Tuesday: Turkey meatloaf, side of asparagus
Wednesday: Frozen pizza
Thursday: Quinoa burrito bowls
Friday: Cheese tortellini, side salads
Saturday: Baked spaghetti squash and cheese
 
I think I have decided to go with burritos for this week. I also found a few recipes for making and freezing egg sandwiches so will try those soon as well. It's nice to have something warm and filling at work to look forward to. Student matinees are simply chaos right now because we currently have 2 shows running and are often doing 2 shows of those shows. So yea... CRAZY!

How'd your burritos and egg sandwiches work out?

I have not been doing much cooking of late. My b'day was 11/22, and between that and Thanksgiving, been eating things other people have cooked for dinner, and leftovers, which works for me! Haven't felt much like cooking or eating. Been doing smoothies most every morning for breakfast.
 
We spent Thanksgiving with my parents. Both of the kiddos were out of town, DS was with his in laws, DD is a first year resident at Vandy Childrens and won't have a holiday off for two years. :sad1:

I brought dinner. We had turkey, cornbread dressing, sweet potato casserole, green beans sautéed with garlic and apple/cranberry crumble. Even though I only made a turkey breast we had TONS of leftovers and ate those over the weekend.

New Here: It is just me and my 12 yr old son. We started going to the grocery store every other weekend when school started. I am shooting to switch to every 3 weeks or once a month. Then just grab milk as we need it.

Tonight-Steak and mac n cheese (I got 4 good sized steaks at Sams for $9 something. We can make each one be a meal).

Tomorrow-Cheese or chicken quesadillas

Thursday-Mini pot pies made from biscuits in the muffin pan. I have the filling froze from last time we had this.

Friday-We will have my cousins little boy with us so maybe hamburger helper with green beans.

Saturday-Taco Soup (will make enough to freeze for one meal and have again next week)

No menu this week for me. Yesterday my favorite aunt passed away and I found out that my father (80 next month) will be having heart surgery on Thursday so today I'm headed to my parents' house for who knows how long. I spent yesterday putting all of the stuff bought in anticipation of a visit from my brother into the freezer. DH will be fending for himself until I get back.
 
How'd your burritos and egg sandwiches work out?

I never got the time to make them! Hoping to get them going for next week but I had NO space in the freezer to stock them. But I will be eating through some stuff up there so that should help.

I have been doing REAL bad at eating at home. Between work, being sick, and working on other projects here at home when I have time I have been so tired that cooking is just not on the radar. I have not even had a chance to wrap gifts yet for Christmas. Thinking it will be the year of pre decorated boxes and gift bags LMAO.

But I will finally get a chance to go to the store tomorrow after work and thus can hopefully get back to cooking (including those burritos!). So today will be the last day I eat out this month. Then I can work on January's meal plan (once I have my work schedule) and PLAN in a few "eat out" days so I don't miss doing it.

Does that make sense?

But anyway, here is my plan for the next few weeks:

Tomorrow: Steak, eggs, and potato pancakes
Thursday: Fried chicken with milk gravy, mashed potatoes, corn
Friday: Leftovers
Saturday: Sesame chicken, rice, sauteed spinach
Sunday: Leftovers

Monday: Work Christmas Party. I am bringing a couple different chex mixes
Tuesday: Pot roast, potatoes, carrots, and onions
Wednesday: Leftovers
Thursday: Cubed steaks, fried potatoes, gravy
Friday: No dang idea because I will be at work ALL day
Saturday: Chicken tenders, pasta with butter and parm, roasted carrots
Sunday: Leftovers

Monday: Slow cooker creamy chicken noodle soup
Tuesday: Leftovers
Wednesday: Xmas Eve at my cousin's house. We order Olive Garden
Thursday: Xmas day at my aunt and uncle's house. Turkey dinner
Friday: Hopefully I can steal a plate of leftovers lol

Planning this week now-been doing more fly-by-seat-of pants:

Saturday-we were doing errands all day (and I had a volunteer thing in am) so it was Ruby Tuesday for us. Plus my husband got the largest tree ever and we had to keep running out for more lights and ornaments:rotfl2:

Sunday-Make your own pizza night (friend owns a Wood fired oven pizza food truck and gave us some dough balls-yum); also made a breakfast casserole to use up some eggs

Monday: tacos

Tuesday: leftovers-middle daughter band concert night

Wed: slow cooker french dip sandwiches

Thursday: Soup (baked potato or creamy vegetable-havent decided yet:))

Friday:-kids will get pizza or chinese; DH and I have a charity dinner for Boys and Girls Club

Saturday: crazy busy kids schedule-planning on throwing pork roast in crockpot for pulled pork sandwiches
 
It has been awhile since I stopped in. Work has been crazy busy but the only time we have eaten out was Friday night while Christmas shopping.

Last night we had ham, mashed potatoes, green beans, and salad.

Tonight is apple butter bbq ribs with baked potatoes and salad.

Tomorrow will be chicken and dumplings.

Thursday - chili (from last week-as I did not make)

Well we got home last Monday and got our new stove in Friday! So I'm slowly working on getting our weekly menu back in action!

Wednesday- eating out
Thursday- turkey tacos
Friday- eating out my houston family in town
Saturday- Prob eating out for my stepfather a bday
 
We just got back last week from disney and it was so nice but I really did miss cooking lol

With Christmas right around the corner I need to stick with my meal plans so here it is

Tonight we had man pleasing chicken with green beans and rice
Tomorrow dd8 has a soccer game at 6 so hot dog casserole it is
Friday meatloaf with potatos and broccoli
Saturday yet another soccer game so spaghetti it is
Sunday is basketball for oldest dd 12 we will have pork chops and apple sauce in the crock pot
Monday will be chicken noodle soup
Tuesday is Mac and cheese
 
I went a little bit overboard with holiday spending (mostly the big party I threw last weekend, which was AWESOME but man it's expensive feeding/liquoring that many people) SO I'm making a pact with myself to only eat dinners at home through the end of the year--unless I can somehow con my boyfriend into paying for it lol. I'm going to start by pulling a lot of things out of the freezer and pantry.

I have been MIA for a while. Just so hard to be on the Disboards when we don't have any Disney plans in the near future. :sad1: Anyhow, here is our menu this week...

It was our anniversary. We were supposed to go to dinner at Cheesecake Factory....BUT, DS8 got sick. Instead it was take-out from Outback.

I have a tentative plan for the next 3 weeks but I change the order all the time so who knows how accurate it will be.

Sun-Last night was supposed to be steak but we ended up having to run an errand near our favorite pizza spot so Steaks for tonight instead.
