, I already have on hand what I need for dinner! Tonight is gymnastics so we won't be getting home until around 7.....


question for you all...what kind of snack items do you guys keep on hand? trying to find some new ideas!
 
I'm joining in! I am injured and can't work for awile, so I need to cook at home to save money and fill my time! Monday nights in our house is usually make your own night or eat left overs, as dh is usually working at dinner time. Then I usually cook Saturday something that can be eaten both Sat and Sun. So this week I have planned out my menus and did my shopping. Here goes:

Tuesday-buttermilk marinated then breaded chicken breasts, buttermilk mashed potatoes, and a salad.
Wednesday-stuffed manicotti shells, with crockpot apple bake for dessert.
Thursday-herb roasted pork tenderloin with pears.
Friday-lighter General Tso's chicken.
Sat and Sun-chicken salad sandwiches.
 
This could be a very interesting thread for me. One year ago, we adopted a 5 and 6 year old. We knew that we had to stop 'grabbing something for dinner' for financial, health and just passing along the bad habit reasons. We go out for lunch (fast food) about every two weeks and go for a sit down dinner very rarely (it had been three months between the last two times).

When I went back to work in September, things got...tricky. You see, we don't get home with the kids until 6:10 or so and bedtime is at 8:30. That means all weekday meals must take 20 minutes or less if we want to get baths and homework done.

I have go to meals (frozen veggies + precooked pasta + meat, quesadillas with salad) but we are getting very bored with it.

I haven't caved yet (boy would it be easy to just head to McDonalds on the way home or dial for pizza) but my resistence is weakening.

Congratulations on adding 2 kids to your family! That is exciting (and probably at times, exhausting too :)). I've got a list of 25 Meals in 20 Minutes or Less that you might find helpful. You really have to pack a lot into 2 hours and 20 minutes on weeknights!
 

Just back from AKL and I need to get back on board now.
I bought a new programmable crock pot yesterday at Costco because the lid handle on my old crock pot broke.

I've got some leftovers in the freezer.

Tonight: Soup, and ham or ham and homemade mac n cheese.
Tomorrow: Unstuffed cabbage rolls, mashed potatoes and corn (and that's it for the freezer leftovers)
Thursday: Chicken and stuffing in the crock pot
Friday: mac n cheese (if I don't make it tonight)
Saturday: Grilled pork chops, rice, veggie
Sunday: Roasted chicken
Monday: Breakfast for dinner

Welcome aboard and Congrats on adding to your family. :cool1: I think that maybe you could make one Saturday a cooking day and plan a whole bunch of easy meals to pull out of the freezer. Also your crock pot could be your best friend. And let your kids get involved. It's great having any extra pair of hands to help.

I wish I had a programmable crock pot.
 
Tonight I decided to have chicken enchilada's. I have been doing some cleaning and they will be easy to throw into the oven.
 
So I determined that my next post would have a plan. It's a pretty short one - but it's better than nothing.

tonight - rachel ray's super sloppy joes with roasted red potatos and tomato slices.

Wednesday night I'm teaching/DH had decided to make - speg & garlic bread

Thursday - broiled bbq chicken (my poor grill is under snow), broc., cous-cous, muffins and fresh fruit

Friday - pre-made pizza from grocery deli, tossed salad.
 
So here is what I have for this week

Tonight whole chicken with rice ( if w can find it) :rotfl2: with spinach
Tomorrow home made chicken noodle soup
Thursday pork chops
Friday pizza and movie
Saturday breakfast for dinner
 
Today I am doing some bulk cooking to freeze meals for when school starts in a week and a half. So tonight will depend on how tired I am. I am thinking ham with mac and chees and spinach salad.

saturday ~ crockpot lasagna, salad, bread
sunday ~ crockpot pepperonci sands, cole slaw, pasta salad
monday ~ ribs, rice, veggie
tuesday ~ tomato soup, grilled cheese, salad
wednesday ~ smoky chipotle chicken tacos, mexican rice, beans
thursday ~ scalloped chicken, veggie, salad
friday ~ shrimp stir fry, rice

here's to the new week!

so far, I have kept with the day and meal!! the chicken tacos are in the crockpot. DH didn't comment on no meat last night....was waiting for that!
 
I went shopping today and got a whole bunch of stuff for free! When you bought the pot roast which was a 4 pounder, you got potatoes, celery, and carrots for free. I cut the roast up and now I have enough for three different meals. I also got free orange juice when I bought 5 Quaker cereal items at $2/each. I ended up spending about $85 and saving $35 in coupons.

Here's some of what I will be making this week. I have been doing Weight Watchers on my own. I have done it a few times so I have all the info.

Last night I made a Mediterranean Chickpea stew with Chicken tonight Pot Roast with my homemade French Onion soup I freeze
salsa chicken quesidillas
Greek style Nachos
Progresso soups for lunch
Imitation crab salads stuffed in Pitas
home made mac and cheese
turkey burgers with homemade fries
blue cheese stuffed chicken breast with potato
 
We had the french toast, sausage, and fruit at dinner last night. I just put on the Minestrone Soup for tonight in the crockpot. Ran into a bit of an issue in the fact I can't fit as much liquid in as it says, even though I have the right amounts of vegetables and beans (actually have less beans then it calls for). I'll just have to keep an eye on it to make sure it doesn't get too dry, but if it's a bit thicker then a soup, no big deal I guess. We can have Minestrone Stew instead! LOL.

I'm excited about dinner tonight. All those vegetables in the soup look SO good. Just have to remember to add the pasta about 4ish.
