Eat at Home 3!

How difficult is it to grow cilantro? I haven't tried yet but I want to next year. I normally plant red potatoes, cucumbers, carrots, green beans and zucchini. Sometimes squash and onions too.

Not hard at all. I do long planter boxes for my herbs now but I have also done it in normal raised beds. Both ways have worked great. In fact, I often can't keep up with the amount i get.
 
Monday- Fresh fish tacos with crunchy slaw and k=lime crema, zucchini and squash
Tuesday-PF chang style lettuce wraps
Wednesday-Shrimp and rice noodle Asian style salad
Thursday-Baked fish with broccoli cheese stuffing, rice and vegetables
Friday-Steaks, baked potatoes and veggies
 
Cilantro is very hardy and does great with little attention. In fact I thought I had killed it but didn't pull it up and it came back (again). Same with my thyme.

Had and addition to menu today-making broccoli cheese soup as I have bits of veg leftover from other recipes this week (including open box of chicken stock to use up). And it is 70 degrees - in July- in Missouri! Kids are cold:rotfl2:
 
Omg! Tried orange chicken From Trader joes! It was a hit with DH! Gonna start adding that into our menus. So this week my dad is coming out to visit so a lot of eating out this week.
Sunday- Swai fish
Monday- chicken alfredo
Tuesday- shrimp stirfry
Wednesday- fior d'italia
Thursday- SPQR
Friday- Haps steakhouse
Saturday- Roli Roti pork

Trying to work on the week after this one because I will be busy visiting with family.
 

DH and I are now on opposite pay schedules so we have a paycheck coming every week so my shopping will now be done on a weekly basis.

Sat: turkey burgers with bacon and cheese, oven baked fries

Sun: smothered chicken, broccoli and rice, fresh pineapple, fresh veggies

Mon: breakfast burritos with fresh fruit (grapes, pineapple, watermelon)

Tues: crockpot salsa chicken tacos, refried beans, chips and salsa

Wed: pizza, salad

Thurs: smoked turkey hot dogs, corn on the cob, watermelon

Fri: church/school festival - pigging out on festival/polish food and beer!!!
 
We just had a family dinner of Indian food - a huge hit with my grandkids, right down to the two-year-old!

Samosas, lentil soup (dal) made with lentils, onions and carrots, chickpea-spinach curry (includes tomatoes and onions), aloo gobi (cauliflower, sweet potatoes, onions and green peas) and rice. Dessert was a chocolate cake that makes its own fudgy sauce while it bakes.

I have been really busy at work but have been doing well at eating at home. Last night was the first time in weeks that I picked up food for dinner. But I had a buy one, get one free coupon at Boston Market.

I have also been shopping more at BJ's. They have great deals on bulk meat which I have been freezing and meal planning around. I have also been shopping at the local farm stands a ton.

Tonight's menu is

Roasted chicken (making 2, will use one later in the week)
Smashed red potatoes
Grilled vegetables
 
Changing it up a bit this week with some new recipes.

Sunday- Broccoli and cream cheese stuffed tilapia, zucchini
Monday- Coconut baked chicken fingers, salad and watermelon
Tuesday- Thai shrimp salad and corn on the cob
Wednesday- Bunless grilled steak burgers with cheese and grilled onions, hand cut oven baked fries
Thursday- Hawaiian chicken, rice, veggies and pineapple
Friday- Out to eat
Saturday- Zucchini boat pizzas and salad

Okay, here is my plan for this week - which is shaping up to be very busy so I am looking for quick foods with some planned leftovers.

Monday: leftover chickpea spinach curry and aloo gobi
Tuesday: chili (made with canned beans so it is quick)
Wednesday: black bean burgers (make a double batch)
Thursday: leftover chili
Friday: seitan with brussels sprouts and broccoli
Saturday: leftover black bean burgers
Sunday: family coming over, not planned that menu yet.

Sunday night we had black beans and brown rice with sauteed onions, red peppers and zucchini with lime, avocado and salsa.

Monday: Steak and creamed spinach (100% freezer meal as I won't have a chance to shop until Tuesday)
Tuesday: Moroccan style braised lentils and salad
Wednesday: Take out BBQ (late day for picking up baby from the nanny share) and homemade coleslaw
Thursday: broccoli and cheese quiche and salad
Friday: Birthday dinner! We are having a babysitter for the very first time EVER
 
Back from vacation and still playing catch up...

Sun- chicken dinner, stuffing, mashed potatoes, gravy, broccoli
Mon-fettuccine alfredo with peas and mushrooms, garlic toast
Tues-Swiss Chalet order (no one felt like cooking)
Tonight-DD's bday, ham, potato salad, walnut & cranberry spring mix salad, rolls, KD for the fussy kiddies, soda, skillet cookies with ice cream for dessert

Fri-butter chicken, naan, jasmine rice, not sure of veg
Sat-DD's bday party so a BBQ at Grandma's, hot dogs, hamburgers, chips, soda, veggie tray, possibly a green salad, homemade ice cream cake

stocked freezer also good on summer nights when plans change: kids with friends over swimming so we had hot dogs, corn on cob and baked beans. Sooo leftovers must be eaten tomorrow before we scatter for weekend :goodvibes
 
Love summer veggies-changed our nacho night to fajitas to use up the peppers and cilantro from the garden!

Am now having to compete with the chickens for the blueberries and tomatoes. Kids are supposed to be watching them when chicks out of the coop-but the little things love fresh food too :)

Where do you live that your cilantro hasn't bolted yet? North Dakota?
 
Our summer has been so insanely busy. While I have not had a chance to post menus on here, we HAVE been eating at home...and it is paying off. Our cruise is paid off, excursions booked and payed for, lots of the pre-cruise purchases have been made. Our to-buy list is down to one page now, LOL!!!

For our upcoming menu, I am having DH put two chickens and a boneless pork loin on the smoker tomorrow to eat on all week. YUM! Next week's menu...

Well, I have been getting to work stocking my freezer over here. I participate in a thing where I buy 40 lb of 93/7 ground beef (or alternately, I buy chicken when available) at a discount, and so far I have made my own taco seasoning, made 6 lb of taco meat and broken it into meal portions, made 8 lb of meatloaf mix, gotten it into the foil-lined pans and into the freezer (except the one that is for dinner) and I still have 20 lb of meat left (some went to my mom and MIL)!

Next up is at least 12 lb of meatballs. All of the above are being made grain, gluten and dairy free, too, so I am having to figure out how to do them as I am going. NOT like me at all, but I am actually writing down what I am putting in everything as I go, so I can possibly make them again! What a concept!! lol

Not sure what to do with the other 8 lb yet. Maybe a meal or 2 of sloppy joe mix? I would eat mine on sauteed cabbage or maybe wrapped in lettuce leaves and the rest of the fam can have their buns. Maybe a few lb of just browned meat with onions and garlic, and a few lb left raw.

If anyone wants the link to the meat-buying program, pm me. I have done it for those 2 items, but they do have other stuff.

:rotfl2: Ok this made me really laugh! I was born in North Dakota!! Live in SW MO now-we have had a really strangely cool summer (only a couple weeks unbearable heat/humidity so far) and the cilantro is growing in shady side of tomato plants and in bed next to corn (also providing shade in the heat.) it did start to bolt this spring when we got hot quickly but I kept cutting it down (and thought I had killed it) My broccoli, OTOH, never got heads and going straight to seed.:)
