Eat at Home 3!

We may be having frozen freaking fish, homade fries and cabbage slaw tonight because i feel like crap. lol. We were supposed to have falafel, hummus, etc. but that sounds like way too much work tonight. I cook in a tall chair in our tiny kitchen, and today I'm afraid I might be wobbly enough to fall out of it. lol. Sometimes you just have to laugh.

@keelyhealthnut your menu sounds divine! May I borrow/steal some of those ideas? :D

No Falafel for me tonight either. Only scrambled eggs and toast because my tummy has hated me today. I''ll do the Falafel on Thursday night (I work tomorrow night so no go there).

Yep. *cue evil laugh* Muahahaha! lol. Seriously though you have to cook in a chair too? It can be scary very once in awhile.

My fabulistic husband ended up grilling the polenta, portobello mushrooms, made salad and grilled pineapple and peaches for dessert! It was such a treat! I have low blood pressure and since I've been sick this time I'm ghostly and have to stay in bed a lot. Tonight I'm going to try and make dinner dinner though. *fingers crossed*
 

Monday - baked ziti, eggplant parm
Tuesday - tacos, rice and beans
Wednesday - Red Robin (requested by DS11 for his 5th grade graduation )
Thursday - marinated grilled chicken breasts, rice pilaf, grilled veggie mix
Friday - make your own pizzas
Saturday - at beach so dinner out somewhere
Sunday - crabs, corn on the cob, baked potatoes

I already changed my meal plan. haha Last night we were supposed to have mashed potatoes and red wine gravy, but I ended up just boiling some whole organic red potatoes and giving them a quick smash. Then I mixed it with some fresh diced tomato, green onions, homemade fermented pickles, veg mayo, mustard, salt, and pepper. Served warm. Not as luxurious as I planned, but it sure was easier. Then my 5 year old invited my dad and cousin over to watch a movie on Friday night so I need to figure out something more snacky, but suitable for dinner, than Asian crepes. LOL

Sometimes I have to do the chair. Other times I can get away with standing when needed and then sitting at the table when I can to rest. Just depends on what is flaring and how badly.

No idea what was making me so sick. I feel better today (which is good since I have to work). I think it's just something that my body does when I am having other issues. I mean, my CFS and IC have been acting up due to the stress and anxiety I have been dealing with so who knows. Maybe the tummy thing is connected to all of that as well.

Now I am not sure what I will have the Falafel. It was going to be Thursday, but I have to go to the doctor at 3:30 for a treatment to try and stop some of the pain I am in. After this treatment I am usually stuck in bed for about 2 hours due to increased pain before things calm back down. So it would be 6ish before I could even think about doing food. So Falafel won't work. I hate it, but I need to have this treatment before things get so bad that I can't function at all.

Sounds like you made a good save for dinner! :D I'm hurt today so may deviate even further from meal plan. I noticed earlier that we have a pack of vegetarian sausage right in the fridge, so a simple sauce and spaghetti might work.

How about homemade veggie or greek pizza for your movie night? We do those for movie night and just pile on the artichoke hearts, mushrooms, kalamata olives, and feta. In fact...that would be an easy fix for tonight's dinner here. lol.

We have counter height table and chairs, so my sweet kids will put one (or two depending on leg issues and if legs need to be raised) in the kitchen for me, and then I'm right at stove height. :) Only nerve wracking when doing a big stir fry or anything with splashy hot oil. Works pretty well but one day I'm getting a rolling bar stool though to make getting around easier! :D

You poor dear I'm so sorry for your pain. :hug: Hmm can falafel be made ahead? I've never tried it myself. Sounds like you need an easy prep meal instead.
 
Pizza might be perfect, actually! I have a roasted garlic coconut milk w/ sun-dried tomatoes recipe that we like a lot. It's creamy kind of like an alfredo pizza. I'll have to see if we have any sun-dried tomatoes on hand. I like to top it w/ pine nuts, but that is not in the budget right now so we'll have to suffer. ;)
 
I was going to make paella and strawberry rhubarb pie for my husband for Father's Day, but if we don't get a check in here it will be the backup plan. He's been craving veggie burgers so I'll make those, rosemary fries, arugula salad, and strawberry rhubarb pie. This has been a very weird week.

Saturday - Beef stroganoff / peas
Sunday - Steak, baked potatoes, and salad
Monday - leftovers
Tuesday - Pork Chops, squash, corn on the cob, and tomato slices
Wednesday - Kielbasa, potato salad, and green beans
Thursday - grilled chicken, rice, okra
Friday - eggs, sausage, grits, spinach, and biscuits
 
Well, hopefully I will do better this week then I did last week!

