Eat at Home 3!

We have been doing really good eating at home especially with my busy schedule. This week's menu is

Sunday- Chicken and dumplings
Monday- Leftovers
Tuesday- Tacos with Spanish rice
Wednesday- Ham and potatoes
Thursday- Beef stew (this will be for mom as I am going to see Luke Bryan)
Friday- Hamburgers with tator tots
Saturday- Corned beef with mashed sweet potatoes
 
Well we are back from New Orleans (home) and back on our menu. We are adding more salads for sides to try to lose weight.
Sunday- free night (TJs chicken hotdogs and green beans for me)
Monday- porkchops and salad
Tuesday- TJs orange chicken
Wednesday- crab cakes
Thursday- Parmesan mushroom chicken
Friday- swai fish
Saturday- DH on his own bc I'm having a girls night in SF
 
Here's the plan for this week:

Monday: grilled cheese and tomato on whole wheat, steamed green beans with vinaigrette, salad, watermelon
Tuesday: grilled chicken with arugula, tomato, mozzarella and basil salad, leftover green beans, watermelon, pineapple
Wednesday: bockwurst with curry ketchup, sweet potato oven fries, salad
Thursday: sauteed spinach with garlic, poached eggs, strawberries
Friday: pasta with roasted cherry tomatoes and zucchini, strawberries
Saturday: out with friends
Sunday: beer can chicken on the BBQ and whatever is left in the fridge
 
This next week our church is having special meetings and serving dinner Sunday- Wednesday. Not sure we will make it every night, but a few free meals will be great. :thumbsup2 Next week's menu:

This fall one DS will be swimming on Tues/Thur and the other has soccer on Mon/Wed and I'd like to minimize the frozen pizza and hot dog type dinners because too much of it is so unhealthy. Today I cooked and froze. Two containers of turkey chili - I can't eat it but DH and both boys like it, so I'll have something else those nights - eight individual size homemade pizzas and a dozen slices of French toast (on day-old sourdough I got from a local restaurant for $1 a loaf!) I like breakfast for dinner and sometimes we make Monte Cristo sandwiches out of them. Also stocked up in turkey burgers and pasta. Would have done more but ran out of freezer space. We'll see how it goes but trying to start out the school year right anyway.
 
Finally home from my sister's house! So good to be back.

Last night-lasagna
Tonight-hot chicken sandwiches, salad
Tues- soup and grilled cheese sammies, salad
Wed-burgers and mac and cheese, veggie tray
Thurs-sausages, twice baked potatoes, veggie tray
Fri-butter chicken over rice, peas
Sat-leftovers
 
Happy Monday everyone!

Su: Beer can chicken on the BBQ, corn, spinach salad and (store-bought) apple pie

M: Black beans, brown rice, green salsa, chopped tomatoes, avocados, tortillas and CHEESE, strawberries for dessert

T: Pasta with canned salmon, broccoli, onions and capers (sounds crazy but it is delicious and an easy pantry meal, only need to purchase broccoli and a lemon)

W: baked potato with Heinz beans, broccoli (I'm realizing that we eat this every week!)

Th: Spinach and goat cheese quiche, roasted carrots (pastry crust is already in the freezer, whoo hoo)

F: Breakfast for dinner, blueberry pancakes, scrambled eggs, toast

Sa: Not sure yet...
 
Late...
Sun- steak, veg, potato on grill (too HOT to heat up house!)
Mon-had a meeting and met friends for happy hour -plenty of leftovers so what does hubs do? But of course: Pizza :rotfl2:
Tue-steak fajitas (grill again-too many peppers from garden, and did I mention it is HOT here? +lemon bars for desert) and pomegranate margaritas...
Wed-leftovers
Thurs/Fri-??likely something from freezer (spaghetti/meatballs?) kids have activities and sleepovers.
Sat -leave for St Louis :)

Just did our budget & we had $3000 extra in bills this month!!:confused3 THAT doesn't work. Its been a year and a half of A LOT of additional expenses, many of them monthly:( DS away at school, new car for us, added driver to insurance, biopsy...ugh.

