I'm going to start joining in. I am a single mom whose daughter just went off to college. I used to cook a lot for her, natural, organic foods. Now that she is off to college, I need to really buckle down for financial reasons, especially because I just moved and expenses are high right now.
Friday she is coming home for the weekend. Since I am now halfway between her and her bf, he will be coming too. I'm trying to feed them good food like she is used to, but do it as cheaply as I can. Here is my menu for the next week.
Friday night: rotisserie chicken, mashed potatoes, stuffing, corn (I know lots of carbs, but she wants comfort food)
Sat lunch: leftovers or use chicken for chicken salad sandwiches
Sat Dinner: shrimp stirfry with peas and mushrooms, egg rolls
Sun lunch: likely leftovers before they head out each their own way
Mon: crockpot of chili, freezing leftovers in individual portions for me, corn muffins, salad
Tues: any leftovers from weekend that look good
Wed: tuna melt
Thurs: stuffed cabbage I have in freezer
Fri: more chili
Sat: chicken salad made with frozen leftover rotisserie chicken from last weekend, roasted vegetables
Sunday: sirloin tips in crockpot, broccoli, wild rice
It is hard to cook for one. Right now I'm finding I just don't eat rather than facing the kitchen. That isn't good at all, so I need to do this. I'm going to print out my menu and put it on fridge. I find I am more willing to throw something in crockpot so ready when I am hungry. If I wait until dinner time, I either say forget it or grab something just snacky. Not healthy at all.