Tonight: Going out to eat with a friend
Tomorrow: Leftovers (gonna get a to go order when I am out tonight lol)
Tuesday: Falafel, cucumber sauce, pita bread, and roasted eggplant
Wednesday: Roasted turkey, green bean casserole, sweet potato casserole, stuffing, gravy, scalloped oysters (depending on the price of oysters)
Thursday: Leftovers
Friday: Hot turkey sandwiches and leftover vegetables
Saturday: Beef enchiladas with roasted red pepper sauce
Sunday: Leftovers

Lunches with be leftovers, asian vegetable wrap, and scrambled eggs. Not sure on snacks for this week besides hard boiled eggs, cottage cheese, and fruit. I may make some pudding for something sweet. We'll see.
 
Last night we had two salads Caprese w/ balsamic and antipasti with no meat. I loved every bite of this dinner! My son does not much enjoy tomatoes (he really dislikes them) but he ate every bit last night, which was a happy change. :)

Tonight for my husband I'm attempting paella w/ mussels, shrimp, peas, and green beans, and am totaly nervous to make it but will just do my best. *fingers crossed* We're also making him a strawberry rhubarb tart.

Just going to wait until tomorrow to do the dinner plan for the rest of the week. I know we have 2 blocks of tofu, some arugula, blueberries, and tempeh so I know we'll be eating those. lol. Have a good day everybody!

Wednesday: slow cooker vegetable korma, Indian seasoned quinoa, roasted cabbage

(Friday we will be leaving to stay at a beach house so the food has been planned by in-laws.)
Friday: burgers on the grill, no idea what else!
Saturday: out to eat
Sunday: We'll probably grab something on the way home.

Thursday- not sure, just need something quick before we go to dd18's high school grad ceremony

Friday- Spaghetti and Meatballs

Saturday-dh has requested buffalo chicken dip and naan and cut up veggies. We'll like have some other finger food with it and make it an easy supper night

Sunday-I'm on my own as dd is out, dh is away and ds is at sleep away camp. Might go to my moms.
 
Well, no Falafel tonight which isn't a hug deal. Ended up taking my nephew out to eat for lunch and I know I will not be hungry enough for a full meal later. Oh well!
 
Alright... budget is getting super duper tight for next month. Thus I have to be crazy strict with myself at the grocery store AND in not eating out. I have Gen Con at the end of July/start of August so I know I will be eating out then (plus bringing some food with me and a filtered water bottle) but if I do good the rest of the month, then I will be fine with that. All the rest of my Gen Con expenses are paid for except spending money which also helps! I will also "eat out" tomorrow afternoon because I will be at the local festival and, well, I have to have something! LMAO

As of right now the only meat I will have to buy next month are a pack of chicken thighs and two packs of ground beef. Not bad at all! My biggest food expenses will be produce it is looking like. Lunches will continue to be wraps, leftovers, stuff out of the freezer (hand pies, hamburger patties, hot dogs, frozen meals), egg based dishes, and canned soup. The only snacks that I will be buying will be fresh fruit and ice cream (but I have coupons for that). I have plenty of chips and other snacks plus a cake mix and frosting in the pantry. Plus, I have everything I need to make a couple different types of cookies. So I should be good for the month when it comes to that stuff!

So the next couple of weeks look like this:

Tonight: Hot turkey sandwiches with sweet potato casserole
Tomorrow: Unknown as I am going to my aunt and uncles for the festival and not sure what the plans are overall. If I am home I have frozen meals or eggs that I can whip up.
Sunday: Ground Beef enchiladas with roasted red pepper sauce
Monday: Leftovers
Tuesday: Two potato hash with eggs
Wednesday: Pad Thai (vegetarian)
Thursday: Pan fried chicken breasts, cheesy breakfast potatoes (from my Disney cookbook), green beans
Friday: Eggplant Parmesan with roasted red pepper sauce, spaghetti
Saturday: 4th of July at my Aunt and Uncles. Most likely will have to get myself something "safe" so I have food I can eat but not sure yet what the plan is.

Sunday: Eggplant Parm sandwiches
Monday: Peanut crusted mahi mahi, asian slaw, and green beans
Tuesday: Alfredo with half vegetable noodles and half regular noodles
Wednesday: Leftovers
Thursday: Asian chicken sandwich with slaw
Friday: Quiche (have yet to decide on the vegetables for it, depends on sales)
Saturday: Buffalo steak, baked potato, and roasted squash
 
Had to share! Went to the grocery today and thanks to sticking to my list, digital coupons on my card, and a bunch of coupons my cousin gave me I only spent $40! And that included a dozen free eggs, free frozen vegetables, and a bunch more off.... including fresh produce. I ended up saving over $25. I was so excited!

Also, I decided not to do the enchiladas but am going basic tacos instead tonight.
