Eat at Home 3!

My coworker would like the recipe for your bacon wrapped mini meatloaves. Thank you!

1 lb ground beef
6 strips bacon
1 egg
garlic powder
salt
pepper

Grease a muffin tin (makes six, so only do half)

Preheat oven to 350 degrees.

circle the outside of each muffin hole with a piece of bacon.

In a bowl add egg to raw ground beef. Add spices to your taste. I add a tbsp of garlic powder, 1/2 tsp salt and 1/2 tsp pepper.

Mix well. Pack muffin holes with ground beef mixture. Can top with ketchup if desired.

Cook at 350 degrees for 25 mins or until cooked through.

Today- making a Mexican penne casserole to take to church for lunch, prob will have leftovers
Monday- chicken enchilada soup
Tues- DS has football so we will have to grab something
Wed- baked chicken, some sort of pasta/rice and green beans
Thurs- eggs, bacon
Fri- bacon wrapped chicken, corn on cob, some sort if pasta/rice
 
I have been working a ton of hours with a bunch of closings lately which has made eating at home more difficult. But I am happy to say we have only gotten takeout once in the last 3 weeks. I have been using the crock pot like crazy. My schedule is easing up a little so meal planning will be easier.

My week
Sunday- pork souvlaki with tatzitki sauce, grilled pita, and zucchini planks
Monday- oven roasted chicken with mashed potatoes, green beans, and salad
Tuesday- homemade baked macaroni and cheese with fruit
Wednesday- sweet potato pierogies with salad
Thursday- beef stew in the crock pot with biscuits
Friday- sausage and cheddar bread pudding with fruit
Saturday- chicken enchiladas
 

Sat - tomato soup & grilled cheese
Sun - frozen pizzas
Mon - speg & meat sauce w/garlic bread
Tues - fish sticks & macc/cheese
Wed - BBQ chicken
Thurs - tuna cass
Fri - hot dogs/bratts & fries
Sat - fish sticks & ?

Thank you! I am super crazy excited. It's been 4 years since I have been down there. I was supposed to go last year but canceled as it was just to close to losing my mom (who was always my travel partner). So going this year with my aunt who has never been!

Sun-greek chicken over orzo, spanokapita, cupcakes (oldest 17th birthday)
Mon- leftovers (had stuff left from block party saturday)
Tues-lemony shrimp and beans over couscous, green beans, last of watermelon from garden
wed- oven fried fish, french fries, sugar snap peas
Thurs-slow cooker beef stroganoff over noodles, peas and carrots
Fri-leftovers
Sat-on the road-after son's soccer game heading to DD band competition 3 hours away

What is BBQ shrimp?
 
It's a southern thing. It's basically butter, shrimp and Worcestershire sauce.

Hhhmmm not what I expected it to be, we have BBQ prawns and we use Honey, crushed garlic and BBQ sauce - heat that in microwave, chuck in the prawns, stir to coat, then cook in the fry pan, yummy

Tuesday: Fajitas, corn pudding
Wednesday: leftovers
Thursday: Cheese burgers, mac and cheese, apple slices

Saturday: Chicken and rice
Sunday: Mexican tortilla pin wheels, pinapple, refried beans

Monday- crockpot roast with mashed potatoes and green beans

Tuesday- We did soup, I think my fiancé had wedding soup

Wednesday- fend for yourselves night. Fiancé had leftover chicken with stuffing and I ate popcorn (I was studying almost all night!!)

Thursday- Pesto chicken with bruschetta and mozzarella cheese over bow ties.

Last night we ate out at ocharleys - it was a long week and we decided we would do one meal out this weekend as long as we cooked for the rest of the week/weekend!!

So, I have done pretty well in the past couple of weeks. On Saturday, I finally made the Chinese food that ds8 has been begging for, except I made half and bought half. Cost $20 instead of $50, so I am still counting that as a win. Tonight, I bought a big pork shoulder roast, so I decided to throw that in tomorrow for some carnitas soft tacos tomorrow night. OOOH, can't wait!!

Current menu plan:
M-carnitas soft tacos, refried beans, spanish rice
T-pesto chicken, roasted zucchini, orzo, wilted spinach salad (the bacon-y kind)
W-Butternut squash soup, spinach salad with chicken (or sandwich for kids)
T-sweet & sour meatballs over rice, teriyaki veggies
F-Chicken vegetable soup (with alphabet pasta for kids, lol), bread, salad
S-dh requested salisbury steak, mashed potatoes, and steamed carrots, lol. I have never even eaten it, let alone made it, so we'll see
S-chili, cornbread, veggies & dip

Thursday - Meatless - Veggie Stir fry and hot&sour soup
Friday - Black bean burgers, and home fries