TIME TO GET SERIOUS:scared:
If it isn't in the freezer, I'm not making it--well, until the freezer is cleared out. Figure we are good for a month or so.
I strive to get meat under $5/meal; it can go to $7, $10 if it is a large piece I will get lots of leftovers from

Sun: Spaghetti (ground turkey)
Mon: Italian dressing & chicken breasts in crock pot
Tues: Shrimp Scampi (shrimp on clearance from Target--$3 off sticker)
Weds.: Leftovers
Thurs: Flank steak with chili sauce in the crock pot
Fri: Frozen pizza (high school football starts!!!)
Sat: tailgating at the Husker game:cool1:Not sure WHAT yet....this will be both lunch & dinner; gonna try to pull from pantry & freezer...
 
today Grill catfish and cucumbers/tomato salad, grill squach
 
A little behind as we are just back from vacation but here goes ...

Monday - cube steak, rice and green beans
Tuesday - egg burritos and fruit
Wednesday - angel chicken and peas
Thursday - pizza and salad
Friday - Mexican chicken (chicken, tomatoes, corn and black beans) over rice
Saturday - spaghetti and meatballs / salad
 
We booked a trip to disney last night, so eating at home is going to be important. Every penny saved is a penny more towards fun things.

Last night we had london broil with mashed potatoes and corn.

Tonight I work late so dinner is leftovers.

That is our motivation too. Our trip is coming up fast (98 days and counting!) and the easiest place to squeeze extra spending money out of the budget is to cut out all eating out. Besides, I find I really look forward to restaurants on vacation if we haven't been going out much at home.

Tonight is Roast Carrots and Potatoes, Baked Chicken Thighs and Salad.

Saturday.. Ordered Pizza, made a caesar salad

Sunday.. Grilled Sausages, Sweet Potato Fries, Broccoli

Monday.. Tofu Parm and Salad.

Tuesday.. Fruit Smoothies and breakfast for dinner (eggs and pancakes)

Wednesday.. Veggie Fried Rice for dd and I, chicken burgers and veggies for ds

Thursday.. Homemade Pizzas and salad

Friday…Chicken and couscous with peppers for dh and I, grilled cheese or leftovers for kids

Saturday…Spaghetti and Meatballs

Sunday.. Chili and cornbread
 
hear ya about the freezer-need to clean mine out periodically!

Change of plans with illness bug hitting(2of 3 kids sniffling, my mom whom we were going to visit has bronchitis) sooo-staying in this weekend instead of STL.
Just saves some money (but did need to send DH to store as I wasn't planning on being home!)

today-country fried chicken "steak"(kid request), potatoes, green beans (from garden-yum)
Sunday-"BBQ" -DH and oldest DD duking it out as to what this will entail - hamburgers vs pulled pork
Monday-leftovers
Rest of week (in no particular order):
Crockpot Rotisserie chicken, Cheese Ravioli with spinach and bacon, Make-your-own-pizza with leftover veg and meats
Then Saturday is my hospital's day at Silver Dollar City(they do this instead of company picnic now per employee request)-looking forward to the skillets!
 
Back to the school year grind. I dont have kids in school but my job revolves around after school hours. Same with DH. He has a terrible schedule this year that starts at 5 am, has a break in the middle, and then an hour commute each way for the afternoon portion. So he doesnt get home until 8. me at 7:15 so I'll be looking back through this thread for more crock pot ideas this year.

This week will be some order of:

Grilled steak
Stew beef with mashed potatoes
Spaghetti and meatballs (making extra meatballs for subs in the future)
Smoked sausage and mac n cheese
Rotisserie Chicken + fixins
French bread Pizza
 
Still working a ridiculous amount of hours with my new job. But we did manage to eat at home everyday this week.

Sun: leftovers at my dads from my sisters bridal shower on Saturday.

Mon: hot dogs, baked beans, sweet corn, and watermelon

Tues: crockpot creamy mushroom chicken over egg noodles with green beans and peaches

Wed: impossibly easy taco pie, apple slices

Thurs: baked chicken, rice a roni, corn

Fri: bowling night with the school so we'll grab something at the bowling alley or quick before we go.

Sat: DDs birthday parties. Walking tacos for her family party at lunchtime, pizza for her friends party in the evening
