With school and fall sports starting up I have to rely on lots of casseroles and crock pot meals to get us through busy evenings. This past week I put together over 20 meals for the freezer so that should help with not going for the easy fix of picking up takeout, although I am ashamed to admit that we got pizza twice this week, lol.

Tonight - chicken and broccoli casserole
Sunday - sloppy joes, fries and corn on the cob
Monday - chicken fajitas, rice and beans
Tuesday - Philly cheesesteaks, pasta salad, fruit salad
Wednesday - chicken teriyaki casserole
Thursday - breakfast for dinner
Friday - BBQ pork chops, baked sweet potatoes, green beans
Saturday - lasagna, garlic bread, salad
Sunday - burgers and hot dogs, baked Mac and cheese
 
Here is my meal plan for this week. Things keep changing! I will do a lot of prepping for the week tomorrow morning, including making banana bread, roasting vegetables, and baking sweet potatoes.

Sweet: Banana bread
Lunches: Sweet potatoes with different toppings (like roasted vegetables and canned beans with different seasonings added to it), omelets with toast, and sandwiches
Dinners:
Tonight- Hamburger patties with onion gravy, mashed potatoes, green beans
Tomorrow- Leftovers
Tuesday- (work meeting) Leftovers
Wednesday- Honey soy baked chicken thighs, rice, broccoli
Thursday- (work meeting) Leftovers

Really need to get on the freezer cooking bandwagon. Do you just make extra when cooking to freeze or do you do an all out freezer cooking day? Tips on where to start? :)

Certain foods I definately make extra portions and freeze them. Things like chili, lasagna and pulled pork or chicken are easy to make extra of. This past week I did 1 day of ground beef recipes and the next day was chicken. I had most of the ingredients in hand for everything, just needed the meat and a few other things from the store. I searched Pinterest for ideas for casseroles and slow cooker recipes. It only took a couple of hours to put together everything, I figured if I can do this once a month or so, it will help out with keeping on track on our busy nights :)
 
Did my 2 week shopping today-just will have to pick up a few of the more delicate vegetables closer to time I want to cook.
Sunday-did hot dogs on grill
Monday-leftovers
Tuesday BBQ pulled pork, green beans, cream corn
Wednesday-baked ziti (makes a lot-will freeze half for a later meal), salad (fall garden coming on strong-red romaine, radishes, onions, peppers and still have tomatoes growing)
Thursday-crockpot rotisserie chicken (will make stock from bones overnight in crockpot for soup on saturday)
Friday-clean out fridge/leftovers
Saturday-panera bread knock off of creamy chicken and wild rice soup (in crockpot)
Sunday-leftovers/pizza-I work all weekend, one kid has soccer games, and my oldest is getting her senior pics done on sunday so this will be an "eat what you can find" day lol)

week 2 (haven't decided on days yet)

Saturday - Asian chicken with red peppers and mushrooms over rice

Sunday - Frittata with zucchini, peppers and potatoes

Monday - Grilled fish with cherry tomatoes and artichoke hearts over couscous

Tuesday - Cube steak, rice, okra

Wednesday- Mexican chicken in slower cooker (missed from last week)

Thursday - Leftovers

Friday- Grilled chicken, Italian pasta salad and spinach salad
 
Menu Plan next week..I have to run to Publix and pick up a few things, but planned based of what we have:

Monday - H has a golf tournament, with a dinner afterwards. I'll have a can of soup or something.

Tuesday - Pancakes

Wednesday - Pioneer Woman 7 Can soup. (there will be enough for lunch and leftovers)

Thursday - I have my workout class, so no cooking! (unless DH wants to, which is pretty unlikely! :rolleyes1) leftovers, eat up what we have, etc.

Friday- A recipe I saw on one of those 'buzzfeed foods' on facebook. Baked Chicken topped with pesto, mozzarella cheese and tomatoes, broccoli

Saturday- Going to visit the inlaws to celebrate their anniversary. MIL loves to cook. We are having baked caprese chicken, pasta, salad, and for dessert we are doing apple crumb cheesecake!

