Sunday- Hubby's b-day... not sure what we'll do yet. He'll probably request steaks! :rotfl2:

It's been quite a while since I posted on here, but we're planning a Disney 2018 trip so I'm trying to get back in the game! We have been sick this week so we haven't been too organized about meals, but I'm hoping to buy groceries this weekend and then get super organized about meal planning again. Thanks for the inspiration! :-)

Happy Friday everyone!

We stayed on track this week. DS flies out this morning to visit our families in Texas for the next 10 days, so it will just be DH and I. With my new job my schedule is a little weird too and I have to make things that are easy to make when I get home later and other things that I can take in to re-heat or DH can re-heat at home. I will include my work times. Here's what I have planned:

Tonight: (1-10) DH will make Frito pie at home with extra chili we have and I will take in leftovers
Sat: (8-5) I will meet DH for church and we will eat out as usual
Sun: (off) grilled steaks, stuffed baked potatoes, and drop biscuits
Mon: (7-5) pork chops with broccoli salad and Texas toast
Tue: (8-5) Italian melts with side salad
Wed: (8-5) pork chops with herbed veggies and rice
Thu: (12:30-9:30) chicken spinach artichoke casserole
Fri: (off) eat out- date night !!!!
Sat: (1-10) pasta carbonara
Sun: (12-9) leftovers

Monday: Cooking a turkey breast in the slow cooker. Will have it as is with corn and peas on the side
Tuesday: Turkey alfredo with broccoli
Wednesday: I have my workout class. Something easy-soup and sandwiches, frozen pizza, etc.
Thursday: Black bean and corn quesadillas, chips and salsa
Friday: Salads with whatever is left in the fridge veggie and meat wise
Saturday: Going to MK for the day, and then out to dinner with Orlando friends off Disney property. I got a huge promotion at work on Tuesday, so how else to celebrate then a day at Disney?:lovestruc
Sunday: Baked tortellini bake http://www.delish.com/cooking/recipe-ideas/recipes/a47130/bolognese-tortellini-bake-recipe/ , side salad

Realfoodfans and Sydney2977- yes, that is how I make low country boil. We went to Edisto Beach, SC - in the heart of SC low country. I love it there. It is so beautiful. The grocery store and fish markets all have that crab boil seasoning stocked on the shelves! :)

Menu Plan for Week of July 16th

Saturday - grilled chicken, pasta salad, sliced avocado
Sunday - steak / blue cheese wedge salad
Monday - chicken tostadas
Tuesday - beef stroganoff, green beans
Wednesday - salmon, roasted potatoes, broccoli
Thursday- burgers, corn and black bean salad, coleslaw
Friday - stuffed peppers

Dh and I are trying to get back to eating healthier. We were doing great all winter and spring but went to Disney and completely derailed. My job is much busier in the summer months and I am wiped out by dinner time most days so it's essential that I plan ahead or I know it will be quick and easy and not so healthy if I leave it until the end of the day. So back to the meal plan!

Friday- Lemon pepper Sole, seasoned and baked sweet potato, broccoli

Saturday-Potato Leek Soup, bbq chicken thighs, and baked zucchini sticks (these are a huge hit in this house- http://www.skinnytaste.com/baked-zucchini-sticks-13-pts/

Sunday- At a birthday party tomorrow and it's two hours away. If we make it home in time for dinner we can have leftover potato leek soup and fish and salad. If we are starving and not near home we'll go to Subway I guess. I'll try to bring snacks for the car to avoid that.

Monday- Turkey, roast carrots, baked cauliflower

Tuesday- Turkey wraps with veggies and tzatziki , big salad

Wednesday, Lemon Pepper Sole ,cut up veggies with tzatziki, roasted sweet potatoes

Thursday -Wonton soup and veggie stir fry

Friday- Homemade whole wheat pizzas. Will make these and have family movie night/unless Dh is out for game night in which case ds and I will have breakfast for dinner .. scrambled eggs, fruit smoothies, pancakes for ds, a piece of toast for me

Last week stunk for me. Ate out twice, spent $40 I shouldn't have spent. Had some leftovers, didn't follow the plan blah blah. So I am trying again this week.

Meal 1 - sausage, onion, cabbage
Meal 2 - ham, squash, green bean, carrot, onion stir fry
Meal 3 - chef salad: lettuce, tomato, cucumber, ham, turkey, egg, cheese, broccoli (if it looks good at store), sunflower seeds.
Meal 4 - chinese orange chicken (fried chicken chunks with sauce) on salad with cucumbers and carrots
Meal 5 - white beans with ham and onions, fried squash
Meal 6 - soft tacos
Meal 7 - BLTs to celebrate the first garden tomatoes!! I am going to cook two pounds of bacon for this momentous occasion!! I am also going to deep fry pickles. Because the bacon grease isn't enough :)

Our garden is really picking up so we will be having a lot of yellow squash and cucumber stuff :)

I made my grocery list, it is $27. So I am hoping to stay under $40. But I always find something interesting at Aldi we don't really need :)

Since I was laid off six weeks ago, we have tightened up our belts. I've been cooking every day and it's hard not to get tired of what we eat. DH was cooking a few times a week on his work at home days but lately I have taken it back over, which means I've put a few different things into the rotation.

Last night I grilled chicken and we had corn.
Tonight will be Monte Cristo sandwiches, potatoes, and fruit
Tues - tacos and salad/ fresh veggies
Wed - grilled burgers and dogs, rice
Thurs- leftovers
Fri - homemade chili from the freezer, garlic bread
Sat - swim team banquet potluck
Sun - no plan yet, might be leftovers again/DIY

We're going on vacation soon so trying to use up what we have in the house.

Wed: Wendy's for dinner (DD's request for her birthday party eats)
Thurs: Something fast after an afternoon travelling home--soup and grilled cheese or pasta or the like
Fri: pizza
Sat: calzones (DD's bday and her request)
Sun: chicken and noodles

Saturday was a free for all since we had 2 soccer games and football
Sunday: Linguine, meatballs, garlic bread
Monday: Stroganoff, rolls, corn on the cob
Tuesday: Sausage, broccoli, potato casserole
Wednesday: Fund Raising event at Melt
Thursday: Chicken nuggets, green beans, mac and cheese

Just got home from a weekend away at mom's house...so only gonna plan 4 days (ran a short grocery trip)...
Mon - Fried Chicken (grocery special), Mac and Cheese, Strawberries
Tues - Pesto Spaghetti (extra fried chicken deskinned and added in), Eggplant Parm Stacks, Cherries
Wed - BLTs, Roasted Carrots, Grapes
Thurs - Dorito Fajita Tacos Supreme (will probably be chicken/onion/pepper with cheddar, lettuce, tomato), Banana Muffins

Did a bad today and stopped at Moe's Southwest Grill for a burrito and queso. Burritos are $5 on Mondays so there is that at least! Plus, it will keep me full the rest of the night most likely.
