Eat at Home 3!

Cooking in the winter is harder for me. So difficult to find any good vegetables and fruit the kids will eat!

For anyone looking for a good Cincinnati chili recipe, I have used this one for years. I have to skip on the beans though because of dh:

1 bay leaf
2 lbs. ground beef
2 c. water
1 (6 oz.) can tomato paste
1 large onion chopped (I use less, maybe 1/2 at the most)
2 tbsp. chili powder
1 1/2 tsp of minced garlic
1 1/2 tsp. salt
1/2 tsp. ground cinnamon
1 tsp. ground nutmeg
sprinkle of red pepper (to taste)
2 tsp. unsweetened cocoa
2 tsp. Worcestershire sauce
kidney beans (I skip these)
hot cooked thin spaghetti

Grated Cheddar cheese

PREPARATION:
Brown ground beef; transfer to crockpot; add water, tomato paste, chopped onion, chili powder, garlic, salt, cinnamon, nutmeg, red pepper, cocoa, Worcestershire sauce and bayleaf. Cover and cook on LOW for 7 to 9 hours, adding the drained beans the last hour. Serve over hot cooked thin spaghetti and top with cheese. This sauce could be used for chili dogs. Makes about 6 cups.

I HAVE to get back into the habit of cooking family meals and planning them out really helps!

Last night we had Philly Cheesesteak sandwiches and butternut squash.

Tonight we'll have steak fajitas, spanish rice, refried beans and corn.

Tomorrow we'll have Sauteed Spinach & Mushrooms over Chicken.

Thursday we'll try this new recipe for Sausage, Onion & Pepper Heros.

Can you tell I'm trying to use up the remainder of our garden bounty?

On Friday we have a home football game, so it will be something quick and easy... maybe a pork loin in the crock pot. I like to do this Pioneer Woman recipe.

Over the weekend, I'm hoping to have time to put together a soup or two and some casseroles that I can freeze. I've got 10 lbs of hamburger I have to find a use for...

Saturday: Our annual trip to the Halloween party at the zoo got pre-empted by DD's basketball tournament. :sad1: Soooo, I had to come up with a fun alternative to soothe everyone's dissapointment.

Wed was "breakfast for dinner" bc I conked out and nobody woke me up till 7:15, lol

Tonight is baked salmon, roasted butternut squash, leftover couscous, and sauteed spinach

Tomorrow is chicken tikka masala and roasted cauliflower

Not sure what I am doing this weekend, though.

Home from an amazing Disney vacation. It had to be one of the best yet, though I really missed my mom. I also booked bounceback for next year so now I need to REALLY save money! Plus, when I saw some of the pictures I realized how badly I need to lose weight. So eating at home is the number one thing I can do for this.

My menu for this week:

Today: (Work) Vegetable fried rice
Tomorrow: Steak, eggs, and hashbrowns
Sunday: Crockpot mushroom chicken over pasta, steamed broccoli

Tuesday: Leftovers
Wednesday: Meatloaf, mashed potatoes, green beans
Thursday: Crockpot smothered pork with rice, vegetable of some sort

Saturday: (Work) Leftovers
 
Tonight- beef stew with garlic and red wine, Rosemary rolls
Monday- buffalo chicken pasta
Tuesday- tacos
Wednesday- fried cube steak sandwiches. Baked potatoes, green beans
Thursday- crock-pot chicken tortilla soup
Friday- neighborhood pitch-in before trick or treating I'm taking a homemade dip and crackers
 
Mostly crockpot/make ahead meals this week, going to be a busy one. I don't try to plan weekend meals anymore. We never stick to them.

I've been in and out of this thread. I really need some accountability over the next month. So I'm back.

Monday: Cheesy spaghetti squash (mac and cheese for DS who won't eat squash) and salad

Wednesday: Pasta with roasted vegetable sauce
Thursday: Something with frozen meatballs (I want to use them up)
Friday: Pizza for Halloween

I'll update with plans for the weekend as the weekend gets closer
 
About to move back home to New Orleans so gotta use up everything in our freezer over the next 5 weeks.

I finally got some help to organize my big freezer. It has a scary amount of stuff in there, and I have 40lb of chicken breast arriving on Saturday (ordered months ago). Anyway, we have our trip coming up, plus Christmas, so I am going to challenge myself to use as much from the freezer as possible!

Awwww. Thank you so much! It was a very needed vacation.

So, today was supposed to be leftovers, but the pork didn't make nearly enough to spread over enough meals. Thus I ordered out for lunch and will eat the leftovers tonight. Then tomorrow I will make a huge serving of fried rice so I can take some with me to work. The pork was really good mind you, just didn't make as much as I had planned for it! Oops!

I also finished my November plan and Sunday is my "big" shopping trip for the month. The aim though is to pretty much eat through what is in my freezer by the end of the month, minus a handful of things (like soup I freeze into containers or blueberries that I keep on hand).

Tuesday- we grab Togo's salads after dropping the dogs off
Wednesday, Thursday, Friday, Saturday we will be home.
