Can you tell me more about this chili? The addition of pumpkin sounds very interesting. Looking at the recipe, it just seems like normal chili just with pumpkin added in. Does the pumpkin change the taste or texture much?

I will have to let you know, this is my first time making it. :thumbsup2
 
We eat at home most nights and the menu is pretty simple...

Protein, Vegetable and Fruit

Examples:
Grilled chicken, corn and mango
Grilled steak, broccoli and melon
Grilled fish, peas and grapes

I like to cook pasta once a week with either chicken, ground beef or Italian sausage and a red or white sauce. (The Barilla marinaras are great as is Mario Batali's Alfredo.)

Occasionally we mix it up - I made Shrimp Scampi on linguine last night - took 8 minutes after about 12 of prep. We're making Chicken burritos tomorrow.

Can you share your Shrimp Scampi recipe? That's my son's favorite and I've never found a recipe that sounds good and not too difficult.

Got cool here! Kids wanted soup quick and this is a favorite (DH college roommate worked in Front office of Dixie Stampede for many years-went more times than I can remember). Nice thing about this is it is quick and can use stuff I already have on hand. Don't skip the little bit of corn syrup-really does make a difference (I usually make my own corn syrup when I need a bit). :cool1:

Ok I'm struggling for ideas. My DH is picky. He hates eating the same thing over and over. Hates the texture if ground or shredded meat. And doesn't like veggies.

Monday- red beans (w sausage for the DH, chicken for me)
Tuesday- baked whole chicken
Wednesday- pork chops
Thursday- baked fish
Friday- leftovers
Saturday- so far free day planned. Saturday is college football day for DH and he prob will want Popeyes.
 
I love this thread! I've been taking plenty of ideas so thought I should give some:

Monday - Cuban beans and Rice (I love you rice cooker), sausage link, chips and avocado mash

Tuesday - Tomato Parmesan Chicken, salad, spaghetti and maybe french bread if I make it to the bakery

Wednesday - Slow cooker teriyaki chicken, steamed broccoli, rice

Thursday - Leftovers

Friday - Okonomiyaki!
 
Hi Everyone,
I was at a work conference last week, conveniently located in the same city as my in-laws so most of our meals were covered.

Here's the plan for this week back at home:

Sunday: Tomato and eggplant curry, brown rice, yogurt, strawberries

Monday: Tuna melt and salad

Tuesday: Chickpea soup with saffron and almonds, sauteed spinach

Wednesday: Friends are bringing us dinner (hooray!) when they come to meet our "new" (6 months old) baby.

Thursday: Tofu braised in curried coconut milk, snap peas, brown rice

Friday: Mashed potato pie, scrambled eggs

Saturday: Not sure yet...
 
Back from all the funeral craziness but might be in for more this weekend. My grandmother has been in the hospital for over a year (on the waitlist for a nursing home) so she couldn't make it to my little niece's funeral this past weekend. DSis said they would come up and do a balloon release with her so she is involved in some way. If they come, I will be hosting them (and other family members) so I will have weekend dinners to plan. Because my sister is taking it one day at a time, no definitive plans have yet been made.

Here is the tentative schedule:

Last night: alfredo lasagna, cuke and carrots
Tonight: chicken nuggets and fries, veggies and dip
Tues: Black bean burgers, veggies and dip
Wed: steak and twice baked potatoes, frozen veg
Thurs: beef tacos, salad
Fri: pancakes, bacon, eggs, fruit
Sat: chicken ceasar salad
Sun: roasted salmon (for DH) and chicken (for me) with noodles, frozen veg

I am trying to save up the spending money for our trip which is only 80 days away as of today, so absolutely no eating out until December. I did a big grocery shop on the weekend and would like that to last until the end of the month. That's probably a bit too ambitious, but I'd like to only buy produce, milk, bread, eggs, coffee and cheese this weekend. So we will see how that goes. It all starts with planning a 2 week menu.

I haven't posted in a while. I haven't been doing a menu plan either because of tennis 4 nights a week. I don't know how parents with kids in multiple sports get through the week. It's busy!

I'll add vegetables when I see what's on sale for the week. So many things are going out of season.

Thanks! I'm doing okay with the loss (as okay as one CAN do), but my sister and brother in law obviously aren't and neither is my mother. They are taking it day by day though and they do believe she is a little :littleangel: now and know that she is out of pain and no longer has to worry about seizures so that is some small comfort to them.

The meal plan has changed for me already this week though! :rolleyes1

Dinner on Saturday will now be at the hospital so as to include my grandma, so I don't have to worry about it.

I have decided to follow a low carb diet for as long as my supplies last (I went shopping yesterday for pepperoni sticks, yogurt, cheese strings, tons of fresh veggies, and breakfast sausages) but hopefully that will be 10-12 days. So a few alterations needed to be made to this week's meal plan.

Last night- italian sausages, broccoli and cheese, mac and cheese for the kids
Tonight- steak and potatoes, salad (cheese string for me, not potato)
Thursday- beef tacos, cheese quesadillas for DS, taco salad for me
Friday-breakfast for dinner, omelets and sausages for me, pancakes and bacon for everyone else
Saturday- family dinner with grandma (not sure of the menu)
Sunday-salmon and noodles for DH, chicken ceasar salad for me, chicken and noodles for the kids
 
I have not been around lately and I am SO sorry to hear about your loss stayhomemom77. *Hugs* to you and your family.

I'm going try to get back into things here. I have been doing REAL horrible when it comes to eating at home. In this area it is so easy to go online, order food, and have it delivered. I really have to break that habit and get into cooking again. Luckily, I always love to cook in the fall and winter. Just something about those two seasons makes me want to cook and bake all the time. So hopefully that will help some!

Plus, I start my new job this evening so that is really making things a bit harder for me to plan. So, on work days when I work an evening show, my "dinner" will be more like a late lunch since many evenings I won't get back until between 9 and 10 and won't want to cook and eat a big meal then!

So I will post the rest of this weeks menu and then later I will post the rest of the month. Once I get October done, I will post that as well! (W) means I work.

Ok, I'm joining this thread to keep me on track! Things are somewhat complicated by the fact that my dear fiance's adult son lives with us, and he is an incredibly picky eater. Nothing with a sauce, limited veggies and only "normal" foods. I'm vegan and encouraging DF to be on the eat to live fuhrman plan, so I can enjoy his company as long as possible!

So, with that in mind, Wednesday to Wednesday meal plan:

Wednesday: mushroom barley soup, burgers for DSS
Thursday: Balsamic Portabello Stacks, DSS is working
Friday: Costa Rican rice with zucchini, black beans and spinach, DSS is working
Saturday: Sloppy Joes with lentils, chicken tenders and rice for DSS
Sunday: pizza for the guys, hummus and veggies for me
Monday: Veggies burgers with salad
Tuesday: Pasta (roasted garlic and mushroom sauce for us, meatballs for DSS)
Wednesday: Cilantro lime soup

Whew! Here's hoping I can stick to it!