Sunday- Mexican meatloaf, jalapeno mashed potatoes
 
Alright. Reworked my meal plan for the rest of this month and for October. A lot more focused on what I have on hand and on making enough to freeze for later. On October 5-6 I am doing a couple big food prep days, but not all of it at once. For example, I'm doing a meal that requires shredded chicken later in the month so I am waiting to do the chicken until that day. So here is my plan!

And already have had to make changes for the rest of this week and next week due to finances. I work multiple jobs so my paychecks are spread out. Well, this weekend is a small paycheck and I am BROKE. Like, literally I have $0 in the checking. The check will only be like $50 as well. So it's getting split between gas ($20) and food ($30). Not only will I HAVE to eat at home this week, but I HAVE to eat off of what I have! Luckily, on the 4th I will have my main monthly check, but also a few really nice other paycheck from last week and this week. Which is why I will be doing my big prep cooking next grocery day.

So my plan is this:
Tonight: Chicken tacos with beans and rice (will make some rice and black beans, mix them up, and season them with onion, red bell pepper, garlic, and cumin)

Sunday: Chicken and vegetable lo mein
Monday: Leftovers
Tuesday: Steak, baked potato, green beans
Wednesday: Steak hash and eggs

Monday - Chicken marinated in caesar dressing (in freezer) that I'll take out to defrost and bake. We will have corn and broccoli.

Tuesday - Beef stir fry with french fries (from Food Network magazine)

Wednesday - H has a golf tournment with a dinner after. Leftovers.

Thursday - I have my workout class. Leftovers.

Friday- Buffalo chicken mac and cheese (except I'm using canned chicken in buffalo sauce, SHORTCUT!), maybe salad.

Saturday- We have having friends over and grilling! We are providing Steaks and Chocolate Chip Cookie Dough cupcakes. Having whatever everyone else brings!

Sunday-Undone stuffed pepper casserole (will freeze half)
 
Last week was bad, ate out too much, ate way too much for Weight Watchers! But now I'm ready to get serious again and plan, and cook.
Monday was chili dogs, made with veg chili and chicken hot dogs. No bun or cheese for me. Cottage cheese and pineapple.
Yesterday was chicken tacos, beans, baked scoops and guacamole .
Tonight is grilled pork chops, roasted veggies, leftover funeral potatoes

Wednesday - Pancakes, scrambled eggs with cheese (somehow we neded up with 3 boxes of pancake mix in the pantry o_O)

Thursday - I have my workout class. Leftovers/FFY

Friday- Meatloaf, mashed potatoes, mixed veggies (corn/carrots/peas)

Saturday- We are going to one of my H's clients house for dinner (he is a golf professional and teaches)

Sunday- leftovers, or soup and sandwiches if needed
 
Things got so messed up this week it's not even funny. I threw out all of my plans and ate what I had on hand, which ended up working out well as I got quite a bit out of the freezer. Still though, I have eaten out a few times as well now that I got paid but I really need to stop doing that. So this week is a HUGE shopping trip and I'm prepping a lot of stuff that will be going in the freezer. Sure it will cost more up front, but I do think it will save me money in the long run. So here is my plan for the next week PLUS what I am making for the freezer!
Tomorrow: Going to my aunt and uncle's house for a family "snack" dinner
Monday: Spaghetti and meatballs with roasted red pepper sauce
Tuesday: Leftovers
Wednesday: Slow cooker beefy mac
Thursday: Leftovers
Friday: Leftovers
Saturday: Leftovers

As for what I am making for the freezer:

Roasted red pepper sauce
Shredded chicken
Burritos (some with shredded chicken and some with shredded pork)
Twice baked potatoes (some with broccoli and cheese and some with bacon and cheese)

Was also going to do cookie dough and pancakes, but those have been postponed so I don't feel overwhelmed by this project.
