Eat at Home 3!

Tonight we are having trader joes fried rice and orange chicken. It was extra from the freezer- I am trying to clear out some things we have in our freezer!

I am thinking we will do soup and salad a night or two this week.

We will also do chicken fajitas one night with peppers and onions.
 
Trying to eat especially frugally for the next little while since I won't be getting paid over my Christmas break this year. Hourly student jobs are bad for that...

Monday:
leftover chicken & dumplings for lunch
meatloaf, mashed potatoes, glazed carrots for dinner

Tuesday:
leftover dumplings for lunch
leftover meatloaf for dinner

Wednesday:
leftover meatloaf for lunch
spaghetti, frozen meatballs, garlic bread, and salad for dinner

Thursday:
leftover spaghetti for lunch
out for dinner

Friday:
leftover quesadilla for lunch
cornbread and ham+beans from the freezer

I am so excited about chicken and dumplings from this weekend :) It was the first time I attempted my mum's recipe, and it turned out really good! Now I'm just hoping the meatloaf turns out too :)
 
Been so busy past couple weeks dropped off for awhile in posting menus (still eating at home - mostly- though); Wingapalooza took up a lot of time and was wiped for awhile afterwards (longest running chicken wing cook off in country for charity-others are for profit-up 25% from previous year so more for childrens charities!

This week-
sunday-snack day (worked 9 hours saturday and hubs deer hunting out of town)-we did spinach artichoke dip and shrimp cocktail-and the RAMS WON
Monday-Parmesan fish, roasted veggie
Tuesday-citrus/rosemary roasted pork tenderloin, rosemary/garlic roasted red potatoes, steamed veggie
Wed-fried rice using leftover meat, veg
Thurs-leftovers-going to high school production of Sound of Music
Friday-? daughter and hubs off deer hunting and oldest teen likely out with friends-may take my lil guy out-&need to remember to get turkey out to thaw
Saturday-crockpot chicken continental(working again-crockpot to rescue)
 
We are back from a busy week of cleaning at home. Construction creates a huge mess! Now to finish up the freezer in 3 weeks so we can move home.

Tuesday- whole chicken
Wednesday- left over whole chicken
Thursday- fish
Friday- chicken breast
Saturday- fried shrimp for DH and chicken hotdogs for me
 

Need some help!

I have been working a lot of mornings of late due to student matinees at the theatre. I have been spending so much money on these mornings because I am picking up food. This is something I need to stop doing, but I am not a morning person so getting up early to make something just is not in the cards. So, I was wondering if anyone had any suggestions for things I can make ahead and heat up really fast either before I left or when I get to the theatre (we have a microwave).

When I was working I liked to make one of the Bisquick impossible breakfast pies. You can keep them in the fridge or freezer and heat when you get to work. I like making them with ham, spinach and cheese or bacon, onion and cheese. Can also do an all veggie version, or a version with breakfast sausage.

I also often make a few servings of oatmeal at a time. Then add different toppings of dried fruit when I reheat in the microwave.

You can also make breakfast burritos ahead of time. Scrambled eggs, peppers, onions and tomatoes and wrap in a tortilla and then wrap them individually.

I saw this the other day and I thought I might like to try it.

Do have a toast. I would toast bread. Then toast and cheese for 30 seconds for toast cheese sandwich. Boil eggs head time. Buy pre-cooked bacon at the store. Cereal and milk. Plus fruit. Grits and oatmeal can be cooked in the microwave too.

Breakfast for Saturday morning boiled eggs, grits and bacon. Plus fruit.

All day Saturday there football game , dance competition, and Christmas parade. My kids is be at all three.

Lunch is be at the Burger King. Dinner is be pizza.

Sunday - pork chops and squash

Monday - catfish and fries

Tuesday -Chili and corn bread

Wednesday - Leftovers from work dinner

Thursday - Thanksgiving dinner

Meatloaf turned out nice this week, yay!

Going home for Thanksgiving, so a very short meal plan this week:

Today:
out for lunch
baked potatoes for dinner (and maybe salad)

Sunday:
skillet meal for lunch (one of those frozen things)
dinner at my friend's house

Monday:
leftovers or sandwich for lunch
thai curry and rice for dinner

Tuesday:
thai curry and rice for lunch
something random for dinner

Wednesday:
leave to go home! Which means someone else will be cooking until Sunday when I get back :woohoo:

I seriously cannot wait for Thanksgiving turkey :cool1:
 
We did fairly well this week sticking to our menu! DH had an unexpected dinner "date" with DSS, so DD and I had a girl date at Bob Evans (kids night so she ate free!). We moved pizza night to last night then.

This week:

Sat: meatball subs, fries, brownies

Sun: Breaded porkchops, hashbrowns, corn

Mon: crockpot chicken and dressing, green beans

Tues: spaghetti and garlic toast

Weds: marinated chicken, broccoli cheese & rice

Thurs: Turkey Day - we're having brunch with DHs family and we're taking breakfast pizza. Dinner will be with my family and we're taking rolls, cranberries, green bean casserole, and jello salad.

Fri: I'm guessing ordering out for pizza because DH and I are going shopping after turkey day festivities so we'll be sleeeepy!

I think I have decided to go with burritos for this week. I also found a few recipes for making and freezing egg sandwiches so will try those soon as well. It's nice to have something warm and filling at work to look forward to. Student matinees are simply chaos right now because we currently have 2 shows running and are often doing 2 shows of those shows. So yea... CRAZY!

Thursday - dinner with family - bringing pumpkin pie, pecan pie, sausage balls and veggie tray

Friday - cooking a turkey breast in crock pot for turkey sandwiches :) and serving with leftovers.

How do you do your chicken alfredo in the crockpot? We love that, but I usually make on stovetop - would love to use crockpot!

Wed: takeout (as I'll be prepping pies/side dishes and don't need another task)

How do you do your chicken alfredo in the crockpot? We love that, but I usually make on stovetop - would love to use crockpot!

I put 1/3 of the sauce in bottom of crockpot then put in the chicken. Then I pour the rest of the jar of sauce over the chicken. Let it cook 6-8 hrs. In the last 15 minutes I add a bag of cooked noodles and a can of sliced mushrooms. It's really good, no need for a knife to cut the chicken.
